The day was cool and crisp, perfect for baking a low fat pumpkin bread. Warming my kitchen with the sweet scent of pumpkin spices - Oh how I just love October.

1 1/2 cups pumpkin puree
1 1/4 cups unbleached all purpose flour
3/4 cup sugar
1 tsp baking soda
2 tsp pumpkin pie spice
1/2 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp salt
2 tbsp vegetable oil
2 large egg whites
1 1/2 tsp vanilla extract
baking spray
2 tbsp pepitas

Steps:

  • Preheat oven to 350°.
  • Spray a 9 x 5 inch loaf pan with baking spray.
  • In a medium bowl, combine flour, sugar, baking soda, pumpkin spice, nutmeg, cinnamon, and salt with a wire whisk. Set aside.
  • In a large bowl mix oil, egg whites, pumpkin puree and vanilla; beat at medium speed until thick.
  • Scrape down sides of the bowl.
  • Add flour mixture, then blend at low speed until combined. Do not over mix.
  • Pour batter into loaf pan, top with pepitas and bake on the center rack for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

½ teaspoon salt
1 cup canned pumpkin pie filling
½ cup unsweetened applesauce
½ cup white sugar
1 egg
2 egg whites
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground ginger
½ cup miniature chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Whisk flour, baking soda, and salt together in a bowl. Stir pumpkin pie filling, applesauce, sugar, egg, egg whites, nutmeg, cinnamon, cloves, and ginger together in a separate bowl. Whisk flour mixture into pumpkin mixture until batter is well combined; fold in chocolate chips. Pour batter into the prepared pan.

3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
2 cups Splenda granular
2 cups pumpkin (cooked fresh or canned)
4 egg whites, beaten
1/4 cup cooking oil
1 cup applesauce, unsweetened

Steps:

  • over 350.
  • make sure you grease the pans (2 because this makes 2 loaves
  • mix all dry ingredients, set aside.
  • next mix the pumpkin, eggs, applesauce together (also if you're adding nuts do so with these ingredients).
  • combine all ingredients.
  • pour mixture into two pans.
  • bake 45 minutes to an hour.

2 cups sugar
1 can (15 ounces) solid-pack pumpkin
1 cup unsweetened applesauce
1/2 cup egg substitute
3-1/3 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg or allspice
1 cup chopped nuts or raisins, optional

Steps:

  • In a bowl, combine the sugar, pumpkin, applesauce and egg substitute; mix well. Combine the flour, cinnamon, baking soda, baking powder, salt and nutmeg; gradually add to pumpkin mixture and mix well. Stir in nuts or raisins if desired. Pour into two 8x4-in. loaf pans coated with cooking spray. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

8 slices whole wheat bread
1 cup egg substitute
2 1/4 cups skim milk
1 (16 ounce) can pumpkin
1 cup brown sugar
1 1/2 teaspoons cinnamon
1 1/4 teaspoons pumpkin pie spice
1/2 teaspoon nutmeg
1 teaspoon vanilla
3/4 cup raisins

Steps:

  • Preheat oven to 375 degrees.
  • Lightly oil a 2-quart casserole dish and set aside.
  • Crumble the bread by hand or food processor to make bread crumbs.
  • Combine the egg substitute, milk, pumpkin, brown sugar, cinnamon, spices and vanilla.
  • Fold in raisins and bread crumbs.

1/3 cup packed brown sugar
1/3 cup chopped pecans
1 tablespoon butter or margarine, softened
1 2/3 cups granulated sugar
2/3 cup vegetable oil
2 teaspoons vanilla
4 eggs
1 can (15 ounces) pumpkin (not pumpkin pie mix)
3 cups Gold Medal™ all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cloves
1 cup chopped dates

Steps:

  • Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches, with shortening.
  • Mix all Praline Topping ingredients until crumbly; set aside.
  • In large bowl, mix granulated sugar, oil, vanilla, eggs and pumpkin. Stir in remaining Date Bread ingredients except dates until well blended. Stir in dates. Pour batter into pans. Sprinkle with topping.
  • Bake 8-inch loaves 50 to 60 minutes, 9-inch loaf 1 hour 10 minutes to 1 hour 20 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to wire rack. Cool completely, about 1 hour, before slicing.
