When growing up my Mother was always trying new things and was a good cook in general. Mom is a Chef today and still a wonderful cook. This is one of many good things she made when I was a kid. Who knows where she got the recipie but I always liked it and so do my children. I like spicy stuff so sometimes I will substitute jalapeno for the green pepper.

Number Of Ingredients 12

3/4 cup saltine crackers (crushed, 21 crackers)
2 eggs
1/4 cup onion (chopped)
1/4 cup catsup
2 tablespoons Worcestershire sauce
1/4 teaspoon salt
1 dash pepper
1 lb ground beef
1 (10 1/2 ounce) can cream of mushroom soup
1 (15 ounce) can kidney beans (drained)
1/3 cup green pepper (chopped)
2 ounces cheddar cheese (shredded)

Steps:

  • Combine crumbs, eggs, onion, catsup, worchesstershire, salt and pepper.
  • Add ground beef and mix well by hand.
  • Shape meat into 6 patties.
  • In large skillet brown patties on both sides.
  • Pour soup over meat, top with beans and green pepper.
  • Cook covered over low heat 10 minutes.
  • Sprinkle cheese over top and cook covered 5 more minutes.

1 pound ground beef
4 ounces chorizo sausage, casing removed
2 teaspoons onion powder
1 teaspoon ground cumin, plus more for the rosada sauce
Salt and pepper
1 cup grated aged Cheddar
1 cup queso blanco
1/2 cup mayonnaise
1/4 cup ketchup
1 lime, zested and juiced
6 slider buns, split

Steps:

  • In a medium bowl, mix together the ground beef, chorizo, onion powder, cumin and 2 teaspoons each salt and pepper. Form the mixture into palm-size balls.
  • Heat a griddle or large skillet over medium-high heat. Place the balls on the griddle and smash with a spatula or the back of a spoon. Cook, flipping once, until cooked through. Divide the Cheddar and queso blanco among the burgers and let melt. Remove the burgers to a plate.
  • Meanwhile, combine the mayonnaise, ketchup and lime zest and juice in a bowl; mix to blend. Add cumin, salt and pepper to taste.
  • Toast the slider buns on the griddle. Serve the burgers on the buns, topped with some rosada sauce.

Have made this recipe for 35+ years and it is still a favorite of my husbands. It is "hearty" and I normally allow 2 burgers per serving.

3/4 c salteen cracker crumbs - finely crushed
2 eggs
1/4 c ketchup
2 tsp worchestershire sauce
2 tsp instant/minced dried onions
1 1/2 lb hamburger
1 -10 oz can cream of mushroom soup
1/4-1/2 c green pepper - chopped
1 -15 oz can drained kidney beans or pork & beans
1 c shredded cheddar cheese

Steps:

  • 1. COMBINE FIRST 5 INGREDIENTS. MIX WELL THEN ADD SALT AND PEPPER AND HAMBURGER. MIX WELL WITH GLOVED HANDS.
  • 2. SHAPE MEAT MIXTURE INTO 6 TO 8 PATTIES. IN A LARGE SKILLET BROWN PATTIES ON BOTH SIDES.
  • 3. POUR SOUP OVER PATTIES. TOP WITH BEANS, THEN PEPPERS AND COOK FOR 10-15 MINUTES OVER LOW HEAT WITH LID ON THE SKILLET. SPRINKLE CHEDDAR CHEESE OVER THE PATTIES AND PLACE LID OVER PATTIED AGAIN. SHUT OFF BURNER AND LET CHEESE MELT FOR 10 MINUTES. SERVE WITH SIDE SALAD AND TEXAS TOAST W/ GARLIC BUTTER.
  • 4. You could probably use chipolte peppers, or any kind of peppers besides sweet green peppers, and you could probably also use a shredded monteray jack/cheddar mix or a jalapeno cheddar as well. We just like it the way the recipe called for to begin with...all those years ago.

This is one of my husband's favorite dishes and I've been making this for about 45 years. I usually use a creamy chees like Velveeta but a white Mexican cheese would be good, too. 1 1/2 lb fresh ground beef
2 eggs beaten
1/2 finely chopped onion
1 pkg crushed ritz crackers
1/4 c each of ketchup & brown sugar
2 tsp worcestershire sauce
1/2 c diced greep pepper
1 c shredded cheese
2 can(s) cream of mushroom soup
can(s) pinto beans or kidney beans
1/4 tsp salt and pepper

Steps:

  • 1. Prepare the hamburger patties by mixing together the eggs, crushed crackers, ketchup, Worcestershire sauce, onions, brown sugar, salt and pepper. Make six patties. Brown the meat in a skillet over medium heat and check the bottoms often because they can burn easily since they contain brown sugar and ketchup.
  • 2. After they are browned on both sides, pour the mushroom soup over the burgers. Make sure the soup gets underneath the patties. Then sprinkle the pinto beans and green pepper over the top. Cover with a lid and let them simmer for about ten minutes over low heat.
  • 3. Sprinkle grated cheese over the top, cover it again and let it cook over low heat another five minutes until the cheese is melted. Then serve it up!

FIESTA BURGER

My favorite burger to date. This rub is enough for approx. eight burgers

Number Of Ingredients 10

freshly ground chuck
2 pasilla dried chile peppers
2 guajillo dried chile peppers
2 new mexico dried chile peppers
1 tsp apple cider vinegar
1 tsp liquid smoke flavoring
2 tsp worcestershire sauce
2 clove garlic
**cilantro, fresh
**olive oil

Steps:

  • 1. Remove seeds and stem from dried chiles. For the New Mexico ones, you can usually buy mild, hot, or very hot, your preference. I use mild since I'm going for heat in this particular recipe.
  • 2. Place chiles in food processor with garlic. Puree until both are ground up finely.
  • 3. Remove from processor and place in a small bowl. Now add apple cider vinegar, liquid smoke, Worcestershire sauce and enough olive oil to make it the consistency you like. Then chop cilantro and mix in. The amount of cilantro will also be your preference.
  • 4. Another tip to a great burger is grind your own beef if possible. I prefer chuck to make my burgers. Form patties and rub both sides with marinade. This will rub approx. 8 good size burgers.
