SPRING LIME TEA COOKIES

These are light, buttery tea cookies bursting with citrus flavor. Perfect for a spring day.

2 teaspoons lime juice
⅓ cup milk
½ cup butter, softened
¾ cup white sugar
1 egg
2 teaspoons lime zest
1 ¾ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
2 tablespoons lime juice
¼ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Combine the 2 teaspoons of lime juice with the milk, let stand for 5 minutes.
  • In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in the egg, then stir in the lime zest and milk mixture. Combine the flour, baking powder and baking soda, blend into the creamed mixture. Drop by rounded spoonfuls onto the ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until the edges are light brown. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  • To make the glaze, stir together the remaining lime juice and sugar. Brush onto cooled cookies.

LOVELY LIME COOKIES

I found this recipe in a newspaper. It makes very soft, lime flavored cookies. You might want to taste the lime juice you're using - I think the strength can vary, because, once when I made it, I couldn't taste the lime at all! The other times it has come through just fine. You can also substitute lemon juice. Note: I just made these cookies again and ended up with wonderfully soft, fluffy sugar cookies (read: no lime flavor at all). I'm hereby considering this recipe under construction, and may edit it to reflect some tinkering (with extracts or concentrates).

1 1/4 cups sugar
1 cup butter, softened
2 eggs
1/4 cup light corn syrup
1 teaspoon vanilla
3 tablespoons lime juice
3 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup powdered sugar

Steps:

  • combine sugar and butter in a large bowl. stir until smooth and creamy.
  • add eggs, corn syrup, vanilla and lime juice to mixture in bowl. mix well.
  • combine flour, baking powder, baking soda and salt in a medium bowl. mix well.
  • add flour mixture to creamy mixture. mix well.
  • roll dough into 1 inch balls. place several inches apart on an ungreased cookie sheet.
  • bake in a preheated 375 degree oven for 5 - 7 minutes. (do not overbake!).
  • when cool, remove cookies from baking sheet. dust generously with powdered sugar.

1 cup butter
1/2 cup granulated sugar
3/4 cup confectioners' sugar
2 egg yolks
1 teaspoon vanilla
1 teaspoon lime zest
2 1/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
coarse sugar
1 1/2 cups confectioners' sugar
2 tablespoons green decorator sugar (I used regular sugar)
3 tablespoons lime juice

Steps:

  • Beat butter, sugar, and confectioners' sugar until fluffy.
  • Beat in egg yolks, vanilla, and lime zest. Whisk flour, baking powder, and salt and stir into the butter mixture.
  • Chill 30 minutes (I skipped this step). Roll tablespoonfuls into balls and flatten and sprinkle with coarse sugar and bake at 350 for 15 to 20 minutes.
  • Whisk confectioners' sugar, green decorating sugar, and lime juice and spread over cooled cookies.

1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup fresh lime juice
1 ½ teaspoons grated lime zest
½ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest. Combine the flour, baking powder, and salt; blend into the creamed mixture. Form dough into 1/2 inch balls, and arrange on the prepared cookie sheet.
  • Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks. Sift confectioners' sugar over cookies while still warm.

These are chocolate chip cookies with a hint of lime, which gives them a nice darker shade and a noticeably different taste. If you use the iced tea scoop instruction, instead of the tablespoon method, the cookies will take somewhere between 15 and 18 minutes to cook.

1 cup butter, softened
3/4 cup firmly packed brown sugar
0.5 (12 ounce) package milk chocolate chips
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla
2 3/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
7 teaspoons lime extract

Steps:

  • Beat butter and sugars until they are fluffy (medium setting on a mixer).
  • Gradually add eggs and vanilla and beat well.
  • Combine flour, salt, and baking soda with the butter mixture, beating at low speed (low setting on a mixer) until blended.
  • Stir in lime extract and chocolate chips.
  • Drop onto lightly greased cookie sheet with a tablespoon; for bigger cookies, I used an iced tea scoop.
  • Bake at 350 degrees for 8-10 minutes (using the tablespoon), or 15-18 minutes (using the iced tea scoop) or until golden brown.
  • Remove from oven and let cool completely.
