2 (3 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 large egg
3 tablespoons lemon juice (fresh or concentrated)
1 teaspoon vanilla extract
1 cup fresh raspberries, washed or 1 cup frozen raspberries, thawed
1 (6 ounce) graham cracker crust, pie crust or
1 (6 ounce) ready made chocolate cookie pie crust (We used the chocolate pie crust)
fresh raspberry, garnish (optional)
fresh mint sprig, garnish (optional)
2 (1 ounce) semi-sweet chocolate baking squares
1/4 cup whipping cream

Steps:

  • Preheat oven to 350F(180C).
  • With mixer, beat cream cheese until fluffy.
  • Gradually add in sweetened condensed milk until smooth.
  • Add egg, lemon juice, and vanilla extract; mix well.
  • Arrange raspberries on bottom of pie crust that has been taken out of the "store" plate and placed in a glass one.
  • Very slowly pour cheese mixture over fruit.
  • Bake for 30-35 minutes or until center is almost set.
  • Cool completely.
  • Prepare Chocolate Glaze:.
  • In small saucepan over low heat, melt chocolate squares with whipping cream.
  • Cook and stir until thick and smooth.
  • Remove from heat.
  • Top cheesecake with chocolate glaze and chill.
  • Garnish with raspberries &/or mint sprigs.

1 pint raspberries
Juice of 1/2 lemon
1/2 cup granulated sugar
One 10-ounce package shortbread cookies, such as Lorna Doone
4 tablespoons butter, softened
One 12-ounce package white chocolate chips
Three 8-ounce packages cream cheese, softened
1 teaspoon vanilla extract
1/2 cup powdered sugar

Steps:

  • Set aside 8 to 12 raspberries for garnish. Put the remaining raspberries in a saucepan with the lemon juice and 1/4 cup of the granulated sugar. Bring to a boil, reduce the heat and simmer for 2 minutes. Strain out the seeds and set aside to cool.
  • In a food processor, add the cookies, butter, 1/3 cup of the white chocolate chips and the remaining 1/4 cup granulated sugar and pulse until finely chopped. Press into the bottom and sides of a 9-inch deep-dish pie pan. Refrigerate while you make the filling.
  • Set aside about 1 tablespoon of white chocolate chips for garnish. In a double boiler or a microwave, melt the remaining white chocolate chips. Set aside to cool a bit.
  • In a mixer with a paddle attachment, beat the cream cheese and vanilla until fluffy. Add the powdered sugar and beat until smooth. Slowly add the melted chocolate and beat to incorporate. Pour in the raspberry puree and beat to incorporate.
  • Spread the raspberry mixture into the crust and decorate with the reserved raspberries. Chop up the reserved chocolate chips and scatter over the top. Refrigerate for at least 2 hours.

4 large eggs
1-1/2 cups graham cracker crumbs
1/4 cup confectioners' sugar
1/3 cup butter, melted
FILLING:
1 cup fresh raspberries
1/2 teaspoon sugar
3 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
1 cup semisweet chocolate chips, melted and cooled
Additional fresh raspberries, optional

Steps:

  • Separate eggs; let stand at room temperature for 30 minutes. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. , In a small bowl, combine cracker crumbs and confectioners' sugar; stir in butter. Press onto the bottom of prepared pan. Place raspberries and sugar in a blender; cover and process until smooth. Strain and discard seeds., Preheat oven to 325°. In a large bowl, beat cream cheese until smooth. Beat in milk and vanilla. Add egg yolks; beat on low speed just until combined. Remove 1 tablespoon; stir into raspberry puree. Remove half the remaining mixture to another bowl; stir in cooled chocolate. , In a large bowl with clean beaters, beat egg whites until stiff peaks form. With a spatula, fold half the egg whites into chocolate mixture until no white streaks remain. Pour over crust. , Fold remaining egg whites into plain cream cheese mixture; spread over chocolate layer. Drop raspberry mixture by tablespoonfuls over top; cut through filling with a knife to swirl., Place springform pan in a large baking pan; add 1 in. of boiling water to larger pan. , Bake 55-65 minutes or until center is just set and top appears dull. Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack 10 minutes; loosen edges from pan with a knife. Cool 1 hour longer. Refrigerate overnight., Remove rim from pan. Serve cheesecake with additional raspberries if desired.

I got this recipe off the back of a Ready Crust pie crust. It takes 5 minutes prep time and is fabulous! A great last minute company dessert to whip up! Sure to impress!

1 prepared regular graham cracker pie crust or 1 chocolate graham wafer pie crust
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk (NOT EVAPORATED)
1 egg
3 tablespoons lemon juice, plus
1 teaspoon lemon juice, divided
1/2 cup raspberry preserves (Strawberry preserves can always be substituted)

Steps:

  • Beat cream cheese until fluffy (its easier to beat if you bring it to room temperature first).
  • Gradually beat in sweetened condensed milk, until smooth, add egg and 3 tablespoons lemon juice, mix well.
  • Pour half the batter into the crust.
  • Combine remaining 1 teaspoon lemon juice with preserves in a bowl.
  • Spoon half the preserves over batter.
  • Pour remaining batter on top.
  • Using a knife, swirl remaining preserves into a decorative pattern.
  • Bake at 300°F for 55 minutes.
  • Cool.
  • Refrigerate leftovers.
