4 large eggs
2/3 cup sugar
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
3 teaspoons vanilla extract
2-2/3 cups whole milk

Steps:

  • In a bowl, combine eggs, sugar, spices and vanilla. Blend in milk. Pour into a 1-1/2-qt. baking dish. Place baking dish in a cake pan in oven; add 1 in. water to pan. , Bake at 325° for 1 hour or until a knife inserted near middle comes out clean.

3/4 cup sugar, plus
2 tablespoons sugar, divided
1/4 cup all-purpose flour
1 pinch salt
1 1/3 cups whole milk
2 large eggs, separated
1/3 cup fresh meyer lemon juice or 1/3 cup regular lemon juice
2 tablespoons finely grated lemon peel
1 (8 ounce) container of chilled creme fraiche or 1 (8 ounce) container sour cream

Steps:

  • Preheat oven to 350 degrees.
  • Butter eight 3/4 cup ramekins or custard cups. Whisk 1/2 cup plus 2 tbsp sugar, flour, and pinch of salt in medium bowl to blend. Combine milk, egg yolks, lemon juice, and lemon peel in large bowl; whisk until blended. Add flour mixture to yolk mixture and whisk custard until blended.
  • Using electric mixer, beat egg whites in another large bowl until soft peaks form. Gradually add remaining 1/4 cup sugar to whites and beat until stiff but not dry. Fold 1/4 of whites into custard. Fold remaining whites into custard in 2 additions (custard will be slightly runny).
  • Divide custard equally among prepared ramekins. Place ramekins in large roasting pan. Pour enough hot water into pan to come halfway up sides of ramekins. Bake custard cups until golden brown and set on top (cakes will be slightly soft in center), about 27 minutes.
  • Chill custard cakes uncovered until cold, at least 4 hours, then cover and keep refrigerated. Can make one day ahead.
  • Using electric mixer, beat creme fraiche in medium bowl until softly whipped.
  • Run small knife aoround each custard cake to loosen. Invert each cake onto plate. Place dollup of creme fraiche atop or alongside cakes and serve.

My Grandma always made this in addition to any other pie she was baking. After she passed away in 1984, the recipe was no where to be found. She must have had it memorized! After several years of baking every recipe I could find, I decided to develop my own. This is good warm or at room temp, but if you can wait, it is better...

1 pastry for single crust pie
1 c cane sugar
3 Tbsp all purpose flour
1/2 tsp salt
2 c buttermilk
4 eggs
1/4 c melted butter
1/3 c lemon juice
1 Tbsp grated lemon peel, yellow only
1 tsp pure vanilla extract
ground nutmeg

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Line a 9" pie plate with pastry. Trim and flute edges, set aside.
  • 3. In a large bowl, combine flour, sugar and salt. In a large mixing bowl beat together the buttermilk, eggs, melted butter, lemon juice, lemon peel and vanilla. Add to the dry ingredients, mix well. Pour into pie shell and sprinkle with nutmeg.
  • 4. Bake at 400 degrees for 10 minutes. Reduce heat to 325 degrees, bake 40-45 minutes longer or until a knife inserted in the center comes out clean. Cool on a wire rack. Serve at room temperature or chilled. Store in refrigerator.

2 eggs, beaten
1 tablespoon lemon rind, grated
1/4 cup granulated sugar
2/3 cup fresh lemon juice (about 3 lemons)
1 tablespoon light margarine

Steps:

  • Combine eggs, lemon rind and sugar in a saucepan on medium heat.
  • Cook for 3 minutes, stirring constantly to prevent clumping, until mixture becomes well combined and light yellow.
  • Add in light margarine and lemon juice, keep whisking and cooking for about 5 minutes.
  • Set aside, let cool before serving.
  • Mixture will thicken even more when cold.
  • Enjoy on top of cakes, pies, fruit, ice cream -- or on its own!

1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
4 cups whole milk
Ground nutmeg

Steps:

  • Preheat oven to 350°. In a small saucepan, heat milk until bubbles form around sides of pan; remove from heat. In a large bowl, whisk eggs, sugar and salt until blended but not foamy. Slowly stir in hot milk. Stir in vanilla. , Pour egg mixture through a strainer into a 1-1/2-qt. round baking dish; sprinkle with nutmeg. Place round baking dish in a larger baking pan. Place pan on oven rack; add very hot water to pan to within 1/2 in. of top of round baking dish. Bake until a knife inserted near the center comes out clean, 55-60 minutes. This amazing dessert is so rich and sweet that you can practically taste the love that's been handed down through the generations. One bite of this custard and all will be right with your world... it's THAT good.

5 can(s) sweet condensed milk
10 egg yolks
2 c pure lemon juice
1 Tbsp pure vanilla flavoring
2 box real vanilla wafers
1/2 stick pure butter

Steps:

  • 1. CRUST: Finely crush 1/2 box of vanilla wafers. Then coarsely chop the remaining 1/2 of the box of vanilla wafers.
  • 2. In a small saucepan on low heat, melt 1/2 stick of pure butter.
  • 3. Using a mixing bowl, mix the crushed wafers and butter together, then spread evenly over the bottom of a 13x9 glass pan.
  • 4. Place in refrigerator for 15-30 min. to allow the crust to set.
  • 5. FILLING: Open all 5 cans of the sweet condensed milk. Pour all the milk in a large mixing bowl.
  • 6. Add the vanilla flavoring. Gradually stir in the lemon juice until completely blended (you may not use all of it).
  • 7. Separate the egg yolks from the egg whites.
  • 8. Stir in the egg yolks. The mixture should be slightly stiffening up by now.
  • 9. Once the filling is complete, line the sides of the glass pan with whole vanilla wafers.
  • 10. Now pour in the lemon filling in the pan.
  • 11. Once the pan is full with the lemon filling, crush a few vanilla wafers on top of the lemon custard for decoration.
  • 12. Cover with SaranWrap to prevent a film from developing while chilling in the fridge.
  • 13. Place the lemon custard dessert in the refrigerator for 4-6 hours or until set. Enjoy!

Steps:

  • Position rack in center of oven; preheat to 325°F. Place four 3/4-cup custard cups or soufflé dishes in medium baking pan. Whisk first 3 ingredients in large bowl. Whisk in cream, lemon juice and nutmeg. Divide equally among cups.
  • Add enough hot water to pan to come halfway up sides of cups. Bake until custard is set around edges but still moves slightly in center when gently shaken, about 55 minutes. Transfer cups to rack; cool slightly. Cover; chill until cold, at least 8 hours and up to 2 days. Spoon whipped cream atop custards.
