- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking pan.
- Heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Combine onion with shredded chicken, chili powder, garlic powder, black pepper, seasoned salt, red pepper flakes, and cumin. Stir in 1/2 cup Cheddar cheese and green chiles. Spread in the bottom of the prepared baking pan and top with remaining Cheddar.
- Whisk milk and eggs together in a bowl. Stir in crushed pork rinds and pour over top of the casserole.
- Bake, uncovered, in the preheated oven until top of casserole is set, about 45 minutes.

- Cook the chicken breasts (we prefer to grill or saute ours, but we often boil or microwave them if we're running late), seasoned to taste (we like salt, garlic powder, onion powder, and pepper), and dice.
- Steam broccoli florets.
- Cook riced cauliflower.
- Melt neufchatel cheese in a pot on medium heat with half of the chicken broth, chicken bouillon, onion powder, and garlic powder.
- Boil the mushrooms in a saute pan in the rest of the chicken broth until cooked and strain the mushrooms, saving the liquid.
- Whisk the Greek yogurt into the cream cheese mixture and warm.
- Pour the mushroom flavored chicken broth into the cheese mixture and whisk until smooth (you may include the mushrooms in the casserole, but if your kids are picky like ours, you may opt to leave them out).
- Layer the casserole in a 9x13 baking dish in the following order (from bottom to top): cauliflower rice, diced chicken, steamed broccoli, cheese sauce (poured evenly over the top), shredded cheese.
- Bake at 400 degrees for about 20 minutes or until bubbly and the cheese is melted.

- Mix Parmesan cheese and Italian seasoning together in a bowl. Coat chicken breasts in the mixture and arrange in an 8-inch square baking dish.

- Preheat the oven to 350 degrees F (175 degrees C).
- Melt margarine in a roasting pan with minced garlic in the preheated oven. Add chicken, garlic powder, basil, oregano, salt, and pepper; mix well.
- Bake in the preheated oven until chicken is no longer pink, 20 to 25 minutes. Remove from the oven but leave the oven on.
- Mix ricotta, 1 cup mozzarella cheese, Parmesan cheese, milk, and egg together in a bowl. Spread evenly over the top of the chicken. Pour vodka marinara sauce over top and spread evenly.

- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Season chicken with salt and pepper.
- Bring a large pot of lightly salted water to a boil. Add chicken breasts, reduce heat, and simmer until no longer pink in the centers and juices run clear, about 15 minutes.

My SO is doing low carb, and even those not doing low carb know that pasta is a big no - no. But sometimes even " low carbers " crave a casserole that's full of cheesy goodness. ;) So, I decided to try to come up with a recipe that was low in carbs and still fit the bill for cheesiness.For the chicken seasoning, I used Weber's Grill Creations " Kick' N Chicken " seasoning. - Cut chicken breasts into chunks.
- Sprinkle chicken with a bit of salt and pepper and cook in a skillet over medium/high heat with a bit of butter/olive oil (or your preferred oil) until no longer pink in the center.
- While the chicken is cooking, steam or cook broccoli according to package directions. I like to steam it and keep it slightly crisp. Put butter into the drained broccoli and salt it a bit.
- Put the buttered broccoli in the bottom of a 9 X 13 baking pan.
- Combine the cream of chicken & mushroom soup, sour cream, mayonnaise, the herbs and seasonings, and 1 cup of the shredded cheese into a bowl. Add the chunks of cooked chicken.
- Pour and spread chicken mixture on top of the broccoli, and top with the remaining 1 cup shredded cheese. Sprinkle lightly with curry powder. (it's easy to go overboard -- very lightly!).
- Bake in a preheated 350 degree F oven for 40-45 minutes until hot and bubbly.

I made it the first time because I was craving something that was sort of like a chicken cordon blue, but with bacon, broccoli and provolone, since that's what I had in the fridge! I also wanted it to be a casserole so my wife could make it when she got home from. So I made it in the morning, put it in a baking dish in the fridge and they cooked it up when they got home. If you're not a big fan of mustard, certainly reduce it, or omit it altogether, it should still be just as good.

- Pre-heat oven to 350.
- Cut bacon into 1" pieces and fry until mostly crisp.
- Cut chicken into cubes and cook in a frying pan until it is no longer pink.
- Place chicken and bacon into a bowl, and put in the fridge to cool.
- In a mixing bowl combine broth, cream, mustard, herbs and salt and pepper to taste.
- When chicken and bacon has cooled most of the way, stir in shredded cheese and broccoli.
- Place chicken mixture into a casserole dish, then pour sauce over the top.
- If cooking immediately, place in oven and bake 25-30 minutes, or until cheese is melted.

GENAW LOW CARB ITALIAN CHICKEN CASSEROLE
The sauce is very creamy, but has an almost pizza-like flavor. Very good with some kind of vegetable in it, such as zucchini or broccoli. I added fresh mushrooms and fresh zucchini.
