¼ cup fresh lemon juice
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon honey
½ teaspoon dried basil
1 pinch salt and freshly ground black pepper
⅓ cup extra-virgin olive oil
3 medium zucchini, ends trimmed
¼ cup chopped cilantro leaves and stems
¼ cup toasted pine nuts

Steps:

  • Whisk lemon juice, garlic, Dijon mustard, honey, basil, salt, and pepper together in a small bowl. Drizzle in olive oil and whisk until vinaigrette emulsifies; set aside.
  • Spiralize the zucchini into noodles using the thin blade. The strands will be very long, so cut them into manageable lengths with kitchen shears. Place zucchini noodles in a large bowl and add cilantro.
  • Pour the vinaigrette over the noodles right before serving. Toss to gently coat. Taste and adjust the seasoning, if necessary. Sprinkle with pine nuts and serve immediately.

2 medium zucchini, sliced lengthwise into thin strips
Canola oil
Salt and freshly ground black pepper
1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice
1 teaspoon finely grated lemon zest
Honey
2 tablespoons finely chopped fresh flat-leaf parsley, plus leaves for garnish
1/2 cup extra-virgin olive oil
Wedge Pecorino Romano, for shaving
2 tablespoons toasted pine nuts
Fresh mint leaves, torn

Steps:

  • Heat the grill to high heat. Brush the zucchini on both sides with canola oil and season with salt and pepper, to taste. Grill for just about 1 minute per side (until slightly charred and wilted), then remove them to a platter.
  • Whisk together the Dijon mustard, lemon juice, lemon zest, honey, to taste, and salt and pepper, to taste, and parsley in a small bowl. Slowly, whisk in the olive oil until emulsified.
  • Drizzle the vinaigrette over the zucchini and let it marinate for 15 minutes at room temperature. Top with shaved cheese, pine nuts, parsley and mint leaves.

1 cup raw walnuts
1 cup coarse-grind bulgur
¼ tsp. kosher salt, plus more
2 lb. zucchini and/or yellow summer squash
¼ cup extra-virgin olive oil, plus more for drizzling
3 Tbsp. preserved lemon paste (such as NY Shuk)
2 tsp. honey
1 garlic clove, finely grated
Freshly ground black pepper
7 oz. Greek feta, crumbled
½ cup coarsely chopped parsley
½ cup torn mint leaves
Lemon wedges (for serving)

Steps:

  • Toast walnuts in a dry medium skillet over medium heat, tossing often, until golden brown, 8-10 minutes. Transfer to a cutting board and let cool. Coarsely chop.
  • Wipe out skillet and toast bulgur, stirring often, until a shade darker and starting to smell like popcorn, about 3 minutes. Add ¼ tsp. salt and 2 cups water and bring to a boil. Reduce heat to low and simmer gently until liquid is almost completely evaporated, 8-10 minutes. Cover skillet and remove from heat. Let sit while you prepare the rest of the salad.
  • Prepare a grill for high heat. (Or, heat a grill pan over high.) Trim ends of zucchini; slice lengthwise into long ¼"-thick planks. Set a wire rack inside a rimmed baking sheet and arrange zucchini in a single layer on rack (you can also do this in a large bowl if you don't have a wire rack). Drizzle with oil and season with salt. Toss zucchini, rubbing with your hands, to coat completely with oil.
  • Grill zucchini, undisturbed, until grill marks appear, about 2 minutes. Turn over and grill on other side until grill marks appear, about 2 minutes. Return to wire rack (or a colander set in a bowl) to drain; let cool slightly, Transfer to a cutting board and slice on a diagonal into 1" pieces.
  • Whisk preserved lemon paste, honey, garlic, and remaining ¼ cup oil in a large bowl to combine; season with pepper (lemon paste and feta should make it salty enough). Add bulgur and feta and toss to combine. Set some of zucchini, parsley, and mint aside for serving, then add remaining zucchini and herbs to salad; toss gently to combine. Taste and season with salt and pepper if needed.
  • Transfer salad to a platter. Top with reserved zucchini and herbs. Scatter walnuts over. Serve salad with lemon wedges for squeezing over.

1 lemon, zested and juiced

1/4 cup pomegranate seeds

  • For the zucchini: Preheat a large grill pan over medium-high heat.

  • Working in batches, grill the zucchini in a single layer until it starts to soften and grill marks appear on one side, about 4 minutes. Flip and repeat on the other side, about 2 minutes. Transfer to a separate large bowl.

1/2 cup extra-virgin olive oil
2 cloves garlic, thinly sliced
1 teaspoon crushed red pepper
1 lemon, zest peeled with a vegetable peeler and lemon halved
One 4-ounce block feta cheese, broken into 1-inch pieces
2 medium zucchini, sliced into 1/8-inch-thick coins (see Cook's Note)
Kosher salt and freshly ground black pepper
1/4 cup fresh soft herb leaves (such as torn basil or mint or whole tarragon)
1/4 cup toasted pine nuts

Steps:

  • Combine the olive oil, garlic, crushed red pepper and half of the lemon zest in a medium saucepan. Warm over medium heat until the garlic is fragrant, softened and starting to turn golden brown, 2 to 3 minutes. Remove from the heat and add the feta pieces. Let marinate for at least 10 minutes at room temperature and up to overnight in the refrigerator (see Cook's Note).
  • Mince the remaining lemon zest and reserve for garnish.
  • Arrange the zucchini coins in a concentric circle on a large platter. Season with salt and black pepper. Sprinkle with the juice from one of the lemon halves and drizzle with some of the olive oil from the feta.
  • Remove the feta from the olive oil with a slotted spoon and scatter over the zucchini, breaking up the pieces into smaller bits. Top with the herbs and pine nuts. Drizzle with more olive oil from the feta and sprinkle with the minced lemon zest and juice from the remaining lemon half. Enjoy!

