One of the best vegetable soups I've had in ages! Extremely easy to make and very cheap (leave out the saffron if you don't already have any)! This lemony, peppery soup is traditionally enjoyed at the end of a day of fasting during the Muslim holy month of Ramadan. This is a vegetarian version of the thick and aromatic soup. 2 tablespoons butter
2 onions, chopped
1 celery rib, chopped
1 teaspoon ground cinnamon
1/2 teaspoon turmeric
1/2 teaspoon salt (or to taste)
1/2 teaspoon ground pepper (or more to taste)
1/4 teaspoon ground ginger
1/4 teaspoon hot pepper sauce
1 pinch saffron (large pinch, crumbled)
1 (28 ounce) can diced tomatoes, pureed
1 cup brown lentils
1 (19 ounce) can chickpeas, drained
4 cups vegetable broth
1/4 cup vermicelli, broken (or orzo or other small pasta)
2 tablespoons flour
1/2 cup fresh parsley
1/2 cup fresh cilantro
1/4 cup lemon juice

Steps:

  • In large heavy saucepan or dutch oven, melt butter over medium heat. Stir in onion and celery and cook, covered, for 7-10 minutes or until onion is tender, stirring occasionally.
  • Add cinnamon, turmeric, salt, pepper, ginger, hot pepper sauce and saffron. Cook, stirring, for 2 minutes. Add tomatoes, lentils, chickpeas and broth. Bring to boil, reduce heat, and simmer, covered, for about 40 minutes or until lentils are tender.
  • Stir in noodles and simmer, covered, about 7 minutes longer or until noddles are just tender. In bowl, whisk flour, and 1 cup water until smooth. Whisk flour mixture into soup and simmer, stirring often, for 2-4 minutes or until soup is thickened and no raw flour taste remains.
  • Stir in half of the parsley and cilantro, and all of the lemon juice. Taste and adjust seasoning, adding up to 1/2 tsp more salt if needed. Garnish with remaining parsley and cilantro.

The wonderful traditional Moroccan cinnamon-spice combination is lovely with the ground lamb and sweet potatoes, and the chopped apricots or cranberries add a surprising tart sweetness with every few bites. Whenever I make this recipe, I make a double (or triple!) batch and freeze a few portions.

1 pound ground lamb
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon kosher salt
½ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
¼ teaspoon ground turmeric
⅛ teaspoon curry powder
1 tablespoon butter
1 sweet onion, chopped
2 (10.5 ounce) cans beef consomme
1 (14.5 ounce) can diced tomatoes with juice
1 (14 ounce) can organic beef broth
1 (14 ounce) can organic chicken broth
1 tablespoon honey
3 large carrots, halved lengthwise and thinly sliced
2 sweet potatoes, peeled and diced
1 (15 ounce) can garbanzo beans, rinsed and drained
1 cup lentils, rinsed and drained
½ cup chopped dried apricots
⅛ teaspoon cayenne pepper, or to taste
1 pinch ground black pepper to taste

Steps:

  • Mix ground lamb, cinnamon, cumin, salt, ginger, cloves, nutmeg, turmeric, and curry powder together in a bowl. Cover and put in the refrigerator for 2 hours to overnight.
  • Melt butter in a soup pot over medium-high heat; stir in onion. Cook, stirring frequently, until the onion has softened and turned translucent, 5 to 10 minutes. Reduce heat to medium and add spiced lamb mixture. Cook and stir until browned and crumbly, 5 to 7 minutes.
  • Add consomme, diced tomatoes, beef broth, chicken broth, and honey. Stir in carrots, sweet potatoes, garbanzo beans, lentils, apricots, cayenne pepper, and black pepper.
  • Bring soup just to a boil over medium-high heat, then reduce heat to low, and simmer until lentils and vegetables are tender, 15 to 20 minutes.

