Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 pound ground beef
Kosher salt and freshly ground black pepper
1 teaspoon paprika
2 teaspoons Italian seasoning
1 tablespoon tomato paste
One 15-ounce can diced tomatoes
One 15-ounce can tomato sauce
1 teaspoon Worcestershire sauce
1 cup low-sodium beef broth
8 ounces cavatappi pasta
4 ounces sharp Cheddar, shredded on the large holes of a box grater (about 1 cup), plus more for serving
2 tablespoons chopped fresh parsley, plus more for serving

Steps:

  • Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
  • Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
  • Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
  • Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

2 pounds lean ground beef
2 large yellow onions, chopped
3 cloves garlic, chopped
3 cups water
2 (15 ounce) cans tomato sauce
2 (14.5 ounce) cans diced tomatoes
3 tablespoons soy sauce
2 tablespoons dried Italian herb seasoning
3 bay leaves
1 tablespoon seasoned salt, or to taste
2 cups uncooked elbow macaroni

Steps:

  • Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
  • Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
  • Stir macaroni into the mixture, cover, and simmer over low heat until the pasta is tender, about 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and serve.

CHEESY AMERICAN GOULASH

Classic American ground beef goulash casserole with a cheesy kick like the lunchroom ladies made-great comfort food. Also known as American Chop Suey, chili mac, or just goulash, this easy dinner recipe will become a standard at your home.

1 pound ground beef
1 pound dry pasta (about 2 cups)
1 onion (small or 1/2 medium )
2 cloves garlic
15 oz tomato sauce
14 1/2 oz diced tomatoes
1 teaspoon basil
2 teaspoon seasoning salt (I used Lowery's)
1/2 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup mozzarella cheese

Steps:

  • Preheat oven to 350° convection or 375° conventional. And heat water and start cooking 1 pound of pasta.
  • Start brown 1 pound of ground beef over medium-high heat.
  • Chop one small or 1/2 medium onion. Add the onion to the ground beef about 5 minutes into cooking, and Add two cloves of minced or crushed garlic to the burger the last few minutes of cooking the ground beef. Drain when done cooking.
  • Prep a 2 1/2 quart baking dish with PAM.
  • To the baking dish, add one 15 oz can tomato sauce, 14 1/2 oz diced tomatoes, one teaspoon basil, two teaspoon seasoning salt (I used Lowery's), 1/2 teaspoon pepper. Mix well.
  • Add the ground beef along with the pasta and mix well.
  • Stir in 1 cup shredded cheddar cheese.
  • Top with 1/2 cup mozzarella.
  • Bake until golden brown-about 30 minutes.

2 tbsp. olive oil
1 onion, chopped
3 garlic cloves, chopped
1 1/2 lb. ground beef
1 (15 oz.) can beef broth
1 (15 oz). can tomato sauce
1 (15 oz.) can diced tomatoes
1 tbsp. Worcestershire sauce
1 tsp. seasoned salt
2 tsp. dried Italian seasoning
1 tbsp. ground paprika
1/2 tsp. ground black pepper
2 c. elbow macaroni
1 c. sharp cheddar cheese, grated
Chopped fresh herbs, like parsley, chives, or dill, for garnish

Steps:

  • Place the oil in a large dutch oven or pot and place over medium-high heat. Once hot, add the onion and cook until slightly softened, about 3 minutes. Add the garlic and cook 1 more minute. Add the ground beef, breaking it up into little pieces with a wooden spoon, and cook until no pink remains, about 5 minutes. If a lot of liquid or fat remain in the skillet, drain most and discard.
  • Add the beef broth, tomato sauce, diced tomatoes, 1/2 cup water, Worcestershire sauce, seasoned salt, Italian seasoning, paprika and ground black pepper. Stir to combine and return to a simmer.
  • Add the macaroni and return the pot to a simmer once again. Reduce heat to medium low and cook for about 12 minutes, until the macaroni is tender, stirring occasionally. Remove from the heat and fold in the cheese. Stir until it is completely melted into the sauce. Serve topped with chopped herbs, if desired.

1 onion, diced
3 Tbsp EVOO (Extra Virgin Olive Oil)
3 cloves garlic, chopped
1 pound ground beef
1 tsp garlic and onion seasoning
1/4-1/2 tsp red pepper flakes
1 tsp Italian seasoning
Salt and pepper to taste
1 can diced tomatoes with jalapenos in juice
1 can corn, drained
8 oz small elbow macaroni, cooked and drained
1 jar spaghetti sauce (I like sun dried tomato and basil)
1 pkg (8 oz.) Italian style shredded cheese

Steps:

  • Saute onions in a skillet with EVOO until soft and translucent. Add garlic and saute for another minute. Add ground beef and cook until brown. Drain grease from pan if necessary.
  • Add seasonings. Taste and adjust as necessary. Mix in tomatoes and corn. Add cooked macaroni and spaghetti sauce; stir well.
  • Simmer for 10-15 minutes on medium heat. Serve with shredded cheese sprinkled on top.

1 small onion, diced
2 Tbsp olive oil

1 pound ground beef
1 can diced tomatoes with jalapenos in juice
1 can corn, drained
Pinch or two of red pepper flakes
1/2 tsp chili powder
1/2 tsp garlic and onion seasoning
Salt and pepper to taste
1 jar Ragu spaghetti sauce- I like the Sundried Tomato version
8 oz small elbow macaroni, cooked and drained
1 cup Kraft Shredded Italian Style Cheese

Steps:

  • Saute onion until soft and translucent in a few Tbsp. of olive oil. Add garlic and cook for 1 minute. Add ground beef and cook with onions and garlic until browned. Drain if necessary.
  • Add canned tomatoes in juice and drained corn to meat. Add seasonings. Adjust to taste. Add spaghetti sauce and cooked macaroni to meat. Stir well. Check seasonings again and adjust as necessary.
  • Let simmer for 10-15 minutes. Sprinkle cheese on top before serving. Can be served with a nice salad and garlic bread if you like.
