Number Of Ingredients 12

cooking spray
4 gluten free english muffins, split, toasted and cubed
8 conadian bacon slices or cooked ham slices cut into 1 inch pieces
I c about 4 ounces of shredded reduced fat sharp cheedar cheese
4 large eggs or 2 small carton of egg substitute equals 2 eggs each.(equals 1/2 cup each)
8 large egg whites or 4 small carton of egg white substitute equals 2 egg whites each. (equals 1/2 cup each)
3 c 1% low fat milk
1 tsp dry mustard
1/2 tsp black pepper
1/2 tsp onion powder
1 tsp worcestershire sauce (optional)
1/4 tsp hot pepper sauce such as tabasco (optional)

Steps:

  • 1. Combine muffin cubes and canadian bacon in a 13 X 9 inch baking dish coated with cooking spray;and sprinkle with cheese.
  • 2. Beat eggs and egg whites with a mixer at medium speed until blended.
  • 3. Add milk and next 5 ingredients and beat at low speed until blended.
  • 4. Pour egg mixture over muffin mixture;cover and chill at least 2 hours or overnight.
  • 5. Preheat your oven to 350
  • 6. Remove cassarole from refrigerafor and let stand while oven preheats.
  • 7. Uncover casserole and place in oven and bake for 45 to 50 minutes or until browned.
  • 8. Remove from oven and let set for 15 minutes before serving.
  • 9. Server with your favorite breakfast juice and fruit.

I found this recipe in Paula Deen's magazine. It calls for Canadian bacon, but I didn't have any available and a run to the market is over 30 minute drive, so used regular bacon, crumbled. It still turned out to be delicious. I think it would be the perfect dish for just any meal, don't just use this for breakfast or brunch, it made a fantastic dinner. This needs to be made ahead as it needs to sit from 8 hours to overnight, so make it before leaving for work, and come home to an easy cook meal.

3 tablespoons butter
1 small onion, chopped
6 English muffins, cut in half
1 (8 ounce) container chive & onion cream cheese
1 (6 ounce) package sliced Canadian bacon, chopped
2 tomatoes, chopped
1 (12 ounce) jar roasted red peppers, drained and chopped
4 cups sharp cheddar cheese, shredded, divided
6 large eggs, lightly beaten
3 cups milk
3 tablespoons chives, fresh, chopped
1 teaspoon kosher salt
1 teaspoon ground black pepper
fresh tomato, slices and
fresh parsley

Steps:

  • Lightly grease a 13x9x2-inch baking dish.
  • In a medium skillet over medium heat, melt butter. Add onion and cook over medium-high heat for 4 to 5 minutes, or until tender; set aside. Spread English muffins with cream cheese. Layer English muffins, Canadian bacon, tomatoes, red peppers, 2 cups cheese, and onion into prepared baking dish. In a medium bowl, whisk together eggs, milk, chives, salt and pepper. Pour over layers. Cover and chill for 8 hours or overnight.
  • Remove from refrigerator 30 minutes before baking. Preheat oven to 325 degrees. Sprinkle evenly with remaining 2 cups cheese. Bake uncovered for 1 hour, or until a knife inserted near the center comes out clean. Garnish with fresh tomato slices and fresh parsley, if desired.

While searching for a new recipe, This one L-I-T-E-R-A-L-L-Y jumped out at me! Ham, Peas, low fat...could it be, TRUE! Changed recipe slightly to suit our tastes too!

10 -12 ounces crusty Italian bread
1 cup lean ham
1 cup low-fat cheese
1 cup frozen peas
2 cups low-fat milk
2 eggs
4 egg whites
3 teaspoons Dijon mustard
salt and pepper

Steps:

  • PREHEAT oven to 180 degrees F.
  • COAT Baking dish with cooking spray.
  • WHISK eggs and egg whites together
  • POUR over cubed crusty bread in dish.
  • ADD all other ingredients.
  • BAKE for 40 - 45 minutes.
  • ENJOY!
  • NOTE: I cubed the ham and crusty bread and shredded the cheese.

This is yummy comfort food and a great way to use up leftover ham. I don't know where this recipe came from, it's one that my mother made a lot when I was a child.

18 slices of thin sandwich bread
12 slices American cheese
6 green onions, thinly sliced
1/2 lb finely chopped cooked ham (2 C. loosely packed)
6 eggs, slightly beaten
2 1/2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
6 slices tomatoes
2 tablespoons minced parsley

Steps:

  • Place 6 slices of the bread in a 13"x9" inch baking pan or dish.
  • Top with 6 cheese slices, half of the onions, and half of the ham.
  • Top with 6 slices of bread, 6 slices of cheese and remaining onions and ham.
  • Top with 6 slices of bread.
  • Combine eggs, milk and seasonings.
  • Pour over the strata, cover with plastic wrap and refrigerate for 6 hours or overnight.
  • Bake at 300° for 1 1/2 hours.
  • Top each cheese stack with a tomato slice during the last 20 minutes in the oven.
