GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
HOLIDAY SALAD WREATH
This is a festive and flavorful salad that is perfect for the holidays and easy to assemble. Serve with your favorite dressing(s) on the side so that it can be made ahead of time without wilting. Lemon-thyme vinaigrette goes really well with this.

- Neatly arrange spinach in a 10- to 12-inch circle with leaf tips facing outward. Arrange arugula on top of spinach, leaving the outer tips of the spinach exposed. Scatter beets over the arugula. Arrange pieces of goat cheese around the wreath. Sprinkle pistachios on top. Season salad lightly with salt and pepper.

LIME HOLIDAY WREATH SALAD
Quick and easy to make.This make ahead salad graced my grandmas dining table every time we ate at her house. That was about twice a month and holidays. Sometimes we went to my Aunt's house- where we had fried chicken and mashed potatoes every time. When they came to our house we had meatloaf or spaghetti.

- Drain pineapple; heat pineapple juice to boiling. Add to lime jello; stir till jello is dissolved. Chill till partially set; add pineapple. cheese. pimento, celery, nuts and salt. Fold in cool whip. Place a row of sliced olives in bottom of 9-inch ring mold. Pour Jello mixture into mold; chill until firm, turn out onto plate when set.
