GRANDMA'S HASH BROWN CASSEROLE
This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
- Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

SAUSAGE GRAVY HASH BROWNS BAKE
I came up with this one day after trying out other recipes on my children that they rejected. I have one son who doesn't eat eggs, so it makes hit hard to make a breakfast casserole everyone will eat. I finally did it with this one!

Steps:
- Crumble and cook sausage in a large frying pan until no longer pink.
- (do not drain).
- Add 2 tablespoons flour and stir into sausage mixture, let it cook for one minute.
- Slowly add milk and bring to a boil.
- Let cook for 10 minutes until thickened to desired consistency.
- Add salt and pepper to taste.
- Meanwhile put both packages of thawed hashbrowns into a 9 x 13 glass dish.
- Add shredded cheese.
- Top with sausage gravy mixture.
- Cook at 350 degrees for 30 minutes.
- Garnish with green onions if desired.
- You can make this with a variety of cheeses.
- I find that using either sharp cheddar or pepper jack work the best.

LIT'L SMOKIES HASH BROWNS BAKE
This one I had found online. I altered it to suit our tastes. My mother suggested using breakfast sausage instead of smokies and serving it with eggs and having a breakfast meal out of it. Steps:
- 13Hash Brown Crust:.
- Preheat oven to 425º Fahrenheit.
- Press potatoes onto bottom and up sides of a 9" pie plate.
- Drizzle with ¼ cup melted butter.
- Bake at 425ºFahrenheit for 20 to 25 minutes or until crust is lightly browned.
- While crust bake, prepare filling.
- Let crust cool slightly.
- Filling:.
- Reduce oven temperature to 350º Fahrenheit. Add 1 cup of cheese.
- Spoon into hash brown crust.
- Cut smokies in thirds and top with Hillshire Farm Lit'l Smokies®.
- Combine eggs, milk, salt, and pepper.
- Beat with a wire whisk.
- Pour over Lit'l Smokies™ and cheese.
- Top with additional cheese.
- Bake at 350º Fahrenheit for 25 to 30 minutes or until filling is set.
- Let stand 10 minutes before serving.
