250g couscous
grated zest of a lemon
2 x 20g packs fresh coriander
4 tbsp raisins
4 tbsp toasted pine nuts

Steps:

  • Prepare 250g couscous with boiling water or stock, according to the packet's instructions.
  • Add the lemon zest, fresh coriander, raisins and pine nuts. Season well and drizzle with plenty of olive oil. Goes really well with fish or lamb.

250 g israeli couscous or 250 g normal couscous
50 g coriander, chopped
1 lemon, zest of
1/4 cup olive oil
100 g nuts, toasted
salt and pepper

Steps:

  • Cook the couscous according to package directions.
  • Meanwhile, put the coriander and lemon zest in a bowl.
  • When the couscous is done, mix it with the coriander and lemon zest.
  • Add the olive oil and nuts and mix again.
  • Season with salt and pepper.
  • Serve immediately or chill if desired.
  • Squeeze a little lemon juice over the couscous just before serving.

2 limes, zest of
2 tablespoons coriander
1 cup couscous
3/4 cup chicken stock
1/4 cup lime juice

Steps:

  • Finely grate zest of the lime then squeeze the juice out.
  • Chop the coriander.
  • Boil the chicken stock and lime jiuce together.
  • Add couscous to stock.
  • Allow to sit 5 minutes then fluff with a fork.
  • Add zest and coriander and mix to combine.
  • Good hot or cold.

4 small whole mackerel , gutted and filleted
3 tbsp extra-virgin olive oil
grated zest and juice 1 lime , plus wedges to serve
1 bunch spring onions , finely sliced
2 tbsp harissa paste (more depending on taste)
140g couscous
500ml hot vegetable stock
3 tbsp chopped coriander , plus sprigs to serve

Steps:

  • Brush each fillet 2-3 times with a little of the olive oil and rub with the lime zest. Season and sprinkle with half the lime juice then marinate for 5 mins.
  • Heat the remaining olive oil in a large pan. Add half the onions and harissa, and stir over a medium heat for 2-3 mins. Stir in the couscous and toss to coat with the harissa. Add the hot stock, cover and remove from the heat. Stand for 5 mins, fluff with a fork and stir in the remaining spring onions, coriander, lime juice and some seasoning. Heat the grill.
  • Grill the mackerel for 3-4 mins on each side or until the flesh is opaque. Divide the couscous between 4 plates and slide a fillet on top. Serve with lime wedges.

75g 2 ½ oz pine nuts
50g dried apricots , chopped
bunch coriander leaves
4-5 tbsp raisins
zest and juice 1 lemon
5 tbsp olive oil

Steps:

  • Put the couscous in a medium-sized bowl, pour over the stock, cover with cling film, and leave to stand for 5 mins. Meanwhile, toast the pine nuts in a dry pan for a few mins, until pale golden.
  • Fluff up the couscous with a fork, add all the remaining ingredients and mix well to combine.
