Grilled Marinated Swordfish Steaks With Avocado Butter image

Love Swordfish steaks, especially when I can get them fresh. They are nice and firm, and don't have a "fishy" taste! Also love avocado....this is a great marriage of two great tastes! Prep time doesn't include marinating time!

64 ounces swordfish steaks
1/2 cup vegetable oil
1/4 cup soy sauce
1 teaspoon lemon rind, grated
1/4 cup fresh lemon juice
2 cloves garlic, crushed
1/2 cup butter, softened
1/2 cup ripe avocado, mashed
1/4 cup plus 1 tbsp fresh lime juice
2 tablespoons fresh flat-leaf parsley, minced
2 garlic cloves, minced
1/2 teaspoon salt

Steps:

  • Swordfish:.
  • Place steaks in two 13 x 9 x 2 inch backing dishes. Combine vegetable oil and next 4 ingredients in a small bowl; stir well. Pour marinade mixture over steaks; cover and marinate in the refrigerator for 2 hours, turning occasionally.
  • Remove steaks from the marinade, reserving the marinade. Place marinade in a small saucepan. Bring to a boil; reduce heat, and simmer 5 minutes. Set aside.
  • Grill steaks over hot coals for 9 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with the reserved marinade. Serve with Avocado Butter. Garnish with parsley sprigs.
  • Avocado Butter:.
  • Combine butter and avocado in a small mixing bowl; beat at medium speed of an electric mixer until smooth. Add the lime juice, parsley, garlic, and salt; stir well. Cover and chill until firm. If desired, shape butter into small bowls before serving.

This recipe is Italian but with the ingredients used, it could be part of a Greek menu as well. Use the maximum marinating time for the best flavour. From "Williams-Sonoma Italian Favourites".

1/3 cup fresh lemon juice
2/3 cup extra virgin olive oil
2 1/4 lbs swordfish fillets, cut into 1-1/2-inch cubes
salt
ground black pepper
1 tablespoon garlic, minced
2 teaspoons dried oregano
1 red onion, peeled and sliced
18 bay leaves (Slices of lemon may be substituted, if preferred)

Steps:

  • In a bowl, combine the lemon juice and olive oil.
  • Place the swordfish cubes in a shallow glass dish and sprinkle with salt and pepper to taste.
  • Pour about 1/3 cup of the olive oil and lemon mixture over the fish and toss to coat evenly.
  • Cover and refrigerate for 2 to 4 hours.
  • Add the garlic and oregano to the remaining olive oil and lemon mixture.
  • Set aside to use as a sauce.
  • Preheat the broiler or fire up the barbecue.
  • Cut the onion through the stem end into quarters and separate each quarter into individual pieces.
  • Alternate the swordfish cubes with the onion pieces and bay leaves on skewers.
  • Arrange the skewers on a broiler pan or on the grill rack.
  • Broil or grill, turning once, until the fish is opaque throughout when pierced with the tip of a knife, about 3 minutes on each side.
  • Serve hot, garnished with lemon slices and accompanied by the reserved sauce.

6 (6 ounce) swordfish steaks, 1/2 inch thick,skin removed
2 lemons, juice of
2 shallots, thinly sliced
2 cloves garlic, crushed
2 tablespoons coarse grain mustard
1/4 cup extra virgin olive oil
3 -4 sprigs fresh thyme, minced
fresh ground black pepper

Steps:

  • Place the swordfish in a shallow bowl.
  • Whisk the lemon juice, shallots, garlic, mustard, oil and thyme in a small bowl; season with the pepper.
  • Pour over the swordfish.
  • Marinate, covered, at room temperature for 30 minutes, or in the fridge for several hours.
  • Set up your gas or charcoal grill and brush the grill rack with oil.
  • Arrange the swordfish on the rack; grill for 3-4 minutes on each side, or until seared on the outside and cooked through.

1/3 cup soy sauce (low sodium preferred)
1 teaspoon fresh lemon peel, finely grated
2 teaspoons Dijon mustard
1/2 cup avocado oil or 1/2 cup extra virgin olive oil
1 teaspoon fresh grated ginger
2 tablespoons fresh lemon juice
1/3 cup chopped chives
1 garlic clove, crushed
4 swordfish steaks, med. to large in size
1/2 cup butter, softened
1 avocado, mashed
4 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic salt

  • Fish:.
  • Combine all fish ingredients in a large Ziploc bag. Add swordfish steaks. Refrigerate for 1-3 hours, turning and massaging a few times.
  • To cook, place fish on a preheated broiler pan brushed with oil. Broil 5-6 minutes on each side or until fish flakes easily when tested with a fork.
  • You may also barbecue this. If you do brush it with the marinade often.
  • Avocado Butter:.
  • In a medium mixing bowl beat butter and avocado with an electric mixer until soft and creamy. Beat in remaining ingredients.
  • Place in a decorative dish and refrigerate until firm and ready to use. A melon baller works great to scoop out balls to place on the hot fish.
  • Serve:.
  • Place your hot fish on a dish. Top with avocado butter. Garnish with fresh chives and a lemon wedge.

3 tablespoons Dijon mustard
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons parmesan cheese
1 teaspoon basil
3/4 teaspoon salt
1/4 teaspoon pepper
2 lbs swordfish (4 steaks)
1 tomatoes
3 tablespoons parsley, fresh chopped

Steps:

  • Preheat the broiler.
  • In a small bowl, stir together first 7 ingredients.
  • Place swordfish on foil lined baking sheet and brush them lightly with the basting sauce. Broil the fish four inches from the heat until opaque on top. 3-4 minutes.
  • Coarsely chop tomato and parsley and add them to the remaining basting sauce.
  • Turn the fish steaks and spoon the tomato-basting sauce mixture over them.
  • Bake until fish is firm and just flakes when tested with a fork. 3-4 minutes longer.

1 1/2 cups seasoned flour
2 eggs (beaten)
2 cups macadamia nuts (chopped fine)
1 teaspoon lemon rind (grated)
1 tablespoon oregano (minced)
nonstick cooking spray (as needed)

Steps:

  • Rinse and dry fish.
  • Place flour in a bowl. Place eggs in another bowl. Combine the nuts, lemon rind and oregano.
  • Dredge fish in flour, then eggs, then nut mix to coat.
  • Place on a rack over a baking sheet. Let stand 30 mnutes.
  • Heat oven 400.
  • Spray fish lightly with spray. Bake 25 minutes.
