MINI BELL PEPPER LOADED TURKEY "NACHOS"



Mini Bell Pepper Loaded Turkey

Loaded mini bell pepper nachos - game changer!! These low-carb nachos are loaded with turkey taco meat, cheese and all your favorite nacho toppings!

olive oil spray
1 lb 93% lean ground turkey
1 clove garlic (minced)
1/4 onion (minced)
1 tbsp chopped fresh cilantro or parsley
1 tsp garlic powder
1 tsp cumin powder
1 tsp kosher salt
1/4 cup tomato sauce
1/4 cup chicken broth
21 mini rainbow peppers (halved and seeded (about 13 oz seeded))
1 cup sharp shredded Cheddar cheese
2 tbsp light sour cream (thinned with 1 tbsp water)
2 tbsp sliced black olives
1 jalapeno (sliced thin (optional))
chopped cilantro (for garnish)

Steps:

  • Preheat oven to 400F and line a large baking try with parchment or aluminum foil. Lightly spray with oil.
  • Spray oil in a medium nonstick skillet over medium heat.
  • Add onion, garlic and cilantro and saute about 2 minutes, add ground turkey, salt, garlic powder, cumin and cook meat for 4 to 5 minutes until meat is completely cooked through. Add 1/4 cup of tomato sauce and chicken broth, mix well and simmer on medium for about 5 minutes, remove from heat.
  • Meanwhile, arrange mini peppers in a single layer, cut-side up close together.
  • Fill each with cooked ground turkey mixture, then top with shredded cheese and jalapeno slices, if using.
  • Bake 8 to 10 minutes, until cheese is melted.
  • Remove from oven and top with black olives, sour cream and cilantro. Serve immediately.

1 pound ground turkey
2 cloves garlic, chopped
freshly ground black pepper to taste
2 teaspoons crushed red pepper flakes
2 tablespoons chopped fresh chives
2 tablespoons hot sauce
1 (1 ounce) package dry taco seasoning mix
1 (14 ounce) can refried beans
1 (14.5 ounce) package tortilla chips
2 cups shredded Cheddar cheese
1 (4 ounce) can sliced black olives
1 ripe tomato, diced
1 bunch green onions, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, begin to brown the ground turkey. Stir in garlic, pepper, 1 teaspoon red pepper flakes, and 1 tablespoon chives. Stir in 1 tablespoon hot sauce. When the turkey is browned, stir in taco seasoning mix according to package instructions.
  • Pour the beans into a microwave safe bowl, and heat in the microwave until softened. Stir in 1 tablespoon chives and 1 tablespoon hot sauce.
  • Spread the tortilla chips across the bottom of a baking sheet. Spoon the beans mixture over the chips. Then spread the turkey mixture across the top. Sprinkle cheese, then olives, tomatoes, green onions, and remaining 1 teaspoon of crushed red pepper flakes over the top.
  • Bake in preheated oven until cheese is melted, about 15 minutes

1 (18 ounce) package tortilla chips
1 ½ pounds cooked, Mexican-seasoned ground beef
1 (15 ounce) can black beans, drained
3 medium jalapeno peppers, thinly sliced
3 cups pico de gallo
1 (16 ounce) package shredded medium Cheddar cheese
3 cups queso blanco dip, warmed
¼ head iceberg lettuce, shredded
1 cup sour cream
1 tablespoon water, or as needed
2 stalks scallions, chopped

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet with cooking spray.
  • Arrange a layer of tortilla chips on the tray. Sprinkle 1/2 of the cooked beef in a layer over the chips (don't drown the chips!) then layer with 1/3 of the beans, 1/3 of the jalapeno peppers, 1/3 of the pico de gallo, and 1/2 of the Cheddar cheese; drizzle 1/3 of the queso blanco over top. Repeat layers once more, starting with chips and ending with queso blanco. Cover with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove the foil and bake for 5 more minutes.
  • Remove from the oven and transfer nachos to a platter. Top with shredded lettuce and remaining beans, jalapeno peppers, and pico de gallo.
  • Stir sour cream with just enough water to thin slightly; drizzle over the nachos. Drizzle remaining queso blanco over top and sprinkle with scallions. Arrange remaining chips around the edges of the platter.

1/2 cup chopped onions
1 cup rinsed canned kidney beans
2 tsp. TACO BELL® Taco Seasoning Mix
1/2 cup TACO BELL® Thick & Chunky Salsa, divided
4 cups tortilla chips (4 oz.)
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
1/2 avocado, coarsely chopped
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Cook turkey and onions in medium nonstick skillet until turkey is done, stirring frequently. Add beans, taco seasoning mix and 1/4 cup salsa; mix well. Cook 5 min. or until heated through, stirring frequently.
