- Preheat oven to 325°F, with rack in center. Line a baking sheet with parchment paper. Place butter, confectioners' sugar, vanilla, flour, and salt in large mixing bowl. Stir well with a wooden spoon until mixture is combined but not too creamy. Stir in dried apricots. Turn out dough onto a piece of plastic wrap and mold into a log, 2 inches in diameter. Refrigerate 1 hour. Slice cookies to 1/4-inch thickness and bake 13 to 15 minutes or until done, allowing cookies to cool before enjoying.

- Combine the plain flour, corn flour, pudding powder and baking powder and sift through a sieve. Set aside. In a large mixing bowl, use an electric mixer to beat the butter and icing sugar until fluffy and pale. Mix in the vanilla extract. Sift in the flour mixture. Beat at low speed with an electric mixer. Remember to scrape down the sides of the bowl with a spatula. Lightly knead into a dough. Wrap with a plastic film and roll into a tube in 1 1/2-inch thickness. Wrap it up and refrigerate for about 15 to 20 minutes, or until it's workable. Preheat oven to 350°F. Line two baking trays with baking paper. Remove the dough from refrigerator. Slice into 1/4 inch-thick portions. Place each portion in single layer on the lined trays, each at least 1/2 inch apart. Use a lightly greased fork to gently press the small dough. Bake in preheated oven, for about 15 minutes, or until lightly brown. Remove from oven and let them sit for 5 minutes. Transfer to a wire rack until completely cooled down.

- Whisk together flour and salt in a bowl. Beat butter and sugar in separate bowl with an electric mixer until very pale and fluffy, about 4 minutes, then beat in egg and both extracts. At low speed, beat in flour mixture just until a dough forms. Wrap dough in plastic and chill until firm, about 1 hour. Preheat oven to 350°F with racks in the top and bottom thirds. Line 2 large baking sheets with parchment paper. Pinch off heaping teaspoon-size balls of dough and roll into balls. Place balls on the prepared baking sheets, about 2 inches apart and flatten slightly with the palm of your hand. Bake until puffed, but not browned, about 8 minutes. Remove baking sheets from oven and carefully make a small crater in the middle of each cookie using a teaspoon-size measuring spoon. Fill each crater with ¼ to ½ teaspoon preserves and sprinkle a couple of slivered almonds in preserves. Continue to bake cookies until golden brown on bottom and edges, about 8 minutes more. Cool cookies on baking sheets 5 minutes and then transfer to racks and cool completely. (These cookies can be prepared up to 3 days ahead. Store in an airtight container at room temperature).
