8 ounces uncooked linguine
1 bunch broccoli, cut into florets
2 tablespoons butter
2 garlic cloves, minced
2 cups heavy whipping cream
2 tablespoons lemon juice
1 pound fully cooked salmon, flaked
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Parmesan cheese
3 tablespoons minced fresh basil or 1 tablespoon dried basil
2 tablespoons capers, drained
2 teaspoons grated lemon zest

Steps:

  • Cook linguine according to package directions, adding broccoli during the last 5 minutes of cooking., Meanwhile, in a large skillet, heat butter over medium heat. Add garlic; cook and stir 1 minute. Stir in cream and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened, stirring constantly., Add salmon, salt and pepper; heat through. Drain linguine and broccoli; add to skillet. Stir in cheese, basil, capers and lemon zest.

200 g cooked small shell pasta, hot
4 teaspoons margarine
1 small onion, chopped
2 tablespoons all-purpose flour
1 cup 2% low-fat milk
1/3 cup fresh chives, chopped
1/2 teaspoon salt
1/4 teaspoon Tabasco sauce
2 (7 1/2 ounce) cans pink salmon (Do not drain)
2 tablespoons parmesan cheese, grated
2 teaspoons fresh tarragon (optional)
2 teaspoons poppy seeds (optional)

Steps:

  • In saucepan, melt margarine over medium heat; add onion and cook until tender.
  • Stir in flour; mix well.
  • Add milk and cook, whisking, until mixture comes to boil thickens and loses any raw-flour taste.
  • Stir in chives and pepper.
  • Add 1/4 cup of reserved cooking liquid.
  • Flake salmon and add along with juices and chive mixture to pot with linguine; mix lightly. (If too thick add remaining reserved cooking liquid.).
  • Sprinkle Parmesan cheese over each serving.

60 g butter
2 cloves garlic, finely chopped
2 shallots, finely chopped
200 ml white wine
200 ml double cream
1/2 grated lemon, zest of
2 tablespoons lemon juice
2 tablespoons chopped fresh chives
200 g smoked salmon, slices cut into strips
500 g pasta (eg. fettuccine, linquini, tagliatelle)
salt, black pepper
4 teaspoons salmon roe (optional)
1/4 cup chopped fresh flat leaf parsley

Steps:

  • Melt butter in a large frying pan over medium low heat.
  • Add shallots and garlic and cook, stirring occasionally, until soft, 5 minutes.
  • Add wine and simmer until reduced by half, 3 minutes.
  • Add cream, lemon zest and juice, chives and salmon.
  • Heat over medium low heat, without boiling, until hot through, 1 minute.
  • Add salt& pepper to taste.
  • Meanwhile, cook pasta, drain, reserving 1/2 cup pasta water.
  • Add pasta to the sauce.
  • Toss well to coat, adding reserved water as needed.
  • Stir through chopped parsley, if using.
  • Top with Salmon roe, if using.
  • Serve immediately.
