Spaghetti with Tuna, Lemon and Dill is a straight from the pantry meal full of vivid Mediterranean flavors. Ready in under 30 minutes, this is weeknight eating at its best.

3/4 lb spaghetti
4 Tbsp good quality extra virgin olive oil
juice and zest of 1 large lemon
2 5-ounce cans best quality tuna packed in water, drained (I didn't quite use all of the second can, that's up to you)
large handful of fresh dill fronds (chopped)
1/2 small red onion (peeled, halved, and thinly sliced)
1/2 cup Greek olives (pitted)
about 1/2 tsp red pepper flakes
freshly cracked black pepper

Steps:

  • Cook the pasta in lots of well salted boiling water according to the package directions until just al dente. As a general rule I taste the pasta a full 2 minutes before the cooking time on the package.
  • Put the rest of the ingredients in a large skillet. Break up the tuna with a fork into large chunks and heat gently on medium just until everything is hot.
  • Drain the pasta and add to the skillet, it's ok if a little cooking water comes along. Toss everything well and add a little more oil if needed.

8 ounces angel hair pasta
2 tablespoons flour
1 1/2 cups milk
1 tablespoon butter
1/2 cup white wine
2 tablespoons fat-free cream cheese
2 teaspoons lemon zest
1 1/2 teaspoons dried dill
1/4 teaspoon salt
1/8 teaspoon cayenne

Steps:

  • In a large saucepan filled with boiling water, cook pasta until firm. Drain.
  • Meanwhile, place flour in a small bowl. Gradually whisk in milk until mixture is smooth. In a medium saucepan, melt butter over medium heat.
  • Gradually stir milk mixture into saucepan. Cook over medium-low heat, stirring often, until sauce boils and thickens, about 3 minutes.
  • Gradually add wine, stirring constantly; if you add the wine too fast, the mixture will curdle. Whisk in cream cheese until smooth.
  • Stir in lemon zest, dill, salt and cayenne.
  • Transfer pasta to a large bowl. Pour on sauce; toss to coat. Serve hot.

1 (16 ounce) package small uncooked seashell pasta
1 ½ cups mayonnaise
½ cup milk
2 tablespoons pickle juice
2 teaspoons dried dill weed
1 teaspoon salt
⅛ teaspoon ground black pepper
2 (5 ounce) cans tuna packed in water, drained
½ cup chopped onion

Steps:

  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.

350g pasta shells
200g pack trimmed fine beans , cut into short lengths
200g can tuna in oil
grated zest of a lemon
1 heaped tbsp small capers
generous pinch of chilli flakes
olive oil for drizzling

Steps:

  • Cook the pasta in boiling salted water for 8 minutes. Add the beans and cook for a further 3 minutes until both the pasta and beans are just tender. Meanwhile, tip the tuna and its oil into a bowl and flake the fish, keeping the pieces quite large. Stir in the lemon zest, capers, chilli and plenty of salt and pepper.
  • Drain the pasta and beans, return them to the pan and toss with the tuna mixture. Add a little olive oil if you need to moisten everything. Serve the tuna and lemon pasta on its own or with a tomato and onion salad.

TUNA, LEMON, AND CAPER SAUCE

Number Of Ingredients 10

1 can (6 ounces) tuna (chunk or solid in olive oil), drained
1 large garlic clove, finely chopped
grated zest of 1 medium lemon
2 tablespoons fresh lemon juice
1/4 cup fruity olive oil
1/2 teaspoon salt, or to taste
freshly ground black pepper
2 tablespoons capers, drained
1/4 cup fresh flat-leaf parsley, chopped
freshly grated Parmesan cheese

Steps:

  • Place tuna in pasta serving bowl and break it into large bite-size pieces. Add garlic, lemon zest, lemon juice, olive oil, salt, pepper, and capers and stir gently to combine. Set aside to warm to room temperature, or preferably, place the bowl (be sure it's heatproof) over the pasta pot to warm the ingredients while heating the water. Once the water comes to a boil, remove bowl and set aside.
  • Cook pasta in large pot of boiling salted water until al dente. Drain pasta well and immediately add to sauce in bowl. Sprinkle with parsley and toss. Serve at once with Parmesan cheese. Pass the pepper mill.
  • Recommended pasta: 8 ounces penne rigate, medium shells (conchiglie rigate), rigatoni, or linguine.