Nabbed this from a Whole Foods recipe. Very good especially with the chamoula (separate recipe). This is very chunky, if you want a thin soup add more veggie broth, if you want a thicker soup take some of the chickpeas and lentils and puree them in a blender, then add them back into the soup.

4 tablespoons extra virgin olive oil
1 medium white onion, chopped (about 1 cup)
1 medium red onion, chopped (about 1 cup)
1 fennel bulb, peeled, cored and chopped (about 1 cup)
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1 pinch saffron thread (optional)
2 (14 ounce) cans chopped tomatoes (with juice)
2 garlic cloves, minced
2 tablespoons sugar (or to taste)
4 cups low sodium vegetable broth
1 cup dried lentils, picked through and rinsed
3 cups canned chick-peas, drained and rinsed
4 sprigs cilantro
4 sprigs parsley
2 dried bay leaves
salt and pepper

Steps:

  • In a medium sized pot heat the olive oil at medium heat and add fennel, gently cooking for a couple of minutes while the fennel releases its natural juices.
  • Add the red and white onions, cook until soft and translucent, but without turning brown, stirring mixture from time to time, about 12 minutes.
  • Add tomatoes and increase heat to high until the mixture comes to a simmer (about 5 minutes).
  • Add the ginger, turmeric, cinnamon, garlic and saffron if using, letting them infuse the mixture with their flavors for a few more minutes.
  • Add the lentils, vegetable stock, sprigs of cilantro and parsley and bay leaves and bring to a boil, then reduce heat to a simmer.
  • Season with salt, pepper and sugar, stirring the mixture a couple of times. Cover pot and let simmer for about 25 minutes or until the lentils are tender.
  • Add the cooked chickpeas and cook uncovered for another 5 to 7 minutes until heated through.
  • Mix well, season again with salt, pepper and sugar to taste. Remove bay leafs and sprigs of cilantro and parsley.

1/2 bunch cilantro, fresh
1/2 bunch parsley, fresh
4 cups chicken broth
1/2 cup green lentil (or brown)
0.5 (19 ounce) can chickpeas, drained and rinsed
1 (19 ounce) can tomatoes, drained and chopped
1 onion, chopped
1 teaspoon cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1/2 teaspoon black pepper
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon cinnamon
1 lemon, thinly sliced
6 pitted dates, halved (optional)

Steps:

  • Chop 2 tbsp each of cilantro and parsley, set aside.
  • Tie together the remainder of the parsley and cilantro bunches and place in large sauce pan. Add chicken stock and bring to boil. Reduce heat to low, cover and simmer for 15 minute Discard herb bundle.
  • Add lentils, cover and simmer for 15 minute.
  • Add chickpeas, tomatoes, onions, cinnamon, cumin, ginger, tumeric, and pepper, cover and simmer for 30 minute.
  • Remove 3 cups of soup and blend with hand blender or food processor.
  • Return to pot and heat through. Stir in lemon juice, oil and reserved herbs.
  • Ladle soup into bowls and sprinkle with cinnamon and top of lemon slices and dates.

2 stalks celery, diced
1 cup red lentil
1 cup dried garbanzo beans
4 cups vegetable broth
1 (15 ounce) can coconut milk
2 cups kale, washed, trimmed and finely chopped
2 teaspoons curry powder
1 teaspoon mustard
1/2 teaspoon garam masala
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1 tablespoon fresh ginger, minced
1 pinch salt
1/4 cup coconut, shredded
2 tablespoons unsalted peanuts, finely chopped

Steps:

  • Saute onion, carrots and celery in nonstick pan, about 5 to 7 minutes, use a little water to prevent sticking of burning.
  • Precook kale in large saucepan of boiling water for about 2 to 3 minutes.
  • Add drained kale, lentils, chickpeas and broth to carrot mixture, bring to a boil.
  • Cover, reduce heat and simmer for about 15 minutes or until lentils are tender.
  • Allow soup to cool, then puree in blender, Once soup is blended return to pan. Add coconut milk, ginger, spices and salt. Stir well.
  • Cover and simmer for 10 minutes.
  • Add garnish of coconut and peanuts when served in bowls.

