A friend of mine gave me a Huckleberry cookbook and a gallon of huckleberries. Once I found this recipe, that gallon of huckleberries didn't last long. It's texture and flavor is amazing, and it's super easy! I have even doubled this recipe without any trouble. It also freezes well. I hope you like it as much as we do! As a side note: Our elevation is 5000+ feet above sea level so cooking time may vary based on where your located.

2 cups all-purpose flour
3/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1 cup whole milk
1 teaspoon vanilla
3 tablespoons vegetable oil
1 cup huckleberries

Steps:

  • Preheat oven to 350 degrees. Prepare a 9-inch loaf pan with cooking spray or butter.
  • Combine flour, sugar, baking powder and salt in a large mixing bowl.
  • In a separate bowl, whisk eggs and then add milk, vanilla and oil. Add egg mixture to dry ingredients. Try not to over mix.
  • Fold in huckleberries.
  • Pour batter into pan.
  • Bake for 1 hour or until inserted knife comes out clean.
  • Cool and THEN remove from the pan (otherwise it'll stick and you'll get half a loaf in and out of the pan).

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1 cup huckleberries (or your favorite fruit if you can't find them)
2 large eggs
1/2 cup evaporated milk
1 tablespoon vanilla
whipped cream, for garnish

Steps:

  • Mix flour, sugar and baking powder together in a bowl.
  • Mash the huckleberries and then combine them with the eggs, milk, vanilla and flour mixture.
  • Place this mixture in a cloth wrapper and tie it securely.
  • I believe Ms. Ruby used a cloth flour sack. Immerse this into a pot of boiling water and cook for 25 minutes.
  • Untie, slice and serve with sweetened whipped cream.

2 large eggs
2 large egg yolks
2-1/4 cups half-and-half cream
2 cups whole milk
1/2 cup butter, melted
1/4 cup sugar
1 tablespoon vanilla extract
1-1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon sea salt
20 dinner rolls (1-1/4 pounds), cut into 1-inch cubes (18 cups)

SAUCE:
1 cup butter, cubed
1 cup packed brown sugar
1 cup half-and-half cream
2 teaspoons vanilla extract
1/4 teaspoon sea salt
1/8 teaspoon baking soda

Steps:

  • Preheat oven to 350°. Whisk together the first 10 ingredients until blended. Gently stir in bread. Transfer to a greased 3-qt. or 13x9-in. baking dish. Sprinkle with brown sugar; let stand until bread is softened, about 15 minutes. Bake until puffed and a knife inserted in center comes out clean, 40-45 minutes., Meanwhile, for sauce, melt butter in a large heavy saucepan over medium heat. Add brown sugar; stir until dissolved. Gradually stir in cream. Bring to a boil. Reduce heat; simmer until thickened, 15-20 minutes, stirring constantly. Remove from heat; add vanilla, sea salt and baking soda, stirring well. Huckleberries in north Idaho are Purple Gold! This year was no exception! Our oldest Son and Family live in Colorado. We asked what he would like us to bring from home and of course his answer was huckleberries! If i were going to sell a gallon of huckleberries my price would be $120 a gallon! They aren't easy, but O, my they are so worth it =D While in Broomfield, CO we made this dessert for them! They don't normally eat left overs, but they did make an exception for this!

8 slice(s) texas toast bread, cut in 1" cubes
4 ounce(s) cream cheese, cut in 1" cubes
2 tablespoon(s) butter, melted in pan
- brown sugar, sprinkled over the bottom of pan
6 - eggs
1 1/2 cup(s) sweet cream or italian sweet creamer
1 1/2 teaspoon(s) vanilla
1/4 cup(s) huckleberry syrup [see attached recipe below]
HUCKLEBERRY SYRUP:
INGREDIENTS:
2 cup(s) filtered water
2 cup(s) sugar
3 cup(s) huckleberries
2 tablespoon(s) lime juice
DIRECTIONS:
IN A SAUCEPAN: MIX SUGAR AND WATER BRING TO BOIL, ADD BERRIES, WATCH CLOSELY SO IT DOESN'T BOIL OVER, BOIL 20 MINUTES STIRRING OCCASIONALLY. REMOVE FROM HEAT ADD LIME JUICE. DRIZZLE SYRUP OVER BREAD PUDDING.

Steps:

  • Line a 9x9x2" pan w/parchment paper, lightly spray w/olive oil.
  • Melt butter in pan in microwave, sprinkle brown sugar over melted butter, covering the bottom.
  • Arrange 1/2 the bread crumbs, add cubed cream cheese, sprinkle 1 1/2 cups of berries over breadcrumbs and cream cheese, top w/remaining bread cubes, sprinkle 1/2 cup of berries over the top.
  • In a large bowl beat eggs, sweet cream, vanilla and huckleberry syrup till light and foamy, pour over bread mixture, cover tightly w/foil, refrigerate overnight.
  • Remove from frig. about 1/2 an hour before baking. Bake at 350 degrees for 30 minutes, uncover and bake 30 minutes, until center is firm and surface is lightly browned.
