Number Of Ingredients 17

1 cup packed brown sugar
1 cup sugar
1 cup butter, softened
3 large eggs
2 tablespoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
3 tablespoons buttermilk
FILLING:
1 tablespoon cornstarch
3 tablespoons all-purpose flour
1 cup packed brown sugar
2 cups boiling water
1-1/2 cup seedless raisins

Steps:

  • In a large bowl, cream sugars and butter. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt and nutmeg; add to creamed mixture alternately with buttermilk. Cover and refrigerate until easy to handle. , For filling, in a saucepan, combine the cornstarch, flour and brown sugar. Stir in water until smooth. Add raisins. Bring to a boil over medium heat; cook and stir and cook for 3 minutes or until thickened. Cool. , On a floured surface, roll out dough into 1/8-in. thickness. Cut with floured 3-in.-round cookie cutters. Spoon 2 teaspoons filling on top of half the circles and top each with another circle. Pinch edges together and cut slit in top. , Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-13 minutes or until lightly browned. Remove to wire racks to cool.

1 cup sugar
1/2 cup shortening
3 1/2 cups flour
1 large egg
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup buttermilk
1 teaspoon vanilla
1/2 cup sugar
1 cup raisins, ground
1 tablespoon cornstarch
1/2 cup water
1/4 teaspoon salt
1/2 cup chopped nutmeats

Steps:

  • Cook filling: Place the 1/2 cup sugar and 1 cup ground raisins in food processor.
  • Add cornstarch, 1/2 cup water and salt.
  • When cooked and thick, add nuts.
  • To make dough, combine rest of ingredients to a soft dough.
  • Roll out thin.
  • Cut with cookie cutter.
  • Put teaspoon of filling on one cookie and then top with another cookie. Pinch edges together.
  • Bake in moderate oven at 350 degrees Fahrenheit for about 10 minutes or until browned.

2 cups raisins, chopped
2/3 cup sugar
2/3 cup water
1 tablespoon lemon juice
1 tablespoon butter
1 cup sugar
1 cup butter
1 egg, beaten
3 cups sifted flour
3 teaspoons baking powder
1/4 teaspoon salt
1/3 cup milk
2 teaspoons vanilla

Steps:

  • Filling:.
  • Cook raisins with sugar and water for 10 to 15 minutes, or until thick, stirring occasionally.
  • Remove from heat and add lemon juice and butter.
  • Let cool while preparing dough.
  • Cookie Dough:.
  • Cream sugar and butter; add egg and mix well.
  • Combine flour, baking powder, and salt, and add alternately to sugar mixture with milk and vanilla extract.
  • Roll out a portion of the dough to 1/8-inch thickness and cut into rounds with a biscuit cutter.
  • Place a teaspoonful of filling on the center of a round, then cover with another round and press edges together.
  • Bake at 350 degrees F until golden brown (10 to 15 minutes).

1/2 cup sugar
1 cup raisins or 1 cup dates, chopped
1 cup shortening
3 cups brown sugar
3 eggs
1 teaspoon vanilla
3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup walnuts

Steps:

  • Cook the water, sugar, and raisins or dates together, stirring constantly as it burns.
  • Cook until thick; cool.
  • Cream shortening and brown sugar together; add eggs, one at a time.
  • Add vanilla.
  • Sift flour, salt, baking soda, cinnamon together; add walnuts.
  • Add to creamed mixture.
  • Pat or roll out on wax paper or towel to 1/2 inch thick.
  • Spread date mixture over it, roll up and store in refrigerator.
  • Slice and bake as needed.
  • No time or temperature was given for baking; I am guessing 325 degrees Fahrenheit for 20 minutes.

These cookies are my husband's favorite and are a must-have on four-wheeling trips because his grandma used to bring an ice-cream bucket full of them when they went out for a ride in the hills. I've tried other recipes I found on line, and they weren't what he remembered, so I finally tracked down Grandmas recipe and it's great. The vinegar in the filling gives it a tang rather than syrupy sweetness, and the cookie crisps up nicely.

