2 twists lime zest

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Whisk the extra-virgin olive oil, minced garlic, black pepper, cayenne pepper, salt, lime juice, and grated lime zest together in a bowl to make the marinade.
  • Place the mahi mahi fillets in the marinade and turn to coat; allow to marinate at least 15 minutes.
  • Cook on the preheated grill until the fish flakes easily with a fork and is lightly browned, 3 to 4 minutes per side.
  • Garnish with the twists of lime zest to serve.

  • Prepare an outdoor grill for medium-high heat.

¼ cup butter, softened
1 teaspoon finely minced jalapeno pepper
1 teaspoon lime juice
1 lime, zested

Steps:

  • Fill a large pot with water and place a sous vide immersion cooker into the water. Set temperature to 125 degrees F (52 degrees C) according to manufacturer's instructions.

Brush the mahi mahi or tuna steak with about one-third of the dressing and reserve the rest. Place the mahi mahi steaks on the grill, and cook to desired temperature, flipping only once. Brush mahi mahi steaks once again after flipping.

2 6-8 oz. mahi mahi fillets
Sea salt and pepper to taste
2 limes, juiced
3 tbsp. tamari soy sauce
2 in. fresh ginger root, grated
1 tbsp. olive oil
Lemon, cut into 4 slices

Steps:

  • Rinse fish, season with sea salt and pepper, and place in a shallow baking dish. Combine the lime juice, soy sauce, ginger, and olive oil in a small bowl and pour over fish. Turn over the mahi mahi in the marinade and let it sit in the fridge for 10-15 minutes. Preheat skillet on medium-high heat. Cook fish with marinade for 6-7 minutes per side or until fish is firm and opaque. Garnish with a slice of lemon.
