4 cups all-purpose flour, divided
6 tablespoons Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker
2 large eggs
1-1/2 cups water
1 teaspoon salt
2 broiler/fryer chickens (3-1/2 to 4 pounds each), cut up
Oil for deep-fat frying

Steps:

  • In a large shallow dish, combine 2-2/3 cups flour and Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker. In another shallow dish, beat eggs and 1-1/2 cups water; add 1 teaspoon salt and the remaining 1-1/3 cup flour and 1/2 teaspoon pepper. Dip chicken in egg mixture, then place in the flour mixture, a few pieces at a time. Turn to coat., In a deep-fat fryer, heat oil to 375°. Working in batches, fry chicken, several pieces at a time, until golden brown and a thermometer inserted into chicken reads 165°, 7-8 minutes on each side. Drain on paper towels.

1 cup buttermilk
1/2 cup mayonnaise
4 sprigs thyme, leaves stripped and chopped
1 1/2 teaspoons paprika
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt
2 3-to-4-pound chickens, each cut into 8 pieces
Cooking spray
3 1/2 cups breadcrumbs (preferably panko)
1/3 cup chopped fresh chives
Freshly ground black pepper

Steps:

  • Whisk the buttermilk, mayonnaise, half of the thyme, 1 teaspoon paprika, the onion and garlic powders, cayenne and 1 teaspoon salt in a large bowl. Add the chicken and toss to coat; cover and refrigerate at least 3 hours or overnight.
  • Position racks in the upper and lower thirds of the oven and preheat the oven to 400 degrees F. Line 2 baking sheets with aluminum foil and set a wire rack on each; coat the racks with cooking spray. Combine the breadcrumbs, chives, the remaining thyme and 1/2 teaspoon paprika, 1 teaspoon salt and 1/2 teaspoon black pepper in a shallow bowl.
  • Remove the chicken from the marinade and dredge in the breadcrumb mixture, pressing to adhere. Put the white meat on one wire rack and the dark meat on the other rack, skin-side up. Coat the chicken with cooking spray. Transfer to the oven, placing the dark meat on the bottom oven rack; bake until the crust is golden and a thermometer inserted into the thickest part of the meat registers 165 degrees F, 50 to 55 minutes. Let cool slightly on the wire racks, 10 minutes. Season with salt.

1 tablespoon Worcestershire sauce
1 teaspoon ground mustard
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 can (6 ounces) cheddar or original French-fried onions, crushed, divided
4 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a shallow bowl, combine butter, Worcestershire sauce, mustard, garlic salt and pepper. In another shallow bowl, place 1/2 cup crushed onions. Dip chicken in butter mixture, then coat with onions. , Place in a greased 9-in. square baking pan. Top with remaining onions; drizzle with any remaining butter mixture. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 170°.

Number Of Ingredients 9

pkg chicken parts of your choice ( i used legs and breast)
1 c flour ( or more of all purpose or self-rising, your choice)
1 tsp salt ( salt it to your taste satisfaction)
1 tsp black pepper or white pepper ( or as you desire)
2 1/2 tsp ranch popcorn seasoning ( your brand choice)
1 or 2 c olive oil (of your choice, i use extra light to deep fry)
1 or 2 c peanut oil (again your choice of brand enough to deep fry)
1 tsp onion powder (your choice brand)
1/2 tsp garlic powder (optional) (your brand choice)

Steps:

  • 1. Purchase and open your pack of chicken parts (4 to 5 peices or many as you need). Thoroughly wash each chicken part rubbing it under warm water. Aferwards pat dry eack piece all over with paper towels.
  • 2. Lay and spread out each piece of chicken on a large cutting board and season all sides. Place in a large ziplock bag with flour, adding piece by piece at a time. Do not add more than 4 pieces at a time. Shake and flour (note: may use flour at your desire of flouring).
  • 3. Heat your desired amounts of oil in a large frying pan or deep fryer (whatever you use) for about 10 minutes or as long as it takes to it get hot for deep frying (your judgement call). Put chicken in fryer with metal cooking tongs and cover with a large splatter screen until deep fried to your desire. Take it out and drain it on paper towels on serving dish. Let it cool off a liitle to serve. Eat when it is cooled enough fo you and children if any.....and serve with your side food of choice!!!
