This cocktail -- with its fresh orange juice, herb-infused Lillet, and vodka -- pairs wonderfully with our Shrimp Salad Canapes with Endive.

- Stir together Lillet, vodka, and juice in a pitcher. Pour into glasses filled halfway with ice, and serve.

- For each drink, pour 2/3 cup Lillet Blanc (or dry vermouth) into a wine glass with ice. Add 2 dashes orange bitters. Top with sparkling wine or seltzer and garnish with a slice of orange.

- Puree half of the lychees and all of the syrup in a blender until all lychees are liquefied. Strain through a fine mesh strainer, pressing down to get the most from the lychees into a clean pitcher; discard the fibrous solids. Add the Lillet, rosewater and bitters. Refrigerate to chill thoroughly, if needed.
- Pour into chilled flutes, martini, or fun juice glasses, and garnish with an orange twist or slice. Drink.

- WINE AND LILLET COCKTAIL Combine the very cold Lillet Blanc and Sancerre in a large chilled wine goblet. Flame the orange rind over the glass. Cook's Note: Squeeze the rind next to a match and the oil will spray out and ignite. That burnt residue of orange oil will flavor the cocktail. Drop the rind into the glass. Add ice and garnish with peach slices. LILLET AND CRANBERRY In a pitcher add orange wedges and sugar. Muddle until all of the juice has been extracted from the oranges. Add the cranberry juice and stir until the sugar is dissolved. Stir in the seltzer and lillet, and pour into glasses filled with ice.
