1/4 cup lemon juice
2 tablespoons honey
1 tablespoon yellow mustard
2 teaspoons balsamic vinegar
1 teaspoon grated lemon zest
1/2 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup olive oil

Steps:

  • Place the first eight ingredients in a blender; cover and process until blended. While processing, gradually add oil in a steady stream. Refrigerate until serving.

This salad is from a local deli / caterer in town, CHOW :D The first time I had it, I was in love with kale. Cooking time is chill time. This is great even the next day. June '13 update: I have made this recipe numerous times by using any nuts & fruit I have on hand. Try using: chopped hazelnuts, combining various fresh fruits with the dried cranberries/ cherries

Number Of Ingredients 10

2 bunches kale, stems and ribs removed, torn into bite-sized pieces. I prefer to cut into thin ribbons
1/2 cup dried cranberries, dried cherries are my favorite
1/2 cup fresh fruit, i.e.. apples, blueberries, pineapple, mango, etc
1/2 cup red onion, diced
1/2 cup sunflower seeds, shelled, I have used other nuts choose your favorite
vinaigrette
3 tablespoons fresh lemon juice
1/2 cup extra virgin olive oil
1/8 teaspoon ground cinnamon
2 tablespoons honey

Steps:

  • Combine the four salad ingredients in a large bowl.
  • Whisk together the vinaigrette ingredients and toss with the salad. * I like to massage the kale and dressing at this point. Just massage it with both hands for a few minutes. Toss in any additional fruits or berries.
  • Refrigerate for at least one hour prior to serving to allow the flavors to develop. Serve and Enjoy!
  • This is even better the next day and hold up well w/o wilting.
  • NOTE: Use any type of nut or seed or fresh fruit. Try adding mango, watermelon or blueberries to the mix!

6 quarts water
2 cups clover honey
2 quarts carrots, sliced diagonally
2 teaspoons coriander seeds, whole
3/4 cup extra virgin olive oil
1/4 cup lemon juice
1 1/2 teaspoons dijon-style mustard
2 3/4 teaspoons salt, divided
1 1/4 teaspoons ground black pepper, divided
1/4 cup ground cumin

Steps:

  • In a large saucepan over high heat bring 6 quarts water and honey to a boil; Add carrots; simmer until tender, about 5 minutes. Drain, rinse under cold water; drain again.
  • Transfer to a bowl; set aside.
  • In a small dry skillet over medium heat place coriander seeds. Heat until fragrant, stirring frequently, about 2 minutes; cool slightly.
  • Grind coriander in a spice or coffee grinder into a fine powder.
  • Place in a bowl along with olive oil, lemon juice, mustard, 3/4 teaspoon of the salt and 1/4 teaspoon of the black pepper; whisk until combined; set aside.
  • Toss carrots with cumin, the remaining 2 teaspoons salt and 1 teaspoon black pepper and reserved olive oil mixture.
  • Serve over bib lettuce, if desired.

1 teaspoon grated lemon zest plus 2 tablespoons lemon juice
2 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
1 heaping tablespoon honey

4 ounces wild dandelion greens
1 small head fennel, thinly shaved
1 small red onion, halved and thinly sliced

Steps:

  • Whisk together the lemon zest and juice, vinegar and some salt and pepper in a small bowl until the salt dissolves. Whisk in the honey, then slowly whisk in the oil until emulsified.
  • Combine the dandelion greens, fennel and onion in a large bowl. Drizzle some of the dressing around the sides of the bowl and then gently push and toss the greens to coat. Season with some salt and pepper and toss again gently. Serve immediately.
