LINGUINE WITH SHRIMP AND CLAM SAUCE

My husband's favorite seafood dish. The sauce is thin and rich, but not creamy nor red. I use a can of diced clams, though the recipe originally calls for 2 dozen cherrystone or littleneck clams, shucked, reserving the liquid. It's up to you on which one you'd like to use.

6 1/2 ounces minced clams (canned)
water
1/2 lb medium shrimp
8 ounces linguine
1 tablespoon dry sherry
3 tablespoons butter
3 tablespoons olive oil
1 garlic clove, thinly sliced
2 tablespoons parsley, minced
salt

Steps:

  • Open clams, drain water and save, set clams aside. Let water stand to settle and sand or debris, then carefully pour into a measuring cup. Discard sand. Add water to liquid to give you 1 cup of liquid. Put aside.
  • Shell and devein shrimp, keep shells. Chop shrimp into small pieces.
  • In a saucepot, cook linguine as per instructions on package; drain. Return to pot and keep warm.
  • In the meantime, in a 2 quart saucepan over high heat, heat clam liquid, shrimp shells, and sherry to a boil. Reduce heat to low; cover pot and simmer for 5 minutes.
  • With a slotted spoon, remove shrimp shells and discard. Pour mixture into a bowl and set aside.
  • Into the same saucepan add butter olive oil, and garlic; cook over medium-low heat until garlic is lightly brown.
  • Stir in clam liquid mixture, clams, and shrimp. Heat to boiling over high heat, stirring occasionally.
  • Add parsley and cook 1 minute.
  • Add salt to taste, serve over linguine.

1 pound linguini pasta
¼ cup olive oil
¼ cup butter
2 (6.5 ounce) cans minced clams, drained with juice reserved
4 cloves crushed garlic
2 tablespoons chopped fresh parsley
salt and pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  • In a small saucepan over medium heat, warm oil, butter, reserved clam juice, garlic and parsley; stir and simmer for 5 minutes.
  • Add clams and salt and pepper to taste. Pour over pasta and toss with Parmesan cheese; serve.

1 pound Linguine ( I tend to use Linguine Fini)
1/2 cup dry white wine (use wine you would drink! Don't use gross wine to cook or you get gross food)
24 ounces (or so) worth of clams in clam juice (I buy 4 cans of Snow's Minced Clams which are 6 1/4 each) KEEP THE JUICE!
1 teaspoon parsley ( I use dried)
1 tablespoon minced garlic (less if it's overpowering to you or you don't bathe in garlic nightly as we do... keeps the vampires away. I can honestly say I've never been bitten)
1/4 cup chopped onion - I use frozen(optional... some folk aren't fans)
1/2 cup olive oil divided
1/2 tsp sea salt
1/2 tsp ground pepper

Steps:

  • 1. Boil water for Linguine with 1/4 cup of olive oil to keep pasta from sticking. Cook pasta according to package directions. 2. put remaining oil in skillet with minced garlic over medium heat. 3. Heat for about five minutes and add onions. 4. After another five minutes, or once garlic is golden and the moisture is goen (you'll see them get smaller), add clam juice and wine. 5. heat over medium heat for around 5 minutes as the juices bubble, add the clams. 6. Stir the clams into the juice then add the parsley, salt, and pepper. Simmer all of these together 10 minutes. 7. Remove from heat. 8. I like to toss the linguine with the sauce and then serve, but you can also serve pasta with sauce over it.

