3 ounces uncooked fettuccine
1/2 cup 1% cottage cheese
3 tablespoons evaporated milk
1 tablespoon butter-flavored sprinkles
1 garlic clove, minced
2 tablespoons grated Parmesan cheese
2 teaspoons minced fresh parsley
1/8 teaspoon coarsely ground pepper
3/4 cup cubed cooked chicken breast
2 tablespoons chopped sun-dried tomatoes (not packed in oil)
1 tablespoon sliced ripe olives

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a small food processor, combine the cottage cheese, milk, butter sprinkles and garlic; cover and process until smooth. , Transfer to a microwave-safe bowl. Stir in the Parmesan cheese, parsley and pepper. Add the chicken, tomatoes and olives. Cover and microwave on high for 2-3 minutes or until heated through. Drain fettuccine; serve with chicken mixture.

When I ran across Chef #55221's recipe for Recipe #155375, I thought it sounded like something my family would love. Being on a "lower fat" diet, there was no way I could make it as written though. I was really pleased with how well the recipe modified to meet my dietary needs. It was still rich and delicious, and everyone loved it. Here is my lightened up version.

1/4 cup chopped sweet onion
3 large garlic cloves, minced (1/2 Tbls)
1 tablespoon olive oil
1/4 cup light butter
3/4 cup flour, divided
4 cups chicken broth
1 quart fat-free half-and-half
1 1/2 cups reduced-fat parmesan cheese, cheese topping
2 cups water
16 ounces broccoli florets, prepared
3 cups boneless chicken breasts, cooked and diced
1/4 teaspoon white pepper (to taste)
1 teaspoon salt (to taste)
1 dash nutmeg (optional)
6 ounces farfelle bow tie pasta, cooked according to package directions

Steps:

  • In a heavy stockpot over medium heat, sauté onion and garlic in olive oil for 2-3 minutes. Add light butter and 1/4 cup flour and cook, stirring, for another 2-3 minutes until bubbly. Add remaining 1/2 cup of flour to a small amount of chicken broth and stir to remove lumps. Gradually whisk in flour and broth combo, plus remaining chicken broth and half & half; cook, stirring frequently, until thickened.
  • Meanwhile, steam broccoli (I use the steamer bag in the microwave) or cook broccoli in a separate pan with 2 cups of water just until form and not soft. Remove from heat and do not drain cooking water from broccoli.
  • Add Parmesan cheese topping to soup-base in stockpot; cook over low heat, stirring, just until cheese is melted; add steamed broccoli and 2 cups of water (or cooked broccoli along with its cooking water), chicken, seasonings, and bow tie pasta to the stockpot; heat through.

Light(Er) Cajun Chicken Alfredo image

This is my trimmed and more diet friendly version of Cajun Chicken Alfredo. A few simple substitutions make a creamy favorite something for the one on the diet to enjoy as much as the one who just wants flavorful creamy spicy pasta. I adapted this recipe from one by Guy Fieri. Now this would still be a bit of a treat but it is about 400 calories lighter per serving than it's full fat relative.

3 boneless skinless chicken breasts (1lb)
1 (350 g) package fresh linguine
1/4 cup blackening seasoning (or Cajun seasoning)
2 tablespoons extra virgin olive oil
1/2 cup green onion
2 1/2 cups light cream
1/2 cup sun-dried tomato, chopped coarsely (not packed in oil)
2 tablespoons garlic, minced (or 2 tsp garlic powder)
1/4 cup chicken broth
1/3 cup parmesan cheese, shredded

Steps:

  • Place chicken and blackening spice or Cajun spice in a bag and toss to coat.
  • In a non-stick pan over medium high heat, cook chicken until blackened on the outside (blackening spice will turn black, Cajun will not, if you are using cajun spice just cook chicken as you normally would) There will be fumes from the blackening spice, you may want to turn on a fan. The chicken is also wonderful done on the BBQ and the fumes are better if outside.
  • Remove chicken and slice into bite sized pieces (if it is still a bit pink in the middle do not worry, it will cook more in the next step) and add back into the pan.
  • Reduce heat add garlic and sun-dried tomatoes and saute until garlic starts to brown. De-glaze the pan with the wine.
  • Add cream, bring to just about a boil and simmer until sauce begins to thicken, coaxing it along by adding the Parmesan.
  • Stir in linguine and green onions or chives.

Light, Low-Fat Chicken Broccoli Alfredo image

Delicious, low in fat, high in protein and calcium.

1.5 tsp olive oil
1 TBSP whole wheat flour
1tsp chopped garlic
2.5 C skim milk
2 oz fat free cream cheese
2 C frozen broccoli
dash of salt
dash of nutmeg
dash of garlic salt
.5 C Kraft 2% Italian Cheese Blend
2 packages Tyson fajita chicken strips (6 oz each)
Optional: 1 tsp Xanthan Gum Powder (Thickens sauce without adding calories. Substitute 2 tsp Xanthan Gum for the flour and olive oil to decrease calories and fat in this recipe.)

Steps:

  • Place flour, olive oil and garlic in saucepan over medium heat. Stir until a thick paste forms.2. Gradually stir in milk, whisking to combine with flour paste. Heat until all lumps are gone.3. Add Italian cheese and fat free cream cheese. Stir constantly and heat until cheese is completely melted. Add a dash of salt, nutmeg and garlic salt to taste. To make the sauce really smooth, blend with an immersible hand mixer.4. Heat chicken strips and broccoli in microwave, then add to sauce. Stir to combine.5.
