1 package (16 ounces) orzo pasta
3 tablespoons olive oil, divided
3/4 pound sliced fresh mushrooms
3/4 cup chopped pecans, toasted
1/2 cup minced fresh parsley
1 teaspoon grated lemon zest
3 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook orzo according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, heat 2 tablespoons oil over medium-high heat. Add mushrooms; cook and stir until tender and lightly browned. Drain orzo., In a large bowl, place orzo, mushroom mixture, pecans, parsley, lemon zest, lemon juice, salt, pepper and remaining oil; toss to combine.

1 lb orzo pasta
3/4 cup pine nuts, toasted
3/4 cup flat leaf parsley, chopped
2 lemons, juice of
1 lemon, zest of
2 (6 ounce) white mushrooms, sliced
2 tablespoons extra virgin olive oil
1/4 cup extra virgin olive oil

Steps:

  • In a large pot of boiling, salted water, cook the orzo until al dente. Drain and return to the pot. Stir in the pine nuts, parsley, lemon juice, lemon peel and 2 tablespoons extra-virgin olive oil. Season with salt and pepper.
  • In a skillet, heat 1/4 cup olive oil oven high heat until rippling. Add the mushrooms and cook, stirring occasionally, until browned, about 7 minutes. Divide the orzo among 4 plates and top with the mushrooms.

Kosher salt and freshly ground black pepper
1 cup orzo
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
2 tablespoons good olive oil
1 tablespoon minced fresh dill
1 cup small-diced feta, preferably Greek (4 ounces)

Steps:

  • In a large saucepan, bring 2 quarts of water to a boil. Add 2 teaspoons salt and the orzo. Return the water to a boil and simmer uncovered for 9 to 11 minutes, until the orzo is al dente. Drain.
  • Transfer the orzo to a bowl and stir in the lemon zest, lemon juice, olive oil, dill, 2 teaspoons salt, and 1 teaspoon pepper. Fold in the feta and serve hot.

I had this great lemon orzo salad from a local gourmet deli so I wanted to see if I could replicate it. After looking around at different recipes, this is what I came up with. It makes for a great pasta/rice dish for a potluck.

1 lb orzo pasta
2 bouillon cubes (optional)
3 lemons, juice of
x lemon, zest of
3 tablespoons olive oil
1/2 cup pine nuts
1 cup feta cheese, crumbled
1/2 cup chopped basil leaves
salt and pepper

Steps:

  • If pine nuts are not toasted, toast them on a cookie sheet in a 350F oven for 5-10 minutes or until golden brown.
  • Boil water in a 6-8 quart pot with optional flavor cubes.
  • Add orzo and cook until tender.
  • Drain orzo in colander and rinse with cold water.
  • Toss orzo in a large bowl with the olive oil, lemon juice, and lemon zest.
  • Then toss in the rest of the ingredients.
  • Season with salt and pepper to taste.
  • You can add more lemon juice if you like it really lemony.
  • Chill salad for 3-4 hours before serving.

1 pound orzo, cooked according to box directions
1 tablespoon of butter, optional
Salt and freshly ground black pepper

Steps:

  • Heat 2 teaspoons olive oil in a saute pan. Add shallots and saute. Add mushrooms and saute until brown. Add snow peas and cook for 1 minute. Add pine nuts. Add mixture to the orzo. Butter may be added, to taste. Season with salt and pepper, to taste.
