Easy lemon roasted chicken image

Juicy lemon roasted chicken flavored with thyme and garlic is the most delicious, easiest way to cook a whole chicken.

1 whole chicken ((approximately 1.5kg/3lbs))
2 tbsp olive oil
1 tbsp flaky sea salt
1 tsp pepper
3 lemons
2 garlic bulbs
small handful thyme
1 cup chicken stock

Steps:

  • Preheat the oven to 200°C/390°F.
  • Drizzle the chicken with olive oil then season generously with salt and pepper all over.
  • Make sure to season the cavity of the chicken as well.
  • Place lemon slices and thyme inside the cavity of the chicken and sprinkle thyme leaves over the chicken.
  • Slice the lemons and the tops off of the garlic bulbs. Place them in a roasting dish then place the chicken on top.
  • Pour the chicken stock around the chicken then cover with foil.
  • Place in the preheated oven and roast for 30 minutes then remove the foil and roast for another 15-30 minutes or until the chicken is golden brown and cooked through.
  • Allow the chicken to rest for at least 10 minutes then slice and serve, drizzled with the pan juices.

This is one of our favorite ways to make chicken! Not only is it easy, but it is juicy, tender and filled with flavor!

2 tablespoons olive oil
2 tablespoon butter (softened)
1 lemon
3-4 cloves garlic (minced)
salt & black pepper to taste
1 whole chicken (approx 3 lbs)

Steps:

  • Zest the yellow rind of the lemon. Cut the lemon in half and juice half of the lemon into a small bowl. Add the rind, olive oil, softened butter, garlic, salt and pepper. Stir well (the mixture should be fairly thick).
  • Gently lift the skin from the chicken breasts and place about 1 tablespoon of the butter mixture under the skin. Massage it evenly across the breasts.
  • Cover the skin of the chicken with the remaining butter mixture. Refrigerate for 30-45 minutes.
  • Preheat oven to 425°F. Slice the remaining lemon half and place it inside the chicken along with ½ an onion. Tie the legs together. Place the chicken in a shallow pan breast side up and place in oven.
  • Turn oven down to 375°F and bake for 1 ¼ hours or until the inner thigh reaches 165°F.

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
  • Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

ROAST CHICKEN WITH CELERIAC

1 celeriac, peeled and coarsely diced
3 carrots, coarsely diced
1 leek, green top removed, split in half and rinsed thoroughly
3 tablespoons vegetable oil
1 (4-pound) whole chicken
1 lemon, cut in half
2 shallots, coarsely diced
1/2 bunch fresh thyme
1/2 bunch fresh sage
3 to 4 cloves garlic, smashed
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the diced celeriac, carrots, and leek in a large roasting pan and drizzle with vegetable oil. Season the vegetables with salt and pepper, then toss and spread evenly in pan.
  • Season the inside of the chicken with salt and pepper. Stuff the chicken, beginning with 1/2 lemon, shallots, thyme, sage, and garlic, and ending with the other 1/2 lemon.
  • Tuck the wings under the chicken to secure and truss the chicken legs with kitchen twine. Season the outside of the chicken well with salt and pepper and place the bird on top of the oiled vegetables.
  • Place the roasting pan in the oven and roast until the chicken is cooked through and the juices run clear, approximately 1 1/2 hours or when an instant read thermometer inserted in the thigh, not touching the bone, reaches 185 degrees F.

MUSTARD & SAGE CHICKEN WITH CELERIAC MASH

1 celeriac , peeled and cut into chunks
3 chicken breasts , skinless
1 tbsp English mustard powder
2 tsp olive oil
2 garlic cloves , crushed
8 sage leaves , chopped
100g low-fat crème fraîche , plus 2 tbsp for the mash
1 low-sodium chicken stock cube
2 tbsp wholegrain mustard
275g cooked green veg, such as thin-stemmed broccoli , peas or Savoy cabbage, to serve

Steps:

  • Put the celeriac in a bowl, add a splash of water and cover with cling film. Pierce the cling film and microwave on High for 10 mins or until really tender.
  • Meanwhile, put the chicken breasts between 2 sheets of cling film and lightly bash with rolling pin until they are an even thickness. Dust with the mustard powder. Heat the oil in a large frying pan, add the chicken breasts and brown on both sides. Add the garlic and sage to the pan, stirring in the gaps between the chicken, for 30 secs- 1 min, then crumble in the stock cube. Pour in 100ml hot water and add 100g crème fraîche. Stir the sauce around the chicken, then cover the pan with a lid and cook over a medium heat for 8 mins or until the chicken is cooked through. Stir through the mustard and season with plenty of black pepper.
  • While the chicken cooks, drain any liquid from the celeriac, season, add the remaining 2 tbsp crème fraîche and mash (or blitz to a purée in a food processor). Serve with the chicken and some green veg.

4 large carrots (about 400g), cut into big chunks
1 celeriac (about 575g peeled weight), cut into roastie-sized chunks
1 large swede (550g unpeeled), quartered and cut into thick slices
2 red onions , cut into wedges
1 garlic bulb
2 tbsp rapeseed oil
2 tsp sprigs rosemary leaves and woody stalks separated
1 lemon
1 medium chicken (about 1.4kg)
2 x 200g bags curly kale

Steps:

  • Heat oven to 200C/180C fan/gas 6. Tip the carrots, celeriac, swede, onions and garlic into a large roasting tin with the oil, rosemary leaves and a grinding of black pepper. Toss well and roast for 5-10 mins while you get the chicken ready.
  • Grate the zest and squeeze the juice from the lemon, set aside and put the lemon shells and the woody stalks from the rosemary inside the chicken. Stir the veg, scatter over the lemon zest and drizzle over the juice, then sit the chicken on top of the veg and roast for 1-1 1/4 hrs until the chicken is tender but still moist. Take the chicken from the oven and leave to rest for 10 mins. Keep the veg in the oven and steam one of the bags of kale (if you're eating this over two days for the Healthy Diet Plan, otherwise steam both).
  • Squeeze the garlic from the skins, carve the chicken and serve with the vegetables.

1 broiler/fryer chicken (3 to 4 pounds)
2 celery ribs, cut into 1-inch pieces
1 medium onion, chopped
1 medium apple, sliced
1 tablespoon olive oil
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
2 teaspoons sea salt
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1-1/2 teaspoons paprika
1 garlic clove, minced
1 teaspoon pepper
1 medium lemon, sliced

Steps:

  • Fill chicken cavity with celery, onion and apple. Tuck wings under chicken; tie drumsticks together. Place in a 6-qt. slow cooker, breast side up. Rub chicken with oil; rub with rosemary, salt, thyme, paprika, garlic and pepper. Top with lemon., Cook, covered, on low until a thermometer inserted in thickest part of thigh reads at least 170°-175°, 4-5 hours. Remove chicken from slow cooker; tent with foil. Discard vegetables and apple. Let chicken stand 15 minutes before carving.