Coarse salt
1 small shallot, minced
Grated zest and juice of 1 1/2 lemons
3 tablespoons extra-virgin olive oil
1/2 cup pine nuts
1 pound zucchini, ends trimmed
1/2 cup loosely packed fresh flat-leaf parsley leaves, roughly chopped
Freshly ground pepper
4 ounces Parmigiano-Reggiano cheese

Steps:

  • Place farro in a large saucepan, and add enough cold water to cover by about 3 inches. Bring to a boil over high heat; add salt, and stir once. Reduce heat to medium, and simmer until farro is al dente according to package instructions, 10 to 12 minutes. Drain, and let cool.
  • In a small bowl, combine shallot with lemon juice and salt; let stand 15 minutes. Meanwhile, in a small saute pan, heat oil over medium heat, and add pine nuts. Cook, stirring, until they are lightly toasted, about 5 minutes. Remove from heat, and add lemon zest.
  • Using a mandoline or sharp knife, slice zucchini crosswise as thinly as possible; place in a large bowl. Add farro, pine-nut mixture, and parsley; stir to combine. Stir in shallot mixture; season with salt and pepper. Transfer to a large serving bowl.
  • Using a vegetable peeler, shave half the cheese over salad; toss to combine. Salad can be stored up 6 hours in refrigerator, covered with plastic wrap. Just before serving, shave remaining cheese on top.

1 large shallot

  • In a large bowl combine 2 tbsp of olive oil with garlic, cumin, lemon zest, half the lemon juice, salt and pepper. Add the zucchini and craisins and toss to coat. Let stand at room temperature for 2 hours stirring occassionally. In a large shallow glass dish combine shallot with olive oil and remaining lemon juice. Add the chicken and refrigerate for 1-2 hours. In a skillet toast the pine nuts about 2 minutes. Remeove chicken and bake in the oven. Transfer to a serving bowl. 2 zucchini, washed, dried and ends trimmed
1 tablespoon fresh thyme, chopped
1 tablespoon fresh oregano, chopped
1 large lemon, zested and juiced
⅓ cup extra-virgin olive oil
1 tablespoon Dijon mustard
Salt and coarsely ground black pepper
Parmesan shards, to taste

Steps:

  • 1. Cut the zucchini into ribbons using a vegetable peeler. Hold the zucchini firmly at the tip and draw the peeler down. Transfer the ribbons to a large bowl. 2. Add the thyme and oregano to the zucchini ribbons; toss to combine. Add the lemon zest and juice; toss to combine. 3. In a small bowl, whisk the olive oil with the mustard. Gradually add the olive oil mixture to the zucchini and toss until the salad is well dressed. 4. Season the salad with salt and pepper. Serve topped with shards of Parmesan.

2 pieces 2 medium zucchini, sliced lengthwise into thin strips
2 tablespoons Canola oil
1 teaspoon Salt and Pepper, to taste
1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice
1 teaspoon finely grated lemon zest
1 teaspoon Honey
2 tablespoons finely chopped fresh flat-leaf parsley, plus leaves for garnish
1/2 cup extra-virgin olive oil
3 tablespoons Parmesan/Reggiano Cheese
2 tablespoons toasted pine nuts

Steps:

  • 1. Heat the grill to high heat. Brush the zucchini on both sides with canola oil and season with salt and pepper, to taste. Grill for just about 1 minute per side (until slightly charred and wilted), then remove them to a platter.
  • 2. Whisk together the Dijon mustard, lemon juice, lemon zest, honey, to taste, and salt and pepper, to taste, and parsley in a small bowl. Slowly, whisk in the olive oil until emulsified.
  • 3. Drizzle the vinaigrette over the zucchini and let it marinate for 15 minutes at room temperature. Top with shaved cheese, pine nuts, parsley and mint leaves.

1/4 cup pine nuts (about 1 1/2 oz)
1 pound zucchini, cut into 2-by-1/2-inch sticks
1/2 cup olive oil
Salt and freshly ground pepper
1 large shallot, minced
2 TBS. fresh lemon juice
1 tsp. dry mustard
2 bunches of arugula, large stems removed, torn into bite sized pieces
1 medium head of Boston lettuce, torn into bite sized pieces

Steps:

  • 1. Preheat the oven to 350. Spread the pine nuts on a small baking sheet. Toast for about 5 min. until golden. Raise the oven temp to 450. 2. In a lg. bowl, toss zucchini and squash with 2 TBS. of oil and 1/2 tsp. each salt and pepper. Set the zucchini and squash, skin side down, on a nonstick baking sheet. Roast for about 15 mins. until lightly browned. Let cool slightly, then transfer to a large bowl. 3. In a small bowl, whisk the minced shallot with lemon juice, dry mustard and 1/2 tsp. each salt and pepper. Whisk in remaining 6 TBS. olive oil. Pour half of the dressing over zucchini and toss. 4. In a large shallow bowl, toss the greens with the remaining dressing. Make a well in the center and add the zucchini and squash strips. Sprinkle with toasted pine nuts and serve.

4 zucchini - roughly skinned and sliced
4 - 5 cloves of garlic - chopped fine
1 medium red onion - chopped small
4 stalks celery - chopped small
¼ cup fresh italian parsley - chopped
½ cup instant barley
lemon slice for garnish
for the dressing:
juice of 2-3 lemons
½ cup olive oil
½ tsp. red pepper flakes
1 tsp. salt
1 tsp. dried oregano

Steps:

  • 1. Cook barley as directed and set aside. In a large bowl combine all of the ingredients for the salad. Add the cooked barley and toss. In a small bowl prepare the dressing and stir. Add to the salad and toss. Garnish with a lemon slice.
