These clever foil packets are quick to put together and cook up perfectly for a summer barbecue. And since they are personal-size, your crowd can eat them with our suggested toppings or their favorites.

Nonstick cooking spray, for the foil
Half 13-ounce bag corn tortilla chips (about 6 ounces)
1 link cooked chorizo, quartered lengthwise then cut in to 1/2-inch pieces
6 ounces freshly grated Cheddar (about 2 cups)
6 ounces freshly grated Monterey jack cheese (about 2 cups)
1 cup refried beans
4 tablespoons chopped fresh cilantro leaves
4 tablespoons guacamole
4 tablespoons chopped pickled jalapenos
4 tablespoons salsa
4 tablespoons sour cream

Steps:

  • Prepare a grill for medium-low heat. Tear off 4 18-inch long pieces of heavy-duty foil and put them on a work surface, shiny-side up, with a long end of each piece closest to you. Spray evenly with cooking spray.
  • Pile a quarter of the chips on the left side of 1 piece of foil, sprinkle with a quarter of the chorizo, Cheddar and Monterey jack. Dollop with a quarter of the refried beans. Fold over the empty-side of foil and seal the edges to make a packet. Repeat with the remaining foil, chips, chorizo, Cheddar, Monterey jack and beans.
  • Place the packets on the grill and cook, covered, until the cheese is melted and the chips are hot, 12 to 15 minutes.
  • Remove the packets to a large platter. Careful of steam, open the packets and top each with 1 tablespoon of cilantro, guacamole, jalapenos, salsa and sour cream.

1 tablespoon vegetable oil
1 pound ground fresh Mexican chorizo
8 slices good quality white bread, such as Arnold Country White Sliced
8 ounces shredded Chihuahua cheese
1/2 cup sliced black olives
1/4 cup pickled jalapenos, sliced
4 tablespoons salted butter, softened
Restaurant-style tortilla chips, such as Donkey corn tortilla chips
Honey Chipotle Crema, recipe follows
1 cup sour cream
1 tablespoon chopped fresh cilantro
1 tablespoon honey or agave
1 chipotle pepper in adobo, minced
1/2 lime, juiced
Kosher salt and pepper

Steps:

  • In a large skillet, heat the vegetable oil and brown the chorizo over medium heat until cooked through, about 8 minutes. Using a slotted spoon, scoop out the chorizo, and move to a paper-towel-lined plate. Set aside.
  • In between two pieces of bread, layer the cheese, chorizo, olives, jalapenos and then another layer of cheese. Add some butter to the griddle over medium-low heat, and place the sandwich on the griddle. Add more butter to the top of the bread and cover with a metal bowl until golden on the outside and gooey in the middle, 5 minutes per side. Open the sandwich and place a few tortilla chips inside, then close again.
  • Cut into quarters, serve with a side of Honey Chipotle Crema, and be prepared to never eat conventional nachos again.
  • Mix the sour cream, cilantro, honey, chipotle pepper, lime juice and some salt and pepper together, and set aside.

2 slices french bread
1 tbsp sour cream
2 tbsp salsa
tex mex cheese
2-3 tbsp cooked ground beef
1/8 tsp taco seasoning
1 green onion stalk (chopped)
4-5 cilantro leaves
1 slice of tomato (diced)
1/4 avocado (diced)
1-2 black olives (chopped)
1 tbsp black beans
1-2 slices jalapeno pepper (chopped)
1-2 handful nacho flavoured doritos (crumbled)
1 egg (scrambled)
butter

Steps:

  • Cook the ground beef with used salt, pepper and garlic. Crush all the doritos and spread them on a plate, dip one side of each slice in the egg and then into the doritos. Once you have done this begin assembling the sandwich with sour cream on one slice, and salsa on the other. Next place a layer of cheese on the bottom slice, then stack on the rest of ingredients and finish with another layer of cheese and your top slice. In a pan on medium heat, add some butter, once that has melted, place your sandwich in, cooking each side until browned and the cheese is melting. You may want to cover your pan with a lid while it's cooking to help the cheese melt, since there is so much stuff in the sandwich Once everything is melted, slice it in half and enjoy all your favorite nacho toppings in one glorious sandwich. Can be served with salsa and guacamole for dipping.