1 lb raisins, washed and ground
1 dash salt
1 cup sugar
1/2 teaspoon nutmeg
2 tablespoons vinegar
1/4 cup butter
4 teaspoons cornstarch, dissolved in
1/2 cup water
1 1/2 cups shortening
1 1/2 cups sugar
2 eggs, beaten
1 teaspoon salt
1 teaspoon vanilla extract (lemon or almond could be used)
3/4 cup milk
1/2 teaspoon nutmeg
5 cups all-purpose flour

Steps:

  • For filling, mix raisins, salt, sugar, nutmeg, and vinegar in a sauce pan. Put on to boil and when boiling, add cornstarch dissolved in water. After it comes to a full boil again, remove from heat and set aside to cool.
  • For dough, cream the shortening, sugar, and eggs, and then add the salt, extract, milk, and nutmeg. Add enough flour (about 5 cups) to make the dough easy to handle.
  • Roll dough on a floured surface to a thickness similar to pie crust (about 1/8 inch). Use a cookie cutter to cut circles about 3 inches across. Drop a teaspoon of filling on a circle and cover with another, pressing out all air and press around the edges to seal.
  • Optional: Brush top surface with milk and sprinkle with granulated sugar.
  • Place on a cookie sheet and bake at 350 F for 18-20 minutes.

A delicious raisin filled cookie that is so delicious and you will go crazy over the raisin filling! It's so good!

Raisin Filling:
2 cups raisins
1 cup water (to cover raisins)
1/2 cup sugar
2 tablespoons butter
1/2 teaspoon vanilla
pinch of salt
pinch of nutmeg
2 tablespoons flour
1/4 cup water
Cookie dough:
1/2 cup butter, softened to room temp
1/8 cup butter shortening
1 teaspoon vanilla
1 cup sugar
1 egg, beaten
3 cups flour
3 teaspoons baking powder
3/4 teaspoon salt
1/2 cup milk
Frosting Glaze:
2 tablespoons butter, melted
1 1/4 cups powdered sugar
1 1/2 tablespoons milk
1 teaspoon vanilla

Steps:

  • Raisin filling:
  • Put raisins in a pan and cover with water. Boil for 5 minutes.
  • Mix together sugar, butter, vanilla, salt, nutmeg, flour, and 1/4 cup water. Add to the raisin mixture and turn the heat down to low setting. Stir and cook until it thickens - about 5 to 7 minutes.
  • Set aside to cool while you make the cookie dough.
  • Cookie Dough:
  • Combine softened butter, shortening, vanilla, and sugar. Add in egg.
  • Stir flour, salt, and baking powder together in another bowl. Add dry mixture to the butter mixture and add milk. Stir in well.
  • Chill dough for about 10 to 15 minutes.
  • Roll dough about 1/8 inch thick.
  • Cut into circles with a 3 inch round cookie cutter. You could also use the top of a glass that is 3 inches in diameter.
  • Place cookie dough circle on an ungreased cookie sheet. Place a tablespoon of raisin filling in the center of the cookie. Top with a second cookie and seal the edges with a fork.
  • Bake at 375 for 10 to 12 minutes or until very lightly browned.
  • Glaze:
  • When cookies are cooled mix together the melted butter, powdered sugar, milk, and vanilla.
  • Frost the tops of each cookie.

⅓ cup white sugar
⅓ cup water
1 cup raisins
1 ½ teaspoons butter
1 pinch salt
2 ¼ cups sifted all-purpose flour
¼ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon ground cloves
¼ teaspoon salt
2 teaspoons baking powder
½ cup shortening
1 cup white sugar
2 eggs
½ teaspoon vanilla extract
1 tablespoon milk

Steps:

  • In a small saucepan, over medium heat, combine the 1/3 cup of sugar, water, raisins, butter and pinch of salt. Bring ingredients to a boil, and cook until thick, you should be able to see the bottom of the pan while stirring when finished. Remove from heat and set aside to cool.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Sift together the flour, cinnamon, allspice, cloves, salt and baking powder, set aside. In a medium bowl, cream shortening and sugar until smooth. Stir in the eggs and vanilla. Add dry ingredients, mix until blended, then finally stir in the milk.
  • On a lightly floured surface, roll the dough out to 1/4 to 1/8 inch thickness. Cut into 2 1/2 inch circles. Place a teaspoon of filling onto the center of half of the cookies. Cover with the other half of the cookies. Press the edges together with the tines of a fork. Sprinkle with sugar and bake on unprepared cookie sheets for 10 to 12 minutes in the preheated oven.