2 dozen clams shucked and diced, reserving liquid in a measuring cup (there should be about 1 1/3 cups of clams and 2 cups of liquid)
5 cups water
1 pound linguine, preferably fresh
1/3 cup olive oil
1 tablespoon minced garlic
1/3 cup dry white wine
1/2 teaspoon red pepper flakes or 1/8 teaspoon cayenne pepper
4 tablespoons unsalted butter
3 tablespoons minced parsley
Salt and freshly ground pepper to taste

Steps:

  • In a large saucepan heat water until it comes to a boil. Add 1 cup of the reserve clam liquid and salt to taste. Now add your linguine, bring the water back to a boil and cook for 8 to 10 minutes until tender, but still firm to the bite. Meanwhile, in a skillet heat olive oil and garlic, and cook, stirring until fragrant. Add remaining clam juice and white wine and reduce to 3/4 cup of liquid.
  • Bring liquid to a boil, add the clams, red pepper flakes and simmer 1 to 2 minutes, or until just cooked. Check your linguine, drain in a colander and transfer to a large serving dish. Add the butter, and toss to combine. Add the clam sauce and parsley and toss to combine. Season to taste with freshly ground pepper. Serve immediately.

1/4-1/2 c fresh chopped parsley
1/2 tsp black pepper
1/4 tsp kosher or sea salt
3 can(s) minced clams with juice(the 6 1/2 oz size)
1 Tbsp lemon juice

  • 1. Cook the linguine according to the directions on the package.
  • 2. While that is cooking heat oil in a medium frying pan.
  • 3. Add garlic to the hot oil and cook until lightly browned.

1/2 lb linguine
2 tablespoons butter
1/4 teaspoon red pepper flakes
2 garlic cloves, minced
1 shallot, minced
2 tablespoons flour
1 teaspoon oregano

20 ounces canned clams, undrained
1/2 cup white wine
1/4 cup heavy cream
1/3 cup parmesan cheese

Steps:

  • 20oz canned clams is equal to 2-10oz cans of chopped clams with juice.
  • Cook linguine as instructed. Drain.
  • Meanwhile melt butter in skillet. Add garlic, shallot and red pepper flakes. Sautee for 4 minutes until vegetables are cooked.
  • Add flour, oregano and parsley to mixture and stir until incorporated. Keep stirring for at least 1 minute.
  • Add clams with juice and wine. Stir constantly for 8minutes or until thickened.
  • Remove from heat.
  • Stir in cream and cook over low heat until well heated about 2 minutes.

I dozen little neck clams, scrubbed clean
2 tablespoons olive oil
4 cloves garlic
1/4 teaspoon red pepper flakes
3 tablespoons chopped parsley
1 cup white wine
12 ounces fresh linguine, cooked and drained

  • Place garlic on square of foil and drizzle with a little olive oil. Roast in a 400 degree oven for 20 minutes or until tender. Peel garlic and coarsely chop. Heat oil in a large pot and stir in garlic. Add pepper flakes and parsley. Pour in wine and bring to a simmer. Add clams and cover pot. Cook about 8 minutes or until clams are all open. You can chop the garlic if you like, but I prefer slices. They are mellower in flavor and become part of the texture of the dish. In most pasta dishes the idea is to make just enough sauce to coat the pasta lightly. When clam sauce is served with linguine, however, there should be a little extra broth. Other hard-shelled clams, such as Manila or butter clams, make a good substitute, but I love littleneck clams for this sauce. With this dish, as with many pasta dishes using long, thin pasta shapes, I prefer to cook the pasta very al dente and finish it in the sauce. It's a balancing act-determining when the pasta is ready and the sauce is the right consistency-but you can always hold the pasta or the sauce for a minute or two, while the other one catches up.

3 cups broccoli florets
36 littleneck clams
1 pound linguine
1/2 cup extra-virgin olive oil
6 cloves garlic, peeled and sliced
1/2 teaspoon crushed hot red pepper
1/4 cup chopped fresh Italian parsley

Steps:

  • Cook the broccoli in a large saucepan of boiling salted water just until it is softened a little bit, about 2 minutes. Drain it well and cool under cold running water. Drain completely, then chop the broccoli coarsely.
  • Scrub and shuck the clams according to the directions on page 7, reserving the liquid. Strain the liquid, chop the clams, and combine them with the liquid.
  • Bring 6 quarts of salted water to a boil in an 8-quart pot over high heat. Stir the linguine into the boiling water. Return to a boil, stirring frequently. Cook the pasta, semi-covered, stirring occasionally, until not quite done al dente, about 6 minutes.

