1 pre-baked pie crust
4 egg yolks
1/2 cup fresh lemon juice + optional tsp lemon zest
1/4 teaspoon salt
1/3 cup cornstarch
1 1/2 cups water
1 1/3 cups sugar
3 tablespoons butter
7 oz jar marshmallow cream
8 ounces thawed Cool Whip

Steps:

  • In a medium bowl, mix together the egg yolks, lemon juice, lemon zest, and salt.
  • Over medium heat, whisk together the cornstarch, water, sugar, and butter until mixture begins to thicken and boil. Boil for one minute, stirring constantly, and remove from heat.
  • Pour half of the hot mixture into the egg yolk mixture slowly and while whisking vigorously.
  • Pour the egg yolk mixture back into the hot mixture, continuing to whisk vigorously.
  • Return to a boil, and allow to boil for one minute. Stir constantly.
  • Pour pie filling into the pre-baked pie crust.
  • Use an electric beater to whisk together the marshmallow cream and the Cool Whip.
  • Spread the meringue on top of the pie. Chill for at least 4 hours before serving.

A no-bake lemon pie made with marshmallows. This easy, and amazingly delicious pie is made even better with a Nilla Wafer pie crust.

45 Nilla Wafers Cookies (crushed - 1 1/2 cups)
5 tbsp Butter (or margarine, melted)
2 tbsp Granulated Sugar
24 Large Marshmallows
1/3 cup Lemon Juice (fresh squeezed)
1/3 cup Water
Lemon Zest (from 2 lemons)
8 ounces Cool Whip

Steps:

  • Preheat the oven to 375 degrees.
  • Mix the Nilla Wafer crumbs with the melted butter and sugar. Press the mixture into a 9" pie plate.
  • Bake the crust for 5 - 6 minutes. Set aside until ready to use.
  • Heat marshmallows, lemon juice, water, and half of the lemon zest over medium heat until the marshmallows melt. Stir frequently.
  • Remove from heat and place the lemon and marshmallow mixture in a bowl. Refrigerate until cooled and slightly thickened.
  • Once the mixture is cool, fold in the Cool Whip.
  • Pour the lemon pie filling into the prepared crust. Top with a little extra whipped topping and the remaining lemon zest if desired.
  • Refrigerate until the pie has completely set. Serve.

40 regular-size marshmallows
3 cups heavy cream
18 whole graham crackers
1/3 cup granulated sugar
1 stick (8 tablespoons) salted butter, melted
2 teaspoons vanilla
9 maraschino cherries, for decorating

Steps:

  • Heat the marshmallows and 1 1/2 cups of the heavy cream in a pot over medium heat, stirring gently, until the marshmallows are completely melted, about 4 minutes. Set aside and allow the mixture to cool to the touch, about 20 minutes.
  • Meanwhile, make the crust. Pulse the graham crackers in a food processor or crush using a rolling pin in a resealable plastic bag with the air taken out until they are evenly sized crumbs. Transfer the graham cracker crumbs to a bowl, add the sugar and mix until evenly combined. Next, pour in the melted butter and fold the mixture until the butter is distributed. It should be the texture of wet sand.
  • Transfer the crumb mixture to a 9-inch pie pan, reserving a few pinches for garnishing the finished pie later. Press the crumbs into the bottom and sides of the pan to form a crust. Some will come up and over the top of the pan.
  • When the marshmallow mixture has cooled, add the vanilla to the remaining heavy cream. Whip the cream by hand with a whisk or in a stand mixer with a whisk attachment to soft peaks. Gently fold the whipped cream into the cooled marshmallow mixture.
  • Transfer the filling to the prepared crust and smooth out with a spatula. Sprinkle with the reserved graham crumb mixture and dot with the maraschino cherries, putting one directly in the center. Chill until set, about 3 hours.

1 (3 ounce) package lemon pie filling mix (not instant)
1/2 cup sugar
1/4 cup water
2 egg yolks
2 cups water
1 (8 ounce) package cream cheese, cut into cubes
2 cups miniature marshmallows
2 cups whipped topping or 2 cups whipped cream

Steps:

  • Heat oven to 400º.
  • Bake Pastry Crust.
  • Make pudding mix as directed on package for pudding, using sugar, 1/4 cup water, egg yolks and 2 cups water; cool slightly.
  • Stir in cream cheese until well blended.
  • Cool completely, about 1 hour.
  • Fold in marshmallows and whipped topping.
  • Spread over crust.
  • Cover and refrigerate at least 3 hours until set but no longer than 24 hours.

2 c cold milk
2 pkg Jell-o lemon flavor instant pudding & pie filling (4-serving size each)
1 Tbsp lemon juice, fresh
1 honey graham pie crust (6 oz)
1 tub Cool Whip whipped topping, thawed, divided (8 oz)
2 1/2 c Jet-Puffed miniature marshmallows, divided
2 Tbsp cold milk

Steps:

  • 1. Pour 2 cups of milk into a large bowl. Add dry pudding mixes and juice. Beat with wire whisk 2 minutes or until well blended. (Mixture will be thick.)
  • 2. Spread 1 1/2 cups of the pudding onto the bottom of the crust; set aside.
  • 3. Add half of the whipped topping to the remaining pudding; stir gently until well blended.
  • 4. Spread over pudding layer in crust.
  • 5. Place 2 cups of the marshmallows in a large microwaveable bowl. Add 2 tablespoons of milk; stir. Microwave on high for 1 1/2 minutes or until marshmallows are completely melted, stirring after 1 minute. Stir until well blended. Refrigerate for 15 minutes or until cooled.
  • 6. Gently stir in whipped topping and spread over the pudding mixture.
  • 7. Refrigerate for 3 hours or until set. Top with the remaining 1/2 cup marshmallows just before serving. Store leftover pie in the refrigerator.
