CHICKEN PASTA SALAD WITH CREAMY LEMON DRESSING



Chicken Pasta Salad with Creamy Lemon Dressing image

Whip up a yummy chicken and pasta salad dressed with a Greek yogurt lemon-poppy seed combo.

2 containers (6 oz each) Greek Fat Free honey vanilla yogurt
1/2 cup milk
3 tablespoons fresh lemon juice
2 teaspoons poppy seed
1 teaspoon salt
1 teaspoon grated lemon peel
2 cups uncooked penne or rotini pasta
2 cups diced cooked chicken
2 cups baby spinach leaves
1 cup red seedless grapes, halved
1/2 cup thinly sliced celery
1/2 cup slivered almonds, toasted *

Steps:

  • In small bowl, mix dressing ingredients using wire whisk until well blended. Cover; refrigerate until ready to use.
  • Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • In large bowl, mix cooked pasta, chicken, spinach, grapes and celery. Stir dressing; pour over salad and toss gently to coat. Refrigerate at least one hour before serving. Stir in almonds, reserving 2 tablespoons for garnish, if desired.

A great tasting and adaptable recipe from my mother-in-law! Poppy Seed dressing, linguine, veggies, and grilled chicken. You just can't stop eating it! Every ingredient can be adjusted to suit the tastes and needs of your family.

1 (16 ounce) package linguine pasta
2 skinless, boneless chicken breast halves
1 head romaine lettuce, chopped
1 green bell pepper, cut into 1/2-inch dice
½ red onion, cut into 1/4-inch slices
1 cucumber, sliced - or amount to taste
⅔ cup safflower oil
⅓ cup cider vinegar
¾ cup white sugar
1 tablespoon poppy seeds
1 teaspoon dry mustard powder
4 green onions, chopped

Steps:

  • Preheat a grill pan over medium-high heat; lightly oil the grill.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook the pasta uncovered, stirring occasionally, until cooked through but is still firm to the bite, about 11 minutes. Drain well.
  • While pasta is cooking, grill the chicken breast halves until the meat is no longer pink in the middle and the juices run clear, 5 to 8 minutes per side. An instant-read thermometer inserted into the thickest part of a chicken breast should read 160 degrees F (70 degrees C). Allow to rest for about 5 minutes, then slice into bite-size pieces; keep warm.
  • In a large salad bowl, lightly toss together the grilled chicken, hot cooked linguine, romaine, green pepper, red onion, and cucumber.
  • In a separate bowl, whisk together safflower oil, cider vinegar, sugar, poppy seeds, dry mustard powder, and green onions until smooth and evenly blended. Pour the dressing over the salad to serve.

1 ½ cups cubed cooked chicken
6 tablespoons chopped onion

1 1/2 cups cubed smoked cooked chicken
3/4 cup halved red seedless grapes
1/2 cup thin sliced celery
1/2 cup poppy seed dressing (chilled)

  • Drain; rinse with cold water to cool.
  • Drain well.

This recipe was salvaged off either a can of chicken, box of pasta or bag of dried cranberries. It is a really great salad and is requested at many summer gatherings. It's fall now and I got to thinking of the cranberries in this recipe.

1 (16 ounce) box spiral shaped pasta
3/4 cup celery, thinly sliced
3/4 cup red onion, diced
1/3 cup dried cranberries
3 (12 1/2 ounce) cans chicken, drained
1 cup pecans, chopped & toasted
1 1/4 cups mayonnaise
1 1/4 cups creamy poppy seed dressing

Steps:

  • Cook pasta according to packaging directions. Rinse with cold water. In a large bowl, combine pasta and everything except dressing. Mix the dressing up in a small bowl and then pour on top and mix gently. Chill for several hours before serving.
