CLASSIC DAIQUIRI (& MORE LIME COCKTAILS!)
One of the most classic lime cocktails! This daiquiri recipe has the perfect balance of boozy, tart and sweet with rum, lime and sweetener.

Steps:
- Add the rum, lime juice, and syrup to a cocktail shaker. Fill it with ice and shake until cold.
- Strain into a cocktail glass. Serve garnished with a lime slice.

LIMEADE
Thanks to an abundance of limes in Jamaica, limeade is a common drink. Unsweetened bottled lime juice can be swapped instead of fresh for an even quicker limeade. From the book "Lucinda's Authentic Jamaican Kitchen," by Lucinda Scala Quinn (Wiley).

Steps:
- Roll the limes back and forth over the counter with the palm of your hand. Cut limes in half, and juice them by hand or with a juicer; reserve rinds. (You should have about 1/2 cup juice.) Transfer juice and rinds to a large pitcher.
- Bring 1 cup water to a boil in a small saucepan. Add sugar or honey, and stir until dissolved. Pour syrup into the pitcher, and add 4 cups water. Stir until well blended. Add more sugar or honey, if desired. Refrigerate 1 hour. Discard rinds. Serve limeade garnished with lime slices.
LIME SODA
Steps:
- In a small pot on medium heat dissolve sugar in water. Raise the heat, add the lime rind and bring to a boil. Lower the heat to a simmer and cook until slightly reduced. Remove from heat and discard the lime rinds. Stir in the food coloring and cool.
- Fill 4 glasses with ice and distribute the lime syrup and lime juice, to taste, into each glass. Top with seltzer and stir. Garnish with lime slices.
LEMON, LIME AND BITTERS
Supposedly the traditional drink at the 19th Hole in Australia, I think you're more likely to find this drink at a pub. Summery and simple, yet elegant and "special" enough for a special occasion.

Steps:
- Rim the inside of a glass with 5-6 dashes of Angostura aromatic bitters.
- Swirl until the glass is evenly coated with Angostura aromatic bitters then add ice.
- Fill glass with Lemon squash or solo and a shot of lime cordial and/or fresh lime juice. ( For a low-cal version fill glass with soda or use diet drinks).
- Garnish with a slice of lemon and/or lime.
BAKED DELICATA SQUASH WITH LIME BUTTER
My new favorite squash is Delicata, an heirloom squash happily being rediscovered. Look for them in the winter squash section of your grocery store. They're cream to pale yellow with green stripes, and their flesh is orange, slightly sweet and smooth but not stringy. My sister suggested the lime butter topping (my personal favorite), but a blend of maple syrup and butter is good, too. The squash usually aren't very big, so plan half a squash per person.

- Preheat oven to 350 degrees F (175 degrees C). Place the squash cut side down into a baking dish. Pour water into the dish to about 1/4 inch deep.
- Bake in preheated oven until the squash pierces easily with a fork, about 30 minutes.
- Meanwhile, blend the butter with the lime juice and chili powder in a small bowl. Mix in the lime zest, if desired. Season to taste with salt and pepper. Spoon the butter mixture into the cooked squash, and serve immediately.
