Crushed ice
4 ounces Lillet Blanc
4 ounces freshly squeezed orange juice
2 ounces orange-flavored soda water
2 orange slices, for garnish

Steps:

  • Add ice, Lillet, and orange juice to a cocktail shaker. Shake and strain into 2 glasses filled with ice. Top off each glass with 1-ounce of soda water and garnish with an orange slice.

For a bracing drink, Lillet -- an aperitif made with wine -- is shaken with basil, gin, orange juice, and tonic. It's served on the rocks, garnished with more basil, a cinnamon stick, and a cucumber spear.

1 cup ice, plus more for serving
1/2 cup Lillet Blanc
1 ounce (2 tablespoons) gin
2 tablespoons fresh orange juice
1/4 cup loosely packed fresh basil leaves, plus sprigs for garnish
Splash of tonic water
1 cucumber spear, for garnish
1 cinnamon stick, for garnish

Steps:

  • Put ice, Lillet, gin, orange juice, and basil in a cocktail shaker; shake well. Fill a glass with ice; strain mixture into glass. Add tonic water. Garnish with cucumber spear, cinnamon stick, and basil sprigs.

This easy large-format pitcher drink has savory mezcal, celery juice, fruity Lillet blanc, and lemon.

Yield Makes about 10 cocktails in a 2-quart pitcher

Number Of Ingredients 8

1⅓ cups chilled mezcal
1⅓ cups chilled Lillet blanc
⅔ cup chilled 1:1 simple syrup (see Note)
2¼ teaspoons celery bitters
¾ cup plus 2 tablespoons water
1⅓ cups fresh celery juice (from about 12 celery stalks)
1 cup fresh lemon juice
Garnish: Smoked sea salt and thinly sliced lemon wheels

Steps:

  • Up to 1 day before serving, make the batch. Pour chilled mezcal, chilled Lillet blanc, chilled simple syrup, celery bitters, and water into a 2-quart pitcher and stir to mix. Seal well, covering with plastic wrap if needed, and refrigerate.
  • Up to 2 hours before serving, prepare celery and lemon juices and stir into pitcher mix. Reseal and return to refrigerator if not serving immediately.
  • To serve, stir mixture well. Place a large ice cube in each rocks glass, then pour in cocktail and garnish with a small pinch of smoked salt and a lemon wheel, if desired.

ARINATO (LILLET AND MEZCAL COCKTAIL)

I created the Arinato to be a lighter stirred drink and to celebrate the more delicate sides of mezcal. I use the 80-proof Ilegal Joven; paired with floral fortified wines, it makes for an easy-sipper that proves how elegant mezcal can be.

1½ oz. mezcal, such as Ilegal Mezcal Joven
¾ oz. Lillet Blanc
½ oz. Dolin Dry Vermouth
¼ oz. Yellow Chartreuse
½ tsp. Luxardo Maraschino Liqueur
2 dashes Peychaud's Bitters
Grapefruit twist for garnish

Steps:

  • Add all the ingredients, except the grapefruit twist, to a mixing glass with ice and stir. Strain over a large ice cube in a rocks glass. Express the grapefruit twist over the drink and then rest the twist on the cube in the glass.

12 ounces Ruby Red grapefruit juice
6 ounces gin
6 edible flower blossoms (optional)

Steps:

  • Combine 6 ounces Lillet, 6 ounces grapefruit juice, 3 ounces gin, and ice in a cocktail shaker. Shake until well chilled. Strain and divide cocktail among 3 stemmed cocktail glasses, such as Champagne coupes. Repeat.
  • Garnish with flowers. Serve immediately.

3 ounces (6 tablespoons) Lillet Blanc, very cold
3 ounces (6 tablespoons) Sancerre wine, very cold
1 (2-inch by 1/2-inch) strip orange peel, white pith removed
Ice
1 white peach, sliced, for garnish

Steps:

  • Combine the very cold Lillet Blanc and Sancerre in a large chilled wine goblet. Flame the orange rind over the glass. Cook's Note: Squeeze the rind next to a match and the oil will spray out and ignite. That burnt residue of orange oil will flavor the cocktail. Drop the rind into the glass. Add ice and garnish with peach slices.;
