JELLO LEMON PUDDING CAKE
This is an easy cake mix based dessert that I found while looking through my mother's recipe box. It's especially lemony if you use lemon cake mix! The prep time includes time to cool the cake before glazing.

Steps:
- Blend all ingredients in a large mixer bowl; then beat 2 minutes at medium speed.
- Bake in greased and floured 10-inch bundt or tube pan at 350 degrees for 55 to 60 minutes, or until cake springs back when lightly pressed.
- Cool in pan 15 minutes; remove from pan.
- To make glaze, gradually add hot milk and yellow food coloring to confenctioners' sugar in a bowl, blending well.
- Pour glaze onto cooled cake.

- Mix cake ingredients together for 4 minutes.
- Bake in metal non stick 9x13 inch pan @350 for 40 minutes.
- or,if using a glass baking dish bake @325 for 45 minutes.
- Poke holes all over the cake while hot.
- Mix together icing: powdered sugar and lemons (grated rind and juices).
- Pour this over the cake immediately, while it is still hot from the oven.
- Serve warm or cold.

- Preheat oven to 350 degrees.
- Combine cake mix, Jello mix, oil, water and eggs at low speed and then beat at high speed for 3 minutes.
- Pour into a greased and floured 9 x 13 inch pan and bake for 40 minutes.
- While baking, mix the lemon juice and powdered sugar together until well combined.
- While cake is still hot, poke hole in it with a fork all over the top.
- Pour lemon juice mixture all over it.
- Cool completely and frost with whipped topping.
- Store in refrigerator.

- Melt Jello in hot water and cool down with ice cube.
- Add jello to cake mix, oil, eggs and lemon extract.
- Pour cake batter into greased angel food pan.
- Bake at 350 degrees for 45 minutes.
- Make glaze while cake is baking.
- Mix powdered sugar and lemon juice until dissolved.
- When cake is baked, poke holes into it with a fork, pour glaze over entire cake and let cool in pan.
- Invert onto serving plate when cooled.

- 1. CAKE: Pre-heat oven to 350 degrees. Mix the first 6 ingredients together, low speed for about 30 seconds in incorprate then for about 2 minutes on a medium speed until well mixed. (Note: Use these ingredients in place of the ingredients listed on the cake mix box. Also use the entire can of crushed pineapple, including the juice.)
- 2. Pour into a greased Pyrex 9 x 13 pan. Bake for 40 minutes. While the cake is baking, prepare the Glaze by stiring together the powdered sugar, lemon juice and butter. The butter will not break down entirely, small lumps of butter is ok.
- 3. After removing the cake from the oven and while it is still very warm, poke holes all over is a fork. Then pour the glaze over the top. The warm cake will melt the little lumps of butter as the glaze soaks in to the cake. Refridgerate until well chilled. Serves 8 -12 people depending on their appetite. Around my house I am lucky if it serves 6.

- 1.Preheat oven to 350 degrees. 2.Butter and flour a tube pan or Bundt pan. 3.Place first 6 ingredients in a mixing bowl. 4.Mix on low speed until ingredients are moist. 5.Mix on medium-high speed for 2 minutes. 6.Pour batter into buttered pan. 7.Bake at 350 for 45 minutes. 8.Mix the confectioners sugar and lemon juice to make the glaze. Let sit. 9.Let cake cool in the pan for 10 minutes. Loosen the sides of the cake from the pan and turn out onto a cooling rake. 10.Place waxed paper under the cake. 11. Stir the glaze and drizzle over the top of the cake. 12.Place the cake over a new sheet of waxed paper and drizzle the glaze from the other waxed paper onto the cake. Continue to do this with new sheets of waxed paper until the glaze is absorbed into the cake. 13.Let cool for at least one hour. Cut into serving sized slices.
GRANDMA'S LEMON JELLO CAKE
Steps:
- Beat together cake ingredients until well blended. Pour batter into a 9 x 13 pan and bake at 350 degrees. As soon as the cake is done, prick all over top of the cake with a fork, and spread glaze all over cake (glaze will soak into cake).

- 1. Preheat oven to 325. Grease and flour glass 9x13" baking dish
- 2. Mix together first 5 ingredients. Pour into glass dish. Bake 35 to 40 minutes.

- Butter a 12 inch Pyrex dish. In food processor, crumb the cookies. I know my grandmother didn't have a food processor and she used rolled pin to the cookies in a brown paper bag to make the crumbs, but we have modernized the kitchen a tad.
- Dissolve the lemon jello with the boiling water, sugar and the lemon juice and grated rind. Chill till a litte congealed. Beat it once it has congealed Beat the canned milk till thick and then add to beaten jello. Beat
- Pad 2/3 cup of crumbs to the butter pyrex dish, bottom and sides. Pour the jello and milk mixture on top of the crumbs, Add the rest of the crumbs to the top and refrigerate until well set. You could use Lime Jello, Lime juice with grated lime too. Or you can make it any flavor of Jello.
LEMON JELLO CAKE
There are many versions of this recipe around. Mine is from my mother, and when she asked what cake I wanted for my 10'th birthday -- Lemon Jello! We've been eating this in my family literally all of my life. This version is great due to the tangy glaze. The glaze makes the lemon zing and it's soooo good.

- 1. Boil 3/4 cup water and mix it with the 2 packages of jello. Stir until dissolved, and let cool. While jello is cooling, grease tube or Bundt pan.
- 2. In large bowl, mix cake mix, eggs, oil, and lemon flavoring. Mix on medium speed for 2 minutes. Add Jello mixture and mix well. Pour into greased pan and bake for 55 minutes, or until toothpick comes out clean.
- 3. Cool cake for 15 -20 minutes, and turn out of pan. Make icing/glaze and ice while cake is warm. Let cool and serve.

LEMON JELLO CAKE
This cake has been made in my family for years. Every time I make it I get rave reviews. While it is not frosted, it does have a nice sweet, tart glaze which makes it great for carry-ins. Unlike other "jello" cakes the jello is not poured over the top but is part of the batter.

- 1. Preheat oven to 350 degrees. Grease and flour a 9x13 pan. (I use the baking spray with the flour already in it.)
- 2. In mixing bowl combine the jello with the hot water until the jello is dissolved.
- 3. Add the eggs to the jello, mixing well. Then beat on high for 2 minutes.
- 4. Add the cake mix, mixing well. Then beat on high for 2 minutes.
- 5. With the mixer on low add the oil until it is mixed in well. Then beat on high for 1 minute. Pour into prepared cake pan. Bake for 30 to 40 minutes until a toothpick inserted in the middle comes out clean.
- 6. While the cake is baking mix together the powdered sugar and lemon juice in a separate bowl. Set aside.
- 7. As soon as cake is out of the oven, poke holes over the entire top of the cake with a fork. Then spoon the glaze over the top of the cake making sure to spoon some glaze around the edges between the cake and pan. Cool completely before serving. Enjoy!