1 batch 2 tsp ground coriander ;2 tsp smoked paprika; 1 tsp ground cumin ;1/2 tsp ground cinnamon; 1/8 tsp red pepper flakes; 1/3 cup olive oil ;1 large onion chopped fine ;2 ribs celery chopped fine; 5 cloves garlic pressed ;1 tbsp ginger grated ;1/2 cup cilantro minced; 1/4 cup parsley minced; 4 cups chicken broth or ; 4 cups water ;1 can chickpeas 15 ounces, rinsed ;1 cup brown lentils picked over and rinsed ;1 can crushed tomatoes 28 ounces ;1/2 cup orzo ;4 oz Swiss chard cut into 1/2-inch pieces; 2 tbsp lemon juice;1/4 cup cilantro minced; 1/4 cup parsley minced ;1 tsp salt or to taste, use grey salt if available; pepper to taste ;lemon wedges; harissa

  • Preheat a large Dutch oven over medium high heat. Add the olive oil and add the onion and celery once the oil starts to shimmer. Cook and stir frequently for about 7-8 minutes. The veggies should just start to brown at this point. (It's nice to sip on a drink during this step.) 3 Bring the heat down to medium and add the garlic and ginger. Cook and stir for about 1 minute or until fragrant. 4 Push the veggies to the perimeter of the pot and add the spice mix to the center. Bloom the spices by mixing over the heat for about 1 minute, then mix the spices into the veggies. 5 Add the cilantro and parsley. Stir and cook for about 1 minute. 6 Add the broth, water, chickpeas, and lentils. Increase the heat to high and stir to combine. Once the mixture starts to simmer, drop the heat to medium low. Partially cover the pot and cook for about 20 minutes until the lentils become tender. 7 Add the tomatoes and orzo. Increase the heat to high again and stir to combine. Once the soup simmers, reduce the heat to medium-low and cook, partially covered, for 7 minutes. 8 Mix in the chard and cook partially covered for about 5 more minutes. 9 Transfer the pot away from the heat and add lemon juice, cilantro, and parsley (save a few pinches of herbs to garnish individual bowls). Season with salt and pepper. 10 Top each bowl with some herbs and serve with a lemon wedge on the side. Garnish with harissa if available.

  • Saute onions spices, add tomatoes. Add 8c water with lentil, chickpeas and 1 tsp salt cook for 45 min. Just before serving add cilantro, lemon and vinegar

1 RawSpiceBar's Ras el Hanout Spices
4 tbs oil
1 onion sliced,
1 clove garlic, sliced
1 bay leaf
1 tsp ras el hanout
1 tsp cumin
1/4 tsp turmeric
1/4 tsp chilli powder or paprika
2/3 cup red lentils, washed and soaked for 10 minutes
1 can of cooked chickpeas, drained
1 cup cherry tomatoes or 1 medium salad tomato, chopped
1 tbs tomato paste
1 Water
1 Salt to season
1 Coriander to garnish

Steps:

  • 1. In a medium sized pot add oil. Allow to heat up then add in onions and garlic. Add a 1/4 tsp salt to help onions soften. Let onions cook until golden brown. 2. Add in bay leaf and ground spices. Cook off the spices for about 2-3 minutes then add in drained lentils, tomato paste and tomatoes. Stir to toast the lentils and leave it for 3-5 minutes. Then add 1.5-2 cups water to help lentils soften and cook through. Cover and leave to cook. 3. Once the lentils have absorbed the water and cooked through, add in the chickpeas. Stir then top up the pot with enough water to bring it to the brim, about 3-5 cups. Cover and leave the soup to simmer to a boil on a medium heat. 4. After about 15-20 minutes, once the soup has simmering to a rolling boil and the liquid has reduced slightly, season with salt to taste. Garnish with a handful of coriander then remove from the heat and serve.
