WHITE BEAN HUMMUS



White Bean Hummus image

Ultra creamy, lemony, and just enough garlicy white bean hummus! Serve it plain with a drizzle of good extra virgin olive oil with veggies and pita chips to dip. Or, dress it up with some nutty dukkah (highly recommended). The perfect bean dip!

Number Of Ingredients 11

1 15- ounce can white beans, ((I recommend butter beans), drained and rinsed)
1 garlic clove (minced)
1 ice cube
¼ cup tahini, (I used Soom Tahini, well-stirred)
1 teaspoon cumin
½ teaspoon coriander
1 teaspoon Aleppo pepper or 1/2 teaspoon crushed red pepper flakes, (more to your liking)
Kosher salt
Juice of ½ lemon, (more to your liking)
Extra virgin olive oil, (to serve)
Homemade Dukkah,

Steps:

  • Add the beans and minced garlic to the bowl of a food processor. Puree until a smooth mixture forms.
  • While the processor is running, add an ice cube, tahini, lemon juice, spices and a big dash of kosher salt. Blend for about 4 minutes or so. Check, and if the consistency is too thick, run processor and slowly add a drizzle of hot water. Blend until you reach your desired silky smooth consistency.
  • Taste and adjust seasoning and lemon juice to your liking. If you need more garlic, add another minced clove. And if you like the dip to be even more nutty, add a little more tahini. Make sure to run the processor again until everything is well combined.
  • Serve or chill the dip for a later time (chilling will thicken the white bean hummus some, which is recommended). When ready to serve, spread the hummus in a serving bowl and add a generous drizzle of extra virgin olive oil. Top with 2 to 3 teaspoons of dukkah, if using.

2 garlic cloves, peeled
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
1/4 cup lemon juice
3 tablespoons water
2 tablespoons tahini
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
Pita breads, warmed and cut into wedges
Carrot and celery sticks

Steps:

  • Process garlic in a food processor until minced. Add the chickpeas, lemon juice, water, tahini, cumin, salt and pepper; cover and process until smooth. Transfer to a small bowl. Serve with pita wedges and vegetables.

2 x 200g tubs ready-made hummus
zest and juice 1 lemon , finely grated
1 tbsp olive oil , plus extra to drizzle
2 tbsp harissa
4 tbsp toasted pine nuts
½ small pack coriander or flat-leaf parsley, roughly chopped
warm flatbread or toasted pitta, cucumber sticks and radishes, to serve

Steps:

  • Mix the hummus with the lemon zest, juice and 1 tbsp olive oil. Spread over a small plate, then swirl in the harissa.
  • Scatter over the pine nuts and herbs, drizzle with a dash more oil, and serve with flatbreads or pitta, and cucumber sticks and radishes for dipping.

2 15-ounce cans chickpeas, undrained
1/3 cup tahini, well stirred
4 cloves garlic, minced
3 tablespoons fresh lemon juice
1 1/2 teaspoons ground cumin
Kosher salt
1 tablespoon extra-virgin olive oil, plus more for topping
1 pound ground lamb or beef
Freshly ground pepper
1 teaspoon hot paprika
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 15-ounce can diced fire-roasted tomatoes
1/2 cup chopped fresh parsley and/or cilantro
Warmed pita and prepared cucumber salad, for serving

Steps:

  • Bring the chickpeas and their liquid to a simmer in a medium saucepan over medium heat. Drain, reserving the liquid. Set aside 1/4 cup chickpeas for topping. Process the remaining chickpeas in a food processor with 1/2 cup chickpea liquid, the tahini, half of the garlic, 2 tablespoons lemon juice and 1/2 teaspoon each cumin and salt to make a silky puree, scraping down the sides as needed, 2 to 3 minutes. If the hummus is too thick, add more chickpea liquid 1 tablespoon at a time; season with salt.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the lamb and season with 1/2 teaspoon salt and a few grinds of pepper. Cook until browned, 3 to 5 minutes. Pour off all but about 3 tablespoons drippings. Stir in the remaining garlic, 1 teaspoon cumin, the paprika, cinnamon and allspice; cook, stirring, until toasted, about 1 minute. Add the tomatoes and simmer until thickened, 4 to 5 minutes. Stir in the remaining 1 tablespoon lemon juice and half of the herbs.
  • Divide the hummus among bowls. Top with the lamb mixture, the reserved chickpeas, remaining herbs and a light drizzle of olive oil. Serve with pita and cucumber salad.

1 (14.5 ounce) can chickpeas (garbanzo beans), drained
2 rounded tablespoons tahini sesame paste, found in both dairy and dry specialty foods sections
A drizzle extra-virgin olive oil
1/2 teaspoon crushed pepper flakes
1 teaspoon (1/3 palm full) ground cumin
1 teaspoon (1/3 palm full) ground coriander
1 clove garlic, crushed
Coarse salt
1/2 lemon, juiced
Pita breads, grilled and cut into wedges for dipping

Steps:

  • Combine beans, tahini, oil, pepper flakes, cumin, coriander, garlic, salt, and lemon juice in food processor bowl and grind into a smooth paste. Transfer to a small dip dish and surround spread with warm pita wedges. This recipe makes a great appetizer, or anytime snack.
  • Tidbit: this is a fantastic dish to take to a pot luck or block party -- it's always a hit!
