BUFFALO CHICKEN BITES (BONELESS BUFFALO WINGS)

These boneless buffalo chicken bites are perfection. Lightly battered and pan-seared, they're crispy on the outside with a moist and tender interior, then tossed in my mom's signature buffalo sauce.

2 lb boneless skinless chicken breast (patted dry and diced into 2" pieces)
1/2 c cornstarch (or arrowroot powder for paleo)
2 tsp sea or kosher salt
1 tsp cracked black pepper
1 tsp onion powder
1 tsp garlic powder
1/2 tsp paprika
2 tbsp olive oil (or avocado oil for paleo)
1/2 c Frank's RedHot
1/2 c Texas Pete Original Hot Sauce (or your favorite hot sauce - see suggestions in post)
2 tbsp butter

Steps:

  • Combine the cornstarch, salt, onion powder, garlic powder, pepper, and paprika in a large mixing bowl. Whisk until thoroughly combined.
  • Add the chicken to the cornstarch mixture; toss until evenly coated.
  • Heat a 12" non-stick skillet over medium high heat. Add 1 tbsp olive oil and heat until it shimmers. Add half the battered chicken to the skillet in a single layer. Sautee 5 minutes until the breading is lightly golden brown, flip the pieces, and sautee 5 minutes on the other side. Remove the chicken using a slotted spoon and transfer to a plate. Repeat with the remaining chicken pieces, adding additional olive oil as needed.
  • Add the butter to the skillet and melt, scraping up browned bits as it cooks. Add the buffalo sauces to the melted butter and whisk until combined.
  • Add the cooked chicken to the buffalo sauce. Toss to coat all pieces in sauce, then cook an addition 3-5 minutes until the chicken is cooked through and the sauce slightly thickens. Serve immediately with blue cheese or ranch dipping sauce and sliced carrots and celery.

What a great way to have chicken. Had these boneless wings a while back at a pub and fell in love with the taste. A nice change from your regular chicken wings. Serve with blue cheese dressing for dipping.

oil for deep frying
1 cup unbleached all-purpose flour
2 teaspoons salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
¼ teaspoon garlic powder
½ teaspoon paprika
1 egg
1 cup milk
3 skinless, boneless chicken breasts, cut into 1/2-inch strips
¼ cup hot pepper sauce
1 tablespoon butter

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Combine flour, salt, black pepper, cayenne pepper, garlic powder, and paprika in a large bowl. Whisk together the egg and milk in a small bowl. Dip each piece of chicken in the egg mixture, and then roll in the flour blend. Repeat so that each piece of chicken is double coated. Refrigerate breaded chicken for 20 minutes.
  • Fry chicken in the hot oil, in batches. Cook until the exterior is nicely browned, and the juices run clear, 5 to 6 minutes a batch.
  • Combine hot sauce and butter in a small bowl. Microwave sauce on High until melted, 20 to 30 seconds. Pour sauce over the cooked chicken; mix to coat.

1 small head cauliflower, cut into florets
2 tablespoons olive oil
3 tablespoons butter, melted
3 tablespoons Buffalo wing sauce
DIP:
1-1/2 cups 2% cottage cheese
1/4 cup fat-free plain Greek yogurt
1/4 cup crumbled blue cheese
1 envelope ranch salad dressing mix
Celery sticks, optional

Steps:

  • Preheat air fryer to 350°. In a large bowl, combine cauliflower and oil; toss to coat. In batches, arrange cauliflower in a single layer in air-fryer basket. Cook until florets are tender and edges are browned, 10-15 minutes, stirring halfway through. In a large bowl, combine buffalo sauce and melted butter. Add cauliflower; toss to coat. Transfer to a serving platter. In a small bowl, combine dip ingredients. Serve with cauliflower and, if desired, celery sticks.

4-6 cups trans-fat free frying oil
1 large bag (4 ounces) regular pork rinds
1 ⁄2 teaspoon Italian seasoning
1 ⁄4 teaspoon black pepper
1 ⁄8 teaspoon garlic powder
11 ⁄2 pounds boneless, skinless chicken breasts, cut in 1 inch cubes
2 large eggs, beaten in a bowl
1 ⁄4 cup Louisiana hot sauce
1 ⁄4 cup butter, melted

Steps:

  • 1. Place a pot over medium-high heat and fill with at least 2 inches of vegetable oil. Heat oil 3-4 minutes, until about 350 degrees. (or preheat an electric deep fryer) 2. Add the pork rinds, Italian seasoning, pepper, and garlic powder to a large food storage bag and use a heavy can or similar to crush the rinds until smooth. 3. Dip chicken cubes into the beaten eggs and then place into the bag of seasoned pork rinds, shaking to coat. 4. Fry the coated chicken pieces in small batches of 5 or 6 for about 3 minutes each batch, or until a deep golden brown. Let rest on paper towels to drain excess oil. 5. In a medium bowl, combine hot sauce and melted butter to make the sauce. Toss fried and drained chicken in the sauce before serving hot. Serve garnished with celery sticks and blue cheese dressing, if desired. George's Tips | You can lower the fat by baking them instead of frying. Simply place the coated chicken pieces on a greased sheet pan and bake at 400 degrees for about 15 minutes, or until cutting into one reveals no pink.
