5-Minute Sautéed Spinach with Garlic and Lemon image

Sautéed spinach with garlic and lemon is the best way to use up almost wilted spinach, or any other greens!

1 tablespoon extra-virgin olive oil (or butter)
1 clove garlic (minced)
2 tablespoons lemon juice ((about 1/2 of a lemon))
5 oz. baby spinach (or other baby greens) ((about 3 cups packed))
kosher salt (to taste)
black pepper (to taste)

Steps:

  • Heat the oil (1 tablespoon) over medium-high heat in a large skillet (preferably non-stick).
  • Add the minced clove of garlic; sauté for one minute or until fragrant.
  • Add the lemon juice and the spinach. Sauté for 3-4 minutes, or until greens are wilted (but not browned).
  • Remove from heat and season with salt and pepper to taste. Serve immediately.

8 tablespoons (1 stick) unsalted butter
2 cloves garlic, minced
2 large shallots, finely chopped
Kosher salt and freshly ground black pepper
2 pounds baby spinach
Juice of 1 lemon

Steps:

  • Melt the butter in a large, wide pot over medium-high heat and cook, stirring often, until the milk solids are a deep golden brown and the butter smells nutty.
  • Add the garlic, shallots and a 1/2 teaspoon salt and cook, stirring, about 30 seconds. Add the spinach in batches and cook, tossing to coat, until wilted, about 2 minutes. Add the lemon juice and season with salt and pepper.
  • Transfer to a serving bowl.

2 tablespoons olive oil
2 to 3 garlic cloves, thinly sliced
Zest of half a lemon
10 ounces spinach leaves (8 to 10 cups)
Pinch sea salt
Pinch crushed red pepper flakes, optional

Steps:

  • Add olive oil, garlic and the lemon zest to a wide skillet over medium heat. Cook, stirring often, until the oil is bubbling around the garlic, about 30 seconds. Pile the spinach leaves into the pan and add a generous pinch of salt. Wait about 30 seconds or until the bottom layer of leaves have started to wilt, and then toss the leaves around the pan. As the spinach cooks, keep tossing so that all the leaves have a chance to hit the bottom of the skillet.
  • When the spinach looks bright green and is mostly wilted, remove the pan from the heat and serve with a pinch of extra salt on top. For a little heat, add a light sprinkle of red pepper flakes (optional).

2 pinches of salt
1/2 cup dry white wine

  • This dish takes only 5 minutes to prepare, so begin preheating the skillet 7-8 minutes before you are ready to sit down and eat.
  • Heat a medium sized skillet over medium heat. With the flat side of your knife, make a garlic paste with smashed garlic and salt. Melt butter into pan. Add garlic paste to the pan and the spinach in bunches, adding more spinach to the pan as it wilts down. When all of the spinach is wilted, add wine and turn to coat. Let wine cook down a minute or 2. Season spinach with salt and pepper and serve.

  • Wash spinach well, discarding any tough stems. Bring 1 inch of salted water to a boil in a large pot. Add spinach, toss, and cook until just wilted. Drain off any liquid. Toss with lemon oil. 2 tablespoons extra virgin olive oil
1 minced garlic clove

  • In a medium sauce pot over medium heat, add the spinach leaves and cook just until wilted.
  • In a medium saute pan on medium high heat, add extra virgin olive oil, then minced garlic. Saute 30 seconds.

This simple seafood supper is quick, easy and packed with good-for-you ingredients such as oily fish and spinach

small handful thyme sprigs
280g pack of 2 trout fillets, skinned
juice and zest 1 lemon
3 tsp rapeseed oil
3 garlic cloves , 1 crushed, 2 sliced
260g bag baby spinach
½ tsp ground nutmeg
1 tsp honey , preferably manuka

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut 2 large lengths of baking parchment, put thyme in the middle of each one, then top with the trout. Mix the lemon juice with 2 tsp oil and the crushed garlic, pour over the fish and wrap up into 2 parcels, sealing in the juices. Bake for 10 mins on a baking tray.
  • Meanwhile, stir-fry the spinach in 1 tsp oil. When almost wilted, add the sliced garlic and the nutmeg, and continue cooking until wilted. Tear the fish parcels open, spoon on the honey and scatter with the lemon zest. Serve still in their parcels, or on top of the spinach.
