LOADED GREEK BURGERS

Tired of plain old 'burgers for summertime? Mix it up a bit by adding some classic Greek flavor: spinach, feta, roasted red pepper, and herbs...Yum! Serve these burgers on a warm toasted Kaiser roll, with a delicious feta cheese spread, fresh lettuce, and tomato.

1 red bell pepper
2 ounces crumbled feta cheese
2 tablespoons mayonnaise
2 teaspoons lime juice
1 sprig fresh mint, chopped
1 sprig fresh parsley, chopped
1 pound lean ground beef
6 ounces crumbled feta cheese
8 ounces fresh spinach - rinsed, drained and coarsely chopped
¼ cup bread crumbs
1 egg
1 clove garlic, minced
¼ cup chopped onion
2 sprigs fresh basil, coarsely chopped
3 sprigs fresh mint, coarsely chopped
2 sprigs fresh parsley, coarsely chopped
salt and ground black pepper to taste
4 Kaiser rolls, split and toasted
1 tomato, sliced
4 leaves lettuce

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil. Cut the red bell pepper in half from top to bottom; remove the stem, seeds, and ribs; place pepper cut-side-down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the pepper has blackened and blistered, about 5 minutes. Allow the blackened pepper to cool and steam in a paper bag for 5 minutes; peel and dice; set aside.
  • Stir together the 2 ounces feta cheese, mayonnaise, lime juice, the 1 sprig chopped mint, and the 1 sprig chopped parsley in a small bowl; set aside.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Place the roasted red pepper, ground beef, feta cheese, spinach, bread crumbs, egg, garlic, onion, basil, the remaining mint, and the remaining parsley in a bowl. Sprinkle with salt and pepper, and mix gently with your hands until evenly combined. Divide the meat mixture to form 4 equal 4 1/2 inch patties.
  • Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, about 4 minutes per side for medium. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Serve burgers on warm toasted Kaiser roll with the feta cheese spread, fresh tomatoes, and lettuce.

MEDITERRANEAN LOADED BAKED POTATO RECIPE

The perfect loaded baked potato, fluffy and creamy on the inside with crispy skin and packed with flavor from toppings like Greek Tzatziki sauce, olives, tomatoes, and feta!

4 large russet potatoes
Extra virgin olive oil (I used Private Reserve Greek EVOO)
Kosher salt
Black pepper
1-2 tsp dried oregano
Greek Tzatziki Sauce (I use this recipe)
1/2 cup chopped fresh parsley flakes
1 large tomato, diced
1/2 cup chopped pitted Greek olives
Crumbled feta cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Wash and scrub the potatoes clean. Dry completely.
  • Poke holes all over the potato using a fork - about 5 to 6 times. Rub the potatoes with olive oil and sprinkle with kosher salt, and prick them in several places with the tines of a fork. Arrange the potatoes on a baking sheet, and bake for 1 hour or until potatoes are super soft and fork-tender and the skin is nice and crisp (can take up to 75 minutes).
  • While the potatoes are baking, make the Tzatziki sauce according to this recipe, if using, and prepare the remaining toppings.
  • When the potatoes are ready, remove from the oven and set aside to rest for 5 minutes. Slice each open wide, and scoop the potato flesh out into a bowl. Add 1 tbsp olive oil, salt and pepper, and dried oregano. Mash with a fork.
  • Now, scoop the mashed potatoes back into the skins. Using your hands, reshape the potatoes if needed, then top with the Tzatziki sauce and the remaining Mediterranean toppings to your liking. Enjoy!

1 (26 ounce) package frozen French fries (such as Ore-Ida®)
salt and ground black pepper to taste
⅔ cup tzatziki sauce
⅔ cup chopped red onion
⅔ cup sliced banana peppers, drained
15 Kalamata olives, pitted and sliced
15 grape tomatoes, sliced
⅔ cup crumbled feta cheese
1 tablespoon chopped fresh parsley, or to taste
5 lemon wedges

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Spread French fries on a baking sheet.
  • Bake in the preheated oven until golden brown and crispy, 10 to 12 minutes. Sprinkle salt on potatoes when they come out of the oven.
  • Divide French fries evenly among plates and drizzle with tzatziki sauce. Top with red onion, banana peppers, olives, tomatoes, and feta cheese. Garnish with fresh parsley, season with salt and pepper, and serve immediately with fresh lemon wedges.

1 c peach nectar, chilled
1 oz peach schnapps (optional)
1 oz lemon vodka (optional)
1/2 c orange juice, fresh squeezed
1/4 c meyer lemon juice, fresh squeezed
1/8 c club soda
1/2 c ice, crushed
1 slice peach, garnish
1 slice orange, garnish
1 slice lemon, garnish

Steps:

  • 1. Place a large glass or two smaller glasses in the freezer to chill, until ready to use.
  • 2. Blend peach nectar, peach schnapps and lemon vodka (if using) orange juice and lemon juice together. Mix well.
  • 3. Add the crushed ice to chilled glass.
  • 4. Pour the mixed juices over the crushed ice, add club soda, garnish with peach wedge and citrus slices.
  • 5. Sit back and enjoy.

400g frozen French fries
1 tsp dried oregano
2 tsp olive oil
¼ finely chopped cucumber
10 pitted and halved black olives
6 finely chopped cherry tomatoes
1 tbsp finely chopped parsley
3 tbsp Greek yogurt
40g crumbled feta

Steps:

  • Toss the French fries with the dried oregano and olive oil, then cook following pack instructions.
  • While the fries are cooking, mix the cucumber with the black olives, cherry tomatoes and parsley. Mix the Greek yogurt with half of the crumbled feta in a separate bowl. Tip the fries into a serving dish, top with the salad and yogurt mixture, then scatter over the remaining crumbled feta. Season and serve.
