1 can (10-1/2 oz.) reduced-sodium condensed cream of chicken soup
1 container (8 oz.) breakstone's or knudsen sour cream
1/2 cup kraft classic ranch dressing
1 27-oz pkg (28 oz.) ore-ida shoestrings
1 27-oz pkg (8 oz.) kraft shredded three cheese with a touch of philadelphia
8 slice oscar mayer bacon, cooked, crumbled

Steps:

  • Heat oven to 375ºF.Mix cream cheese, soup, sour cream and dressing until blended.Layer half each of the potatoes, cream cheese mixture and shredded cheese in 13x9-inch baking dish sprayed with cooking spray. This recipe came from a few different recipes which I have combined to make something that my family enjoys. If you buy already cooked bacon it is even quicker to make.

7 baking potatoes
4 cups cheddar cheese
3 cups heavy whipping cream
2 cups reduced-fat sour cream
1 lb cooked bacon
salt
pepper
garlic powder
onion powder

Steps:

  • Boil Potatoes with skin on until Soft.
  • When cool peel skin and slice or cube. Spray a 13" x 9" Baking Dish. Layers potatoes in bottom of pan.
  • Sprinkle with Salt,Pepper, Garlic Powder ,Onion Powder, and Bacon.
  • Mix together Cheddar Cheese, Whipping Cream and Sour Cream and put on top of potatoes.
  • Bake @ 350 for 30 minutes or until cheese is melted.

3 cups Corn Chex™ cereal
4 cups shoestring potatoes
2 cups bite-size cheese crackers
1/4 cups bacon flavor bits or chips
1/4 cup butter or margarine
1 package (1 oz) ranch dressing and seasoning mix
1/2 cup grated Parmesan cheese

Steps:

  • In large microwavable bowl, mix cereals, potatoes, crackers and bacon flavor bits.
  • In small microwavable bowl, microwave butter uncovered on High about 30 seconds or until melted. Pour over cereal mixture; stir until evenly coated. Stir in dressing mix and cheese until evenly coated.
  • Microwave uncovered on High 3 minutes, stirring after each minute. Spread on waxed paper or foil to cool. Store in airtight container.

This sounds really good, it's from the Southern Living December '07 issue! I can't wait to try it. I think I will make my own mashed potatoes instead of frozen ones. Posting here so I won't lose the recipe!

1 (22 ounce) package frozen mashed potatoes
1 (6 1/2 ounce) container garlic & herb spreadable cheese
1/2 cup milk
4 slices cooked bacon, slices crumbled
1/2 teaspoon pepper
1 cup shredded cheddar cheese
garnish with chopped fresh chives

Steps:

  • Prepare potatoes according to package directions.
  • Stir in spreadable cheese and next 4 ingredients; stir until blended. Spread mixture on bottom of a lightly greased 11x7 inch baking dish; top with cheddar cheese.
  • Bake at 350°F for 25 to 30 minutes or until thoroughly heated. Garnish if desired.
