This recipe makes a lot of hummus that has a bright garlic lemon flavor. If you don't plan to use a lot, you may want to half the recipe.

1/4 cup lemon juice
1/2 cup garlic (minced, crushed or diced)
1 tsp garlic powder
3 tbsp tahini (Optional. Substitute aquafaba, see notes)
2 tsp lemon zest
2 tsp sea salt
2 cups chickpeas (cooked or canned, heaping)
1/4 cup aquafaba (to desired consistency)

Steps:

  • Add the garlic, garlic powder, lemon juice, lemon zest, sea salt, and tahini (or aquafaba) to food processor and blend until smooth.
  • Add chickpeas and aquafaba gradually and blend until you reach desired texture.
  • Store in an air tight glass container in the refrigerator for about a week. The hummus will become a bit thicker after chilled.

1 (15-ounce) can of chickpeas, or garbanzo beans
2 garlic cloves
3 tablespoons fresh lemon juice
2 tablespoons tahini
Salt and pepper

Steps:

  • Drain the liquid from the can of chickpeas into a bowl or measuring cup.
  • Add the chickpeas, garlic cloves, lemon juice, tahini, and 1/2 of the chickpea liquid to a blender.
  • Add in a pinch of salt and pepper and blend until smooth.
  • Taste and add in more salt and pepper as needed. If you like a creamier or thinner hummus recipe, add in a little more of the chickpea liquid, 1 tablespoon at a time until you have reached your desired consistency.
