4 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
2 cups unsalted butter at room temperature
1 cup confectioners' sugar
2 tablespoons fresh lemon juice
6 tablespoons unsalted butter, melted
⅓ cup lemon juice, or more to taste
3 cups confectioners' sugar
lemons, zested

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Sift or whisk flour, salt, and baking powder together in a bowl.
  • Place butter in a large mixing bowl and mix with a wooden spoon until very creamy. Add confectioners' sugar, lemon juice, and flour mixture; mix until well combined.
  • Roll dough out on a lightly floured surface to 1/4-inch thickness. Cut into rounds using a round cookie cutter. Transfer cookies to ungreased baking sheets.
  • Bake in the preheated oven until cookies are light brown on the bottom but still very light on top, about 10 minutes. Allow cookies to cool on the baking sheets for about 2 minutes before transferring to wire racks to cool completely.
  • Whisk melted butter and lemon juice together in a small bowl. Add lemon zest and whisk again. Whisk in confectioners' sugar 1 cup at a time. Add more lemon juice if necessary for a thin consistency.
  • Dip the top of each cookie in the glaze and transfer to a wire rack placed over waxed paper or parchment paper. Allow cookies to sit until glaze has set, about 2 hours.
  • Store cookies in an airtight container between layers of waxed paper.

1 c flour
1/2 c cornstarch
3/4 c butter, softened
1/2 c powdered sugar
1 Tbsp grated lemon peel
1 c finely chopped pecans

Steps:

  • 1. Preheat oven to 375 degrees
  • 2. Combine flour and cornstarch in a small bowl, set aside.
  • 3. In a mixer bowl combine softened butter and powdered sugar. Mix until light and fluffy.
  • 4. Beat in lemon zest. Then slowly add flour and cornstarch mixture, mix well.
  • 5. Cover bowl with wrap and refrigerate the dough about an hour or until easy to handle.
  • 6. Shape the dough into logs about 2 inches in diameter, depending on the size you like and the occasion.
  • 7. Roll the log into the finely chopped pecans, pressing gently as you roll.
  • 8. Wrap in cellophane and refrigerate 2-3 hours more or until firm.
  • 9. Unwrap dough and slice into 1/4 inch slices. Place on ungreased cookie sheets.
  • 10. Bake at 375 degrees for 10 min. on an ungreased cookie sheet or until edges are lightly brown.
  • 11. Cool 1 minute before moving to cookie platter.

LEMON CRINKLE COOKIES

These cookies are bright with sweet lemony flavor, thanks to plenty of lemon zest, lemon juice and a generous coating of confectioners' sugar. The key to success with these cookies is chilling the dough before rolling it into balls. This helps slow down the spreading, giving the tops a chance to crinkle and crack during baking. Tossing the chilled dough balls in granulated sugar before coating in confectioners' sugar also helps the coating adhere, so the cookies are sweet and crunchy on the outside and soft and chewy inside.

2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1 large egg
2 tablespoons finely grated lemon zest, plus 1/4 cup lemon juice (about 2 medium lemons)
6 to 8 drops yellow food coloring, optional (for brighter yellow color)
1/2 cup confectioners' sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl.
  • Beat 1 cup of the granulated sugar and the butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, scraping the sides of the bowl as needed, about 2 minutes.
  • Add the egg and beat until incorporated. Add the lemon zest, lemon juice and food coloring if using and beat until incorporated. Reduce the mixer speed to low and add the flour mixture, beating until just combined. Cover the bowl and refrigerate until firm, at least 2 hours and up to overnight.
  • Line 2 baking sheets with parchment. Put the confectioners' sugar in a small bowl and the remaining 1/2 cup granulated sugar in another small bowl. Using a 1-tablespoon scoop, portion the dough and roll into balls. Toss each ball in the granulated sugar, then in the confectioners' sugar, coating it generously and thoroughly. Arrange the balls about 1 inch apart on the prepared baking sheets (you should have 24 balls). Refrigerate for 20 minutes.
  • Position the oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Bake until the cookies spread, the tops crack and the edges are firm, 14 to 16 minutes. Let cool on the baking sheets for 5 minutes, then transfer the cookies to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.

This recipe is from Hershey's. It sounded so good I decided to make it part of my Christmas cookie trays. Didn't want to lose the recipe so I'm posting it here. The lemon flavor is very mild so I add enough extract to make the drizzle noticably lemony.

2 cups white chocolate chips, divided
2 1/4 cups all-purpose flour
3/4 cup sugar
3/4 teaspoon baking soda
1/2 cup butter or 1/2 cup margarine
2 eggs
1/2 teaspoon grated lemon peel
1/4 teaspoon lemon extract
3/4 cup pecans, chopped
lemon, drizzle (recipe below)

Steps:

  • Heat oven to 350°F Set aside 2 tablespoons white chips for the drizzle.
  • Combine flour, sugar and baking soda; set aside. Place remaining white chips and butter in medium microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave an additional 15 seconds at a time, stirring after each heating, just until chips and butter are melted when stirred. Beat in eggs, lemon peel and lemon extract. Gradually blend flour mixture into lemon mixture. Stir in pecans. Drop by rounded teaspoons onto ungreased cookie sheet.
  • Bake 8 to 11 minutes or until very slightly golden around edges. Remove from cookie sheet to wire rack. Cool completely. Lightly drizzle LEMON DRIZZLE over cookies.
  • LEMON DRIZZLE: Place reserved 2 tablespoons white chips and 1/2 teaspoon shortening (do not use butter, margarine, spread or oil) in small microwave-safe bowl. Microwave at HIGH (100%) 30 seconds; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Stir in a few drops yellow food color and a few drops lemon extract, if desired.

1 container (15 ounces) ricotta cheese

FROSTING:

  • Preheat oven to 375°. In a large bowl, beat butter and sugar until well blended, about 5 minutes. Beat in the eggs, cheese, lemon juice and zest.
