4 pints firm vine-ripened cherry tomatoes
1/3 cup lemon-flavored or plain vodka
3 tablespoons white-wine vinegar
1 tablespoon sugar
2 tablespoons small fresh dill leaves
freshly ground black pepper to taste
1 firm lemon

Steps:

  • Cut a small shallow X in stem end of each tomato and have ready a bowl of ice and cold water. In a saucepan of boiling water blanch tomatoes, 3 at a time, 2 to 3 seconds and immediately transfer with a slotted spoon to ice water to stop cooking. (Tomatoes should still be firm, but skins should slip off easily.)
  • In a bowl stir together vodka, vinegar, and sugar until sugar is dissolved. Peel tomatoes and add to vodka mixture with dill, pepper, and salt to taste, tossing gently. Marinate tomatoes, covered and chilled, at least 30 minutes and up to 1 hour.
  • With a citrus zester cut 2 tablespoons zest in strips from lemon. (Alternatively, cut a 3- by 1-inch piece zest from lemon with a vegetable peeler and cut crosswise into thin strips.)
  • Just before serving, gently toss tomatoes with a rubber spatula and sprinkle with zest. Serve tomatoes with small forks or wooden picks.

1/2 cup pepper flavored vodka
3 tablespoons sea salt
1 tablespoon lemon pepper

Steps:

  • Poke 5 or 6 holes with a wooden pick or skewer in each tomato and put.
  • in a shallow bowl.
  • Pour vodka over tomatoes and let stand, covered, tossing occasionally, 1 to 2 hours, or until soaked to desired taste.
  • In a small bowl stir together salt and lemon pepper.
  • Serve tomatoes with seasoned salt for dipping.

30 -40 small cherry tomatoes
1 tablespoon garlic
1 teaspoon sea salt
1 teaspoon pepper
750 ml grey goose vodka (or equivalent quality Vodka)
Tabasco sauce (optional)
parsley (garnish)
lemon pepper seasoning (served in high ball)
toothpick (placed in shot glass)

Steps:

  • Cut a shallow cross shape in the top of each tomato, put them in a large bowl and add the garlic (as much or as little as you like), a little salt, Tabasco (optional) and above all vodka.
  • Allow the tomatoes to soak up the vodka, stirring occasionally; Let them soak overnight and after 24 hours they can be put in the refrigerator.
  • Once you are at the party pour into the large oversized martini glass and serve with a shot glass of Lemon Pepper for dipping and a shot glass with toothpicks.

6 drops Tabasco sauce
1 teaspoon Worcestershire sauce

This are delicious and easy! I think the recipe came from Gourmet but I'm not sure. They're like cherry tomatoes but to a higher degree! Easily doubled.

3/4 cup cider vinegar
3/4 cup water
4 teaspoons kosher salt
2 teaspoons sugar
1 strip lemon peel, 3-inchx1/2-inch (I used more)
12 ounces cherry tomatoes or 12 ounces grape tomatoes
1/4 cup fresh dill, coarsely chojpped
2 garlic cloves, thinly sliced
1/4 teaspoon crushed red pepper flakes

Steps:

  • Pour vinegar and water in small saucepan. Add salt, sugar and lemon peel. Bring to a boil, stirring to dissolve sugar and salt. Remove from heat. Let cool 20 minutes.
  • Pierce each tomato 2 times with a slender wooden skewer. (I interpreted this as take a toothpick and run it through.) Toss tomatoes, dill, garlic and red pepper in a large bowl. Add cooled vinegar mixture. Let stand at room temp at least two hours and up to eight hours.
