Steps:
- Place the sausages into a saucepan, cover with water, and bring to a boil. Reduce heat to medium-low and simmer for 20 minutes, poking sausages with a sharp fork to release fat. Drain and rinse the sausages.
- Place the sausages into a 1-quart glass canning jar.
- Pour white vinegar and water into a saucepan, and stir in the pickling salt, pickling spice, mustard seeds, celery seeds, dill seeds, onion slices, garlic, black peppercorns, and banana pepper rings.
- Bring to a boil over medium heat and cook for 5 minutes, stirring often.
- Pour the vinegar mixture over the sausages in the jar; cap the jar, and refrigerate at least 3 days before serving.

- In a large saucepan, combine: ketchup, vinegar, brown sugar, mustard, cloves and cinnamon.
- Mix well.
- Add the Little Smokies (drain out the liquid from packages) and cover.
- Simmer on medium-low heat for about 30-45 minutes or until Little Smokies are heated through, stirring occasionally.
- If doing these in a crockpot; combine ketchup, vinegar, brown sugar, mustard, cloves and cinnamon in a bowl.
- Mix well.

- Cut bacon into 1/3's. Wrap 1/3 cut bacon strips around each lil' smokie and secure with a toothpick. Place one layer of bacon wrapped smokies on large heavy cookie sheet. Cover completely with brown sugar. Cover with foil. At this point you can refrigerate overnight if you need them for the next day. Bake at 375 covered for 30-40 minutes. Remove foil and turn oven to broil. WATCH carefully. Let broil approx. 3-5 minutes until bacon is crisp. Remove from oven and pour juice from pan into crockpot. Be careful , I put the foil back on leaving 1 corner open. Using hot pads, pour juice into crockpot. Remove foil and turn smokies over and broil 2-3 minutes on other side just until crisp. Remove and put in crockpot on WARM. Make plenty because these disappear quick!
HOMEMADE CORN DOGS OR LITTLE SMOKIES
These are so good dipped in mustard , ketchup or chili sauce they are all good - These freeze well too! Great for those after school snacks.

- 1. In a large bowl. combine dry ingredients. Add the buttermilk, eggs and 2 Tablespoons oil and stir well to combine. Fold in onions, bacon and cheese. When batter is well mixed pour into a quart canning jar to within 1 inch of top. Or use a tall glass. In an electric fryer or large pot, heat enough oil to come halfway up the fryer or pot and heat to 360^. Pat dry and roll hot dogs in cornstarch shake off any excess. One at a time, while holding the skewers, dip the skewed hot dogs into the batter, turning to completely and thickly coat on all sides. Slip the coated dogs in batches into the hot oil and cook turning, until golden brown on all sides, 3 to 5 minutes. Drain on paper towels and place on wire rack and sprinkle with seasoned salt. Pass the dipping sauces.
- 2. Makes great appetizers using little smokies instead of the hot dogs..

- 1. Wash potatoes; peel and cut into eighths. Place potatoes in a large cooking pot and cover with water. Bring to a boil and cook for 10 min.
- 2. While potatoes are boiling, mix together flour, sugar, salt, pepper, and celery seed. in a 2 cup measuring cup, mix the water and vinegar.
- 3. Drain potatoes, place back in cooking pot; set aside.
- 4. In a large skillet, fry bacon until crisp; remove and drain. cook and stir onion in bacon drippings until tender and golden brown. stir in flour mixture. Cook over low heat stirring until bubbly. Remove from heat; stir in water and vinegar. Heat to boiling, stirring constantly.
- 5. Add kielbasa or smokies. Boil and stir 1 min. Crumble bacon over potatoes; pour meat mixture over potatoes and bacon. Stir until well coated.
BLACK-EYED PEAS AND LITTLE SMOKIES WITH CABBAGE

- Bring little smokies and the preserves to a low boil and then simmer for about 5-10 minutes or until the jelly thickens a little. Stir occasionally to keep from burning or sticking.
- We put them in a serving dish if they are going to be eaten fairly quickly. If to be left out for guests to graze on for awhile, then we puy them in a fondue pot (or sometimes we set out an electric skillet on low) to keep warm.
- Easily doubled or tripled for large crowds.
- Note - two 18 ounce jars of preserves and 3 packages of smokies do well for a large batch.
