LOADED FOUR CHEESE AND THREE MEAT LASAGNA

I have always believed that a true cook will cook anything, regardless if it is something that she/he eats or not. I am not a fan of Italian foods, but I cook it and people seem to really enjoy it. For a person who isn't into Italian foods, I must say that I really love my Lasagna recipe.

18 lasagna noodles
1 1/2 lb italian pork sausage, sweet
1 1/2 lb ground beef
2 1/2 pkg 4oz sliced pepperoni or 1 pound sliced fresh from deli
1/2 c onions, chopped small
3 clove garlic, minced
6-8 oz tomatoe sauce
1 1/2 can(s) 28oz crushed tomatoes
2 1/2 can(s) 6oz tomato past
1 c water
1 Tbsp garlic salt
1 Tbsp garlic powder
4 Tbsp brown sugar
1/2 tsp fennel seed
1 tsp black pepper
1 1/2 tsp beef bouillon
4 Tbsp white sugar
1 1/2 tsp onion powder
1 1/2 tsp basil leaves, dried
4 tsp italian seasoning
4 Tbsp psrsley, fresh chopped
1/2 c sour cream
8 oz cream cheese, softened
2 large eggs, beaten
24 oz ricotta cheese
4 1/2 c mozzarella cheese
1 1/2 c parmesan cheese, shredded
2 c spinach, chopped (optional)
2 small cans of black olives, sliced (optional)

Steps:

  • 1. On medium heat, cook beef, sausage, garlic and onion in heavy skillet, until well browned.
  • 2. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugars, fennel seeds, Italian seasoning,garlic salt, garlic powder, beef boullion, black pepper, basil, and 2 tbsp parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally. Last 15 mins add olives. Last 5 mins add spinach.
  • 3. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water.
  • 4. In a mixing bowl, combine ricotta cheese, sour cream, cream cheese with eggs, and remaining parsley. mix well.
  • 5. Preheat oven to 375 degrees
  • 6. To assemble, spread 1 cup of meat sauce in the bottom of a greased (9X13) baking dish. Arrange 6 noodles lengthwise over meat sauce. Layer some ricotta cheese mixture, pepperoni, meat sauce, and mozzarella cheese (about 1 1/2 cup per layer). Repeat layers with all ingredients. Sprinkle top with Parmesan cheese and remaining Mozzarella cheese.
  • 7. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • 8. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Every morning I love watching the Today Show while drinking my coffee. I normally watch the cooking segment (and critique it) and on this morning I was curious who Kevin Curry was from Fit Men Cook so I grabbed my cup of coffee and sat to watch his segment. I am Italian and love the gym. Currently I am doing a weight loss challenge at my gym called HEWFIT and this recipe inspired me to create this dish! I don't miss the cheese at all. Enjoy my paleo version.

¼ cup olive oil, or as needed, divided
1 pound ground beef
2 cloves garlic, minced
2 teaspoons Italian seasoning, divided, or to taste
½ teaspoon kosher salt, or to taste
½ teaspoon ground black pepper, or to taste
2 cups marinara sauce, divided
1 eggplant, sliced
2 small zucchini, sliced
2 Cubanelle peppers, chopped
2 cups sliced fresh mushrooms
2 small sweet potatoes, thinly sliced, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan with 1 tablespoon olive oil.
  • Heat 1 tablespoon oil in a large skillet over medium heat. Cook beef, breaking apart into small pieces using a wooden spoon, until browned, about 5 minutes. Move to a bowl using a slotted spoon.
  • Wipe the skillet clean with a paper towel. Heat the remaining 1 tablespoon oil. Add garlic and cook until fragrant, about 30 seconds. Add to the beef. Season beef with 1 teaspoon Italian seasoning, salt, and pepper. Stir in 1 1/2 cups marinara sauce until well combined.
  • Cook and stir eggplant in the skillet until soft, about 2 minutes per side. Season with salt. Set on a plate. Repeat with zucchini. Cook and stir mushrooms over medium heat until soft, about 5 minutes. Transfer to a bowl. Cook and stir Cubanelle peppers until tender, about 3 minutes.
  • Lay sweet potatoes evenly over the bottom of the baking pan, reserving a few slices. Layer eggplant, beef, zucchini, Cubanelle peppers, and mushrooms on top. Cover with the remaining 1/2 cup marinara. Top with the reserved sweet potato slices. Drizzle with oil; season with the remaining 1 teaspoon Italian seasoning, salt, and pepper. Cover with aluminum foil.
  • Bake in the preheated oven until sweet potatoes are soft, about 45 minutes. Remove aluminum foil and bake until golden brown, about 15 minutes more. Let rest for 5 minutes before serving.

15 ounce(s) alfredo sauce
10 ounce(s) frozen broccoli, thawed & drained & chopped
2 cup(s) shredded mozzarella
3/4 cup(s) grated parmesan cheese
5 1/2 cup(s) loaded veggie pasta sauce (my recipe posted on jap)
10 - no-boil lasagna noodles

Steps:

  • Preheat oven to 350 degrees F. Coat a 13x9 glass baking dish with nonstick spray.
  • In a medium bowl, blend Alfredo sauce and chopped broccoli.
  • In a separate bowl, combine mozzarella and parmesan.
  • Spread 1/2 the Loaded Pasta Sauce in bottom of the dish. Top with with 5 of the lasagna noodles.
  • Spread on all of the Alfredo mixture. Top with 1/2 of the cheese mixture and last 5 noodles.
  • Spread remaining Loaded Pasta Sauce and top with remaining cheese.
  • Cover with foil. Bake for 55 minutes in preheated oven. Uncover & bake for an additional 10 minutes more. Let stand for 10 minutes before serving.

12 lasagna noodles
1 lb ground beef
2 teaspoons olive oil
2 -5 tablespoons garlic
1/2 small chopped onion
1 (10 3/4 ounce) can tomato soup
1 (32 ounce) can tomato sauce
1 (8 ounce) can hunts tomato sauce with basil garlic and oregano
2 cups shredded five-cheese Italian cheese blend
24 -36 slices American cheese
7 tablespoons parmesan cheese
oregano (to taste)

Steps:

  • Fill clean sink with hot water, add noodles, let them soak while you make the sauce. In a pot put olive oil, garlic to taste, I use about 5TBSP because I love garlic, onion, and burger. Brown the burger. Then add tomato soup, tomato sauces, and oregano, to taste my sister uses oregano from Mexico because it has a stronger flavor. I prefer a milder oregano and much less of it. Let simmer on low heat until it starts to boil.
  • Using a large spoon, a soup ladle works well, spoon enough sauce on the bottom of 9x13 pan. Then layer enough noodles to cover entire pan (should be 4), sauce, sprinkle parmesan cheese, spread about a handful of 5 cheese, then cover entire layer with sliced American cheese. Repeat process until everything is gone, should be 3 layers.
  • Bake at 350°F for about 40 minutes, or until the cheese starts to get a little brown. After pulling it out of the oven wait about 10 minutes to cut and serve. Serve with a loaf of French bread.
