3 tablespoons butter
¼ cup chopped onion
3 tablespoons all-purpose flour
1 ½ cups milk
1 ½ cups heavy whipping cream
1 cup cooked and cubed lobster, or more to taste
1 ½ tablespoons cooking sherry
1 tablespoon paprika
⅛ teaspoon Cajun seasoning
salt and ground black pepper to taste

Steps:

  • Melt butter in a large pot over medium heat. Add onion; cook and stir until tender, about 10 minutes. Add flour; stir until combined and cooked, 1 to 2 minutes. Pour in milk; cook and stir until thickened, about 5 minutes. Add heavy cream and lobster, stirring constantly, until bisque re-thickens, about 5 minutes.
  • Stir cooking sherry, paprika, and Cajun seasoning into bisque. Cook until flavors combine, 2 to 4 minutes. Season with salt and black pepper.

2 TABLESPOONS BUTTER
1/2 ONION, FINELY MINCED
1 CUP SEAFOOD BROTH
1 (8-0UNCE) PACKAGE CREAM
CHEESE, SOFTENED
2 CUPS HALF & HALF
1 POUND LOBSTER MEAT
1/2 TEASPOON WORCESTERSHIRE
SAUCE
1 TABLESPOON SCORPION
TRINIDAD HOT SAUCE
1/4 CUP DRY SHERRY
PARSLEY, CHOPPED, FOR GARNISH

Steps:

  • 1. In a medium saucepan over low heat, melt the butter. Add the minced onion and continue cooking slowly until transparent (do not burn the butter). Continue cooking on medium heat, adding the seafood broth and cream cheese; mix with a whisk until cream cheese is completely dissolved. Add the remaining ingredients, stirring frequently until the mixture almost comes to a boil. 2. Serve hot, with a sprinkle of chopped parsley on top, and buttered, toasted French bread on the side.
