This recipe came from the August 2006 issue of Simple and Delicious. Instead of dried herbs I used fresh. I also used chicken breasts instead of a whole chicken. Quick, easy and very good.

1 cup lime juice
2/3 cup Italian salad dressing
2 teaspoons garlic, minced
2 tablespoons fresh basil, chopped
1 tablespoon fresh thyme, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
3 -4 lbs chicken breasts

Steps:

  • In a bowl, combine the first seven ingredients; mix well.
  • Pour over chicken.
  • Marinade for 15 minutes or overnight.
  • Grill chicken over medium heat for 40-45 minutes or until juices run clear.

4 boneless skinless chicken breast halves (5 ounces each)
2 tablespoons canola oil
1/2 cup white wine or chicken broth
1/4 cup lime juice
2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Flatten chicken to 1/2-in. thickness. In a large skillet, brown chicken in oil over medium-high heat. Add the remaining ingredients. Cook, uncovered, until chicken is no longer pink, 5-7 minutes.

If you are looking for a marinade that really brings your chicken alive and produces sweet and juicy flavorful meat then this 5 ingredient marinade is one you should add to your list. I found this recipe some time ago and it is delicious. I've since misplaced the site it came from so decided to enter it here to make sure that it's always available. ***As a tip you can slice the chicken breasts so that they cook faster and are easier to portion bases on the appetite of the person eating.

3 tablespoons soy sauce
1 tablespoon lime juice
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon chopped fresh garlic
4 large boneless chicken breasts

Steps:

  • Add soy sauce, lime juice, olive oil, honey, and garlic to a small bowl in that order (the olive oil will help the honey slide right out of the spoon). Whisk together thoroughly.
  • Place chicken in a large Ziploc bag and pour the marinade inches Marinate in the refrigerator for at least 30 minutes. Preferred time is 1-4 hours.
  • After marinating, grill chicken over high heat for about five minutes per side for slices or seven minutes per side for whole breasts, until cooked through.
  • Additional marinade can be made and then reduced down to serve over rice as a complimentary side to the grilled chicken.

8 boneless skinless chicken breast halves (4 ounces each)
1/2 cup lime juice
1/3 cup olive oil
4 green onions, chopped
4 garlic cloves, minced
3 tablespoons chopped fresh dill, divided
1/4 teaspoon pepper

Steps:

  • Pound with a meat mallet to 1/4-in. thickness. In a shallow dish, combine the lime juice, oil, onions, garlic, 2 tablespoons dill and pepper; add chicken. Turn to coat; refrigerate, covered, 2-4 hours. , Drain and discard marinade. Grill chicken, uncovered, over medium-hot heat for 6-7 minutes on each side, or until a thermometer reaches 165 °. Sprinkle with remaining 1 tablespoon dill.
