BROWN LENTIL SALAD

1 1/2 cups dry brown lentils
1 yellow onion, peeled, cut in half and stuck with 2 cloves
1 bay leaf
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1 small bulb fennel, minced
6 radishes, minced
1 green pepper, minced
1 carrot, peeled and minced
1 large red onion, minced
2 cloves garlic, minced or pureed
3 tablespoons sherry vinegar
1 teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
1 bunch fresh oregano, chopped

Steps:

  • Rinse and drain lentils. Place in medium heavy saucepan and add onion halves (with cloves), bay leaf, and enough water to cover by an inch. Bring to the boil, reduce to barely a simmer, cover and cook 20 minutes. Add salt and pepper, and a little more water if none is visible when you tilt the pan, and cook another 1020 minutes until lentils are creamy inside but still intact. Drain and remove onions and bay leaf. Let cool.
  • Mix lentils in a bowl with fennel, radishes, green pepper, carrot, onion and garlic. Make vinaigrette by whisking together vinegar and mustard in small bowl, then gradually drizzling in olive oil while whisking until an emulsion is formed. Pour vinaigrette over lentils and vegetables, add oregano, and stir well. Taste and adjust seasoning if necessary. Serve at room temperature.

1 lb brown lentils
1 small onion, halved
1 large garlic clove, halved
1 bay leaf
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 cup red wine vinegar
1/4 cup extra virgin olive oil
2 teaspoons Dijon mustard
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 cup finely chopped fresh parsley leaves
1 teaspoon finely chopped fresh thyme leave
6 slices thick-sliced bacon, cooked and chopped

Steps:

  • Pick over lentils, rinse and drain.
  • Place the lentils along with the onion, garlic, bay leaf and salt into a large 6-quart saucepan and cover with water by 2-3 inches.
  • Place over high heat and bring just to a rolling boil.
  • Reduce the heat to low.
  • cover and simmer until the lentils are tender, approximately 25 to 30 minutes.
  • Drain any remaining liquid and discard the onion, garlic and bay leaf.
  • Stir in black pepper and taste for salt.
  • Whisk the vinegar, olive oil, mustard, salt, pepper, parsley and thyme together in a large mixing bowl.
  • Add the warm lentils and bacon and stir to combine.
  • Serve warm or at room temperature.

2 tablespoons olive oil
1 cup onion (chopped finely)
1/2 cup carrot (chopped finely)
1/2 cup celery (chopped finely)
2 teaspoons kosher salt
1 lb lentils (culled & rinsed)
1 cup tomatoes (peeled & cubed)
1 quart chicken broth
1 quart vegetable broth
1/2 teaspoon coriander (ground)
1/2 teaspoon cumin (ground)
1/2 teaspoon grains of paradise (ground)

Steps:

  • with salt, sweat the onion, carrot, and celery in hot olive oil.
  • add the broth, tomatoes, lentils and seasonings.
  • bring to a boil.
  • reduce heat and cover, cooking about 35-45 minutes.
  • blend if desired (I do not blend).

This recipe comes to me by way of "Olive Trees and Honey" by Gil Marks, a beautiful vegetarian world-view cookbook. See the bottom of the recipe, in the last few numbered steps, for the various traditions. The first version is Sephardic, a Jewish/Spanish variation, and is called "Salata de Lentejas."

1 lb about 2 1/4 cups brown lentils or 1 lb green lentil, picked over and rinsed
8 cups water
1 bay leaf
1/3 cup fresh lemon juice or 1/3 cup red wine vinegar
1/3 cup fresh parsley or 1/3 cup cilantro, chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1 -2 garlic clove, minced (optional)
1/2 teaspoon ground cumin (optional)
2/3 cup extra virgin olive oil
1 red onions, chopped or 4 -6 scallions, sliced
1 large tomatoes, chopped

Steps:

  • Combine the lentils, water and bay leaf in a large saucepan. Bring to a boil, cover, and reduce heat to a simmer. Cook until tender, 20-30 minutes.
  • While lentils cook, make the dressing: mix all ingredients except oil. Slowly add the oil while constantly whisking, to create an emulsion.
  • Drain lentils, and while warm transfer lentils to a large bowl. Drizzle dressing over lentils, and toss gently to coat.
  • Just prior to serving, add onion and tomato.
  • Ethiopian Variation (Yemiser Selatta): Heat 3 tablespoons vegetable oil in a large skillet over medium heat, add 2 chopped red or yellow onions and 2-4 seeded and minced hot chile peppers, and saute until softened. Add to the salad.
  • Greek Variation (Salata Faki): Add 3/4 to 1 1/2 cups crumbled feta cheese, 1/3 cup chopped green olives, and 2 tablespoons chopped fresh spearmint.
  • Yemenite Variation (Salata Adas): Add 1 cup tahini and increase the lemon juice to 1 cup and the parsley to 2 cups. Using a large mortar and pestle, potato masher, or a food processor, mash the combined salad into a paste.

2 tablespoons olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1/2 cup finely chopped celery
2 teaspoons kosher salt
1 pound lentils, picked and rinsed
1 cup peeled and chopped tomatoes
2 quarts chicken or vegetable broth
1/2 teaspoon freshly ground coriander
1/2 teaspoon freshly ground toasted cumin
1/2 teaspoon freshly ground grains of paradise

Steps:

  • Place the olive oil into a large 6-quart Dutch oven and set over medium heat. Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6 to 7 minutes. Add the lentils, tomatoes, broth, coriander, cumin and grains of paradise and stir to combine. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes. Using a stick blender, puree to your preferred consistency. Serve immediately.
