Crust:
1-1/2 c. flour
3 T. powdered sugar
1 c. margarine (chilled and cubed)
3/4 c. nuts
Filling:
8 oz. cream cheese
8 oz. Cool Whip
Topping:
1 pkg. unflavored gelatin
1/4 c. water
3 T. lemon juice
4 eggs, separated
1/4 c. sugar
6 oz. frozen guava concentrate, thawed
1/2 c. sugar

Steps:

  • Crust: Cut margarine into flour and sugar until crumbly. Add nuts. Press into 9x13 pan. Bake 15 - 20 min at 350-degrees. Cool. Filling: Beat cream cheese and Cool Whip until smooth. Spread over cooled crust. Topping: Dissolve gelatin in 1/4 c. water and set aside. Cook egg yolks, 1/2 c. sugar and guava concentrate until thick. Add gelatin and stir until dissolved. Cool, then add lemon juice. Beat egg whites and slowly add 1/4 c. sugar. Beat until stiff peaks form. Fold guava mixture into meringue and pour over cream cheese filling. Chill. Optional: may substitute lilikoi concentrate for guava.

I haven't tried this yet but it sounds delicious. I found it on an advertisement from a community development group. There's an optional glaze recipe at the bottom. This recipe didn't give prep & baking times so the times are estimates looking at the instructions.Saving it here to try as soon as I can find some lilikoi juice..

1/2 lb unsalted butter (room temperature)
1/2 cup granulated sugar
2 cups flour
1/4 teaspoon kosher salt
6 large eggs (room temperature)
3 cups granulated sugar
1 tablespoon grated lemon zest (2-3 lemons)
1 cup lilikoi juice (freshly squeezed or frozen)
1 cup flour
powdered sugar, for dusting

Steps:

  • Preheat oven to 350 degrees.
  • Using an electric mixer, cream butter and sugar until light and fluffy.
  • Combine flour and salt. Using the mixer set to low, add to butter until just mixed.
  • Dump dough onto a well-floured board and gather into a ball. Flatten the dough into a 9 x 13 inch baking sheet with your hands. Chill for 30 minutes. Bake 15-20 minutes, until lightly browned. Cool.
  • FOR FILLING, whisk together eggs, sugar, zest, lilikoi juice and flour. Pour over the cooled crust and bake 25 to 30 minutes until the filling is set. Cool to room temperature. Cut into squares or triangles and dust with powdered sugar.
  • OPTIONAL GLAZE: 1/4 c water, 1/2 c granulated sugar, 1/4 c lilikoi fruit juice (about 6 lilikoi), and Juice of 1/4 lemon. Boil the water and sugar in a saucepan over medium heat for 5 minutes. Add passion fruit and lemon juice and boil for a further 3 minutes. It will boil rapidly and looks like it expanded. Remove from heat and allow to cool. It will turn into a thick and sugary passion fruit syrup. Allow to cool and drizzle over lilikoi bars.
  • IF YOU WANT TO MAKE IT INTO CUPCAKES: Use cupcake liners in cupcake pan. Fill each 1/2-3/4 full with batter. Bake the cupcakes at the same temperature called for in the cake recipe, but reduce the baking time by one-third to one-half (cupcakes usually bake for 15-20 minutes). Check for doneness with a wooden toothpick. It should come out clean. Let cupcakes cool in the pan for 5-10 minutes, then remove and cool completely on a wire rack.

For the shortbread base:
10 tbsn. unsalted butter, room temperature
2 tbsn. powdered sugar
2 tbsn. sugar
1 1/4 cups flour
For the lemon curd topping:
4 large egg yolks
3/4 cup sugar
1/2 cup passion fruit puree
4 tbsn. unsalted butter, room temperature
2 tbsn. powdered sugar, for dusting

Steps:

  • To make the base, place a rack in the middle of the oven and preheat to 325 F. In the bowl of an electric mixer, whisk together the sugars, then add the butter and cream until light and fluffy. Add half of the flour, mix to combine, then add the rest and combine until mostly incorporated (it will still look a bit crumbly). Pat the dough into a greased 8x8" pan and use a fork to prick it all over. Bake for 30 - 40 minutes or until the edges are lightly browned and the top is pale golden but not brown. Set aside. To make the passionfruit curd topping, set up a strainer on top of a bowl; set aside. in a heavy saucepan, beat the egg yolks and sugar until well blended. Stir in the passionfruit puree, butter and salt. Cook over medium-low heat, stirring constantly, for about 10 minutes until thickened and resembles a hollandaise sauce. It should thickly coat the back of a wooden spoon but still be liquid enough to pour - a candy thermometer should read 196 degrees. Do not allow it to boil or else it will curdle. Once thickened, pour the mixture through the strainer to remove any coarse residues. Lower the temperature of the oven to 300 F. Pour the passionfruit curd over the shortbread base and bake for 10 minutes. Once baked, cool the bars until completely cooled, then refrigerate the bars for 30 minutes or longer before cutting it into bars. Once cut, dust some powdered sugar on top and enjoy!