  • If the skillet is large enough to accommodate the sauce and pasta, fish the pasta out of the boiling water with a large wire skimmer and drop it directly into the sauce in the skillet. If not, drain the pasta, return it to the pot, and pour in the sauce. Bring the sauce and pasta to a boil, stir in the parsley, and check the seasoning, adding salt and crushed red pepper if necessary. Cook, stirring, until the pasta is done and there is enough sauce to coat the pasta generously but still form a small pool in the bottom of the pan, 1 to 2 minutes. Divide the pasta among warmed bowls, spooning some of the sauce from the pan and drizzling some of the remaining olive oil over each serving.

1 tablespoon unsalted butter
8 -10 asparagus spears
6 -7 white mushrooms
1 medium zucchini
1/4 teaspoon salt

1 large tomatoes
2 tablespoons olive oil
1/8 tablespoon unsalted butter
1 medium onion
2 teaspoons fresh oregano
8 garlic cloves
1/2 cup dry white wine
1/2 teaspoon black pepper

1 lb pasta
2 tablespoons olive oil

Steps:

  • Shuck clams reserving the liquid. Remove the meat from clams and add to the liquid. Stir to remove sand and lift clams one at a time. Cut in half using scissors. Place in clean bowl. Let clam liquid rest then pour over the piece leaving behind the residue.
  • Vegetables:.
  • Heat oil and butter in skillet. Add all vegetables except tomato. Add salt and pepper. Saute over high heat for 2 minutes. Add tomato and toss lightly.
  • Clam Sauce:.
  • In a large skillet, heat olive oil and butter. Add onion and saute for 3 minutes. Add oregano and garlic. Cook for 30 seconds. Stir in juice of clams and wine. Boil gently for 7-8 minutes uncovered. Add clams and pepper allow to boil then set aside.
  • Pasta:.
  • Add tsp salt to boiling water. Add pasta and cook al dente. Scoop out 6oz of pasta liquid and add to clams. Drain pasta and transfer to bowl. Add oil, salt, pepper and 1 c juice from clam sauce. Mix well.
  • To serve:.
  • Arrange pasta on large serving dish. Spoon on clam sauce. Then arrange vegetables on top and garnish with parmesan cheese. Serve immediately.

about 2-3 Tbsp of extra virgin olive oil
3-5 fat garlic cloves
1 lb. of linguini
2-3 Tbsp of chopped flat leaf parsley
2 cans minced clams

  • start big pot of salted water for pasta, when it boils, add linguini or other pasta. Finely (or coarsely if you prefer) chop at least 3 cloves of garlic (more if you like). Use a small saucepan to fry the garlic gently in a few Tbsp of extra-virgin olive oil until golden, add 2 cans of minced clams, juice and all. Add chopped flat leaf parsely - about 2 Tbps or more if you like. Bring to a slow simmer while pasta is cooking. When pasta is done, drain and return to bowl, add all sauce or let guests fix their own with grated parmesean cheese

  • -Over a med-high heat, melt butter in large sauté pan. - Add garlic and sauté until translucent. -Add flour, stirring to create a roux, cook for about 30 seconds to avoid a raw flour taste to your sauce. -Slowly pour in the 1/2&1/2 stirring constantly to avoid lumps. -Mix in clams with liquid. -Add spices, bouillon and parsley. -Season with S&P to taste and add a splash of wine if using it -Continue to cook sauce to let flavors blend and heat through, just a minute or two. -Place cooked pasta in large bowl, pour sauce over pasta and toss slightly. - Garnish with cheese and parsley.

Gary stated that it was one of the best recipes they had ever featured on the show! I can attest that it is very good! Fast and easy, too!
