2 unbaked pastry shells (9 inches each)
5 large eggs
1-1/2 cups milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
1-1/2 cups grated Parmesan cheese
1 cup shredded Swiss Cheese
3 tablespoons all-purpose flour
6 to 8 ounces canned or frozen crabmeat, thawed, drained, flaked and cartilage removed
1 package (10 ounces) frozen chopped spinach, thawed and well-drained

Steps:

  • Line each unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 400° for 5 minutes. Remove foil; bake 5 minutes longer., In a large bowl, combine the eggs, milk, salt, pepper and nutmeg; set aside. Combine cheeses and flour; add to egg mixture. Stir in crab and spinach. Pour into pastry shells., Bake at 350° for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting. Serve warm.,

1 prepared pie crust (I use Pillsbury)
1 cup of milk
1 egg
1 small container ( 8oz) of crab meat (make sure the shells have been picked out, I used the claw meat - less expensive and just as good)
1 10 oz package of frozen spinach, thawed and drained
2 slices of chopped bacon, uncooked (this will be cooked with the spinach)
1 TB Old Bay seasoning
1 / 2 cup of Monterrey Jack cheese, shredded
Dash of salt and pepper

Steps:

  • Preheat oven to 400 With a knife, make small slits in thawed pie crust and bake for about 5-7 minutes or until just lightly browned. You don't want to pre-bake it too much since it will be going back into the oven after all of the ingredients have been placed into the pie shell. In a small to medium sized skillet on medium heat, begin to cook the chopped bacon and add the spinach about 2-3 minutes into cooking the bacon. Continue cooking until the bacon is cooked through and crispy and the spinach has wilted slightly. Place the spinach and bacon mixture onto the bottom of the pre-baked pie shell. Make sure your crab meat has been picked over for shells and place on top of the spinach and bacon mixture. Prepare your milk and egg base by combining the milk, egg, and Old Bay. Add a dash of salt and pepper for taste. Pour the egg and milk mixture over the crab and spinach. Top with Monterrey Jack cheese and bake at 400 for 20-25 minutes, or until the milk and egg mixture is set and no longer jiggles like jello.

I had only tried quiche maybe one time in my life....probably at our reunions potluck lunch! I had seen a few recipes that looked really good, however had no time to fix one.One day while feeling like "Mrs Betty Crocker" I was looking thru the fridge and all the stuff I need to use soon and thought I'll make a quiche with this spinach. Well I didn't bother to log on my pc and find a recipe...I grabbed my pie crust and started gathering things to add to the spinach....OMG it turned out delicious...even my kids ate it and that's amazing!

1 can(s) 10ct canned biscuits
1 bunch(es) of fresh spinach -chopped
12 ounce(s) shredded monterey cheddar
6 ounce(s) chopped crab meat
1/4 cup(s) chopped walnuts
4 ounce(s) can of water chestnuts
2 - eggs
1 tablespoon(s) montreal steak seasoning
1/4 cup(s) chopped green onions
8 ounce(s) cream cheese softened
1/4 cup(s) crumbled bacon + 4 whole slices
1 teaspoon(s) onion powder
1 teaspoon(s) garlic powder
1 - handful of chopped chives
1/4 cup(s) real butter- melted

Steps:

  • I fold a paper towel into a little square and dab it into my margarine then use it to butter up my glass pie pan, done toss away =). Take 9 biscuits and press them evenly into pan making them go a little ways up the side of the pan for your side crust, Toss all ingredients (except bacon & chives) into a mixing bowl and mix together,pour over crust.Drizzle melted butter onto pie, then add last biscuit-flatten or roll out to cookie size and put it on the top of pie,make a star out of sliced bacon and then sprinkle baking bits & chives onto pie, bake about 45 minutes(my oven varies so I would check 30-35 minutes by inserting a knife in the middle, if it come out clean it's done! Serve warm with an iced cold glass of sweet tea =)
  • You could use a pie crust or even Bisquick for your crust,I used canned biscuits in mine =)
  • Appetizer~I would flatten each biscuit and place into a buttered muffin pan,then add mixture top with extra cheese,chives and bacon bits =)

9 inches pie crusts, unbaked
1/2 cup lump crabmeat (about 5 oz)
10 ounces spinach, chopped frozen, thawed and squeezed dry
1/2 cup small shrimp, peeled (about 4 oz)
4 eggs
1 cup heavy cream
1 cup half-and-half cream
1/2 teaspoon salt
1/8 teaspoon cayenne

Steps:

  • Preheat oven to 350 degrees F. Place half the cheese in the unbaked pie shell. Layer with crabmeat, spinach, and shrimp. Top with remaining cheese.
  • Beat eggs in a large bowl, lightly. Beat in remaining ingredients; pour over seafood and cheese.
  • Bake about 15 minutes, then reduce oven temperature to 300. Bake another 30 minutes, or until a knife inserted in center comes out clean. Let stand 10 minutes before cutting into wedges and serving.

This is simply Divine! It is a simple quiche made with fresh ingredients and cooked in a casserole dish with no crust. It is wonderful straight from the oven or served the next day. It is a great quiche for brunch or dinner. I served it with a Spinach Salad and "My Mom's Awesome Parsley Potatoes."

10 ounces fresh mushrooms, Sliced (I used Baby Portabellas)
1 tablespoon butter
4 eggs
3/4 cup fresh spinach, Torn
1 cup sour cream
1 cup cottage cheese
1/2 cup parmesan cheese, Grated
1/4 cup flour
1 1/2 teaspoons onion powder
1 teaspoon basil
1/4 teaspoon salt
1/4 teaspoon hot sauce
8 ounces backfin crab
2 cups cheddar cheese, Shredded (Or Swiss)

Steps:

  • Preheat Oven to 350 Degrees.
  • Sautee Mushrooms in Butter for 3 -4 minutes.
  • Remove with slotted spoon and blot thoroughly.
  • Beat Eggs with Sour Cream, Spinach, Cottage Cheese, Parmesan, Flour and Seasonings.
  • Drain Crab and blot dry with paper towels.
  • Fold Mushrooms (reserve a ¼ of the mushrooms), Crab, and Cheese into Egg Mixture.
  • Spread into 9" Glass Casserole Dish.
  • Arrange remaining Mushrooms on top of Egg Mixture.
  • Bake for 1 hour, or until set.
  • Let sit for about 5 minutes before cutting.
