LIME-PEANUT RICE PILAF



Lime-Peanut Rice Pilaf image

This is a great side dish to any Thai or Asian meal. If you use the vegetable stock this is a great vegetarian side dish!

Number Of Ingredients 9

1 tablespoon butter
1 tablespoon oil
1/2 cup finely chopped onion
2 cups long grain white rice
1 cup chopped peanuts, divided
3 3/4 cups vegetable stock or 3 3/4 cups chicken stock
1/4 cup fresh lime juice
2 teaspoons lime zest
1/4 cup chopped fresh cilantro

Steps:

  • In a large sauce pan over medium heat melt butter and add oil.
  • Saute the onion for 8 minutes.
  • Add rice and stir to coat.
  • Add 1/2 cup peanuts, stock, lime juice, and lime zest.
  • Bring to a boil and stir to make sure nothing is stuck to the bottom of pot.
  • Cover and reduce heat to medium low.
  • Cool until rice is cooked and liquid absorbed, around 20 minuts.
  • Remove from heat and stir in the cilantro.
  • Cover and let stand 5 minutes.
  • Transfer rice to serving bowl and sprinkle with remaining nuts.

2 cups jasmine rice (13 oz)
2 cups water
1 cup reduced-sodium chicken broth
1/2 cup salted roasted peanuts (2 1/2 oz), finely chopped
2/3 cup thinly sliced scallion greens

Steps:

  • Wash rice in several changes of cold water in a bowl until water is almost clear, then drain rice well in a sieve. Bring rice, water, and broth to a boil in a 3- to 4-quart heavy saucepan, then reduce heat to low and cook, covered, until rice is tender and water is absorbed, 12 to 15 minutes. Remove from heat and let stand, covered, 5 minutes. Fluff with a fork, then stir in peanuts and scallion greens.

This is one of my favorite rice recipes. It goes great with just about anything! Try a ginger chicken main dish with it!

1 (14 ounce) can coconut milk
1 ¼ cups water
1 teaspoon white sugar
1 pinch salt
1 ½ cups jasmine rice

Steps:

  • Stir coconut milk, water, sugar, and salt together in a saucepan over medium heat until sugar dissolves. Add rice; bring to a boil, cover the saucepan, reduce heat to low, and simmer until rice is tender and liquid is absorbed, 18 to 20 minutes.
